1/3 cup finely chopped onion
1 large egg

  • In a large bowl, mix the first 5 ingredients and 1 cup all-purpose flour. In a small saucepan, heat milk, water, butter and honey to 120°-130°. 2 1/4 teaspoons active dry yeast
5 tablespoons extra-virgin olive oil
3 cups bread flour
2 teaspoons caraway seeds
3 tablespoons honey
1 tablespoon blackstrap molasses
1 tablespoon kosher salt
1 cup whole-milk cottage cheese
1 large egg

Steps:

  • Prepare the yeast: In a medium bowl, dissolve the yeast in 1/2 cup warm water (between 110 to 120 degrees F). Set aside.
  • Make the dough: Oil a medium bowl with 1 tablespoon of the olive oil. Set aside. 1/2 ounce fresh yeast or 1/2 ounce active dry yeast
1 cup rye flour
3 cups bread flour
1 tablespoon salt
1/3 cup sugar
2 cups cottage cheese
2 eggs
1/4 cup butter
1/2 cup milk (or enough for dough to form)
2 tablespoons caraway seeds

Steps:

  • Cut yeast and butter into flour, salt and sugar just as if you were making a pastry crust.
