APRICOT ALMOND CAKE WITH ROSEWATER AND CARDAMOM

Apricot Almond Cake with Rosewater and Cardamom image

This is my idea of a perfect cake: simple, beautiful, fragrant and beguiling. I've been making this sort of cake, in one form or another, since my clementine cake in "How To Eat," and I can't help but feel, with a certain calm excitement, that it has reached its apogee here. This is invitingly easy to make, and while I love the poetry of its ingredients, the cake doesn't overwhelm with its Thousand-and-One-Nights scent. Rosewater can be a tricky ingredient: a little, and it's all exotic promise; a fraction too much and we're in bubble bath territory. One of the things that makes this so easy, is that you can throw all the ingredients into a food processor. But if you don't have one, simply chop the prepared dried apricots and cardamom seeds very finely and then beat together with the remaining cake ingredients.

Time 20m

Yield 8 to 10 slices

Number Of Ingredients 14

150 grams (5.3 ounces) dried apricots
250 milliliters (1 cup) cold water
2 cardamom pods (cracked)
Nonstick cooking spray or sunflower oil, for greasing
200 grams (7 ounces) almond meal
50 grams (1.8 ounces) fine polenta (not instant)
1 teaspoon baking powder (gluten-free if required)
150 grams (5.3 ounces) superfine sugar
6 large eggs
2 teaspoons fresh lemon juice
1 teaspoon rose water
2 teaspoons rose petal jam or 2 teaspoons apricot jam
1 teaspoon fresh lemon juice
2 1/2 teaspoons very finely chopped pistachios

Steps:

  • Put the dried apricots into a small saucepan, cover them with the cold water, and drop in the cracked cardamom pods with their fragrant seeds. Put on the heat, then bring to the boil and let it bubble for 10 minutes--don't stray too far away from the pan, as by the end of the 10 minutes the pan will be just about out of water and you want to make sure it doesn't actually run dry as the apricots will absorb more water as they cool.
  • Take the pan off the heat, place on a cold, heatproof surface and let the apricots cool. Preheat the oven to 180 degrees C/gas mark 4/350 degrees F. Grease the sides of your springform cake tin and line the bottom with baking parchment.
  • Remove 5 of the dried apricots and tear each in half, then set aside for the time being. Discard the cardamom husks, leaving the seeds in the pan.
  • Pour and scrape out the sticky contents of the pan into the bowl of a food processor. Add the almond meal, polenta, baking powder, superfine sugar and eggs, and give a good long blitz to combine.
  • Open the top of the processor, scrape down the batter, add 2 teaspoons of lemon juice and the rosewater, and blitz again, then scrape into the prepared tin and smooth with a spatula. Arrange the apricot halves around the circumference of the tin.
  • Bake for 40 minutes, though if the cake is browning up a lot before it's actually ready, you may want to cover loosely with foil at the 30-minute mark. When it's ready, the cake will be coming away from the edges of the tin, the top will feel firm, and a cake tester will come out with just one or two damp crumbs on it.
  • Remove the cake to a wire rack. If you're using apricot jam to decorate, you may want to warm it a little first so that it's easier to spread; rose petal jam is so lusciously soft-set, it shouldn't need any help. Stir a teaspoon of lemon juice into the jam and brush over the top of the cake, then sprinkle with the chopped pistachios and leave the cake to cool in its tin before unspringing and removing to a plate.

ALMOND CAKE WITH CARDAMOM AND PISTACHIO

Almond Cake With Cardamom and Pistachio image

This moist and springy Persian almond cake is generously spiced with ground cardamom (two full teaspoons). We like it with fresh berries. If you want to serve it for Passover, be sure to use kosher for Passover confectioners' sugar; you could also use a tablespoon of matzo meal in place of the tablespoon of almond flour, but the cake is delicious without it.

ORANGE-CARDAMOM BUNDT CAKE

Orange-Cardamom Bundt Cake image

This cardamom-scented sunburst of a Bundt cake gets a double dose of orange-liqueur-spiked syrup: It's soaked into the bottom via skewer-poked holes, and brushed on top to harden into a fine, crackly glaze that sets off the rays so well. Serve it for brunch or afternoon tea, it pairs especially well with a spiced cup of milky chai.

Time 4h40m

Yield Serves 10 to 12

Number Of Ingredients 14

2 sticks unsalted butter, room temperature, plus more for pan
3 cups unbleached all-purpose flour, plus more for pan
1/2 cup whole milk
1 tablespoon grated orange zest, plus 1/2 cup fresh juice (from 2 oranges)
1 teaspoon baking powder
3/4 teaspoon baking soda
1 1/2 teaspoons kosher salt
1 1/4 teaspoons ground cardamom
1 1/2 cups sugar
4 large eggs, room temperature
1 tablespoon pure vanilla paste or extract
1 stick unsalted butter
1/2 cup orange liqueur, such as Cointreau or triple sec
2/3 cup sugar

Steps:

  • For the Cake: Preheat oven to 350°F. Brush a 10-to-15-cup Bundt pan with butter; dust with flour, tapping out excess. In a small bowl, stir together milk and orange juice. In another bowl, whisk together flour, baking powder, baking soda, salt, and cardamom to thoroughly combine.
  • Beat butter with sugar and orange zest on medium‐high speed until pale and fluffy, 2 to 3 minutes. Beat in eggs, one at a time, then vanilla. Reduce speed to medium‐low and beat in flour mixture, alternating with milk mixture, each in two additions. Transfer batter to prepared pan; smooth top with a spatula.
  • Bake until cake is puffed slightly and a wooden skewer inserted into center comes out clean, about 45 minutes. Let cool in pan on a wire rack 15 minutes (do not turn off oven).
  • For the Glaze: Meanwhile, in a small saucepan, cook butter over medium‐high heat until boiling. Remove from heat; carefully add liqueur (mixture will bubble). When bubbles subside, stir in sugar. Return to medium‐low heat and cook, stirring, until sugar has dissolved, about 1 minute. Remove from heat.
  • Pierce holes in cake with skewer at 1‐inch intervals to bottom of pan. Brush half of glaze evenly over cake; let stand until fully absorbed, about 10 minutes. Invert cake onto a baking sheet. Brush remaining glaze evenly over top and sides.
  • Return to oven and bake just until glaze is set and dry, about 5 minutes. Transfer to rack and let cool completely before slicing and serving. Glazed cake can be stored in an airtight container at room temperature up to 3 days.

Yield Makes 8 servings

Number Of Ingredients 14

For cake
Vegetable oil for greasing pan
1/2 cup matzo meal (not cake meal), plus additional for dusting
1 cup slivered almonds (4 1/2 oz), toasted and cooled
1/2 teaspoon salt
Scant 1/2 teaspoon ground cardamom
5 large eggs, separated, at room temperature for 30 minutes
1 cup granulated sugar
2 Granny Smith apples, peeled and coarsely grated
For powdered sugar
1/3 cup granulated sugar
1/2 teaspoon potato starch
Special Equipment
a 9- to 9 1/2-inch (24-cm) springform pan; an electric coffee/spice grinder

Steps:

  • Put oven rack in middle position and preheat oven to 350°F. Oil springform pan and dust with matzo meal, knocking out excess.
  • Pulse almonds in a food processor with 1/2 cup matzo meal, 1/4 teaspoon salt, and cardamom until finely ground. (Be careful not to pulse to a paste.)
  • Beat yolks in a large bowl with an electric mixer at medium-high speed until smooth, then add 3/4 cup sugar, 1 tablespoon at a time, beating, and beat until mixture is very thick and pale, 2 to 3 minutes. Stir in nut mixture, then apples. Beat whites and remaining 1/4 teaspoon salt in another bowl with cleaned beaters at medium speed until they hold soft peaks. Add remaining 1/4 cup sugar, a little at a time, beating, and beat until whites just hold stiff peaks. Stir one fourth of whites into yolk mixture to lighten, then fold in remaining whites gently but thoroughly. Scrape batter into pan and rap pan once on work surface to eliminate any large air bubbles.
  • Bake cake until puffed, browned, and top springs back when touched, 40 to 45 minutes. Transfer to a rack and cool completely in pan (cake will sink slightly in center). Run a knife around edge of cake to loosen, then remove side of pan.
  • Make powdered sugar:
  • Grind sugar in coffee/spice grinder until powdered, then stir together with potato starch in a bowl. Sift some of sugar over cake before serving and reserve remainder for another use.

APPLE PRUNE CARDAMOM CAKE

Apple Prune Cardamom Cake image

This prune apple cardamom cake by the chef Genevieve Gergis was inspired by sticky toffee pudding, a dish that her husband and business partner, the chef Ori Menashe, loves. It's on the menu at their restaurant Bavel in Los Angeles, where it's served hot from the oven with date toffee sauce and whipped cream. You can serve this cake version with your favorite toffee or caramel sauce and ice cream. It makes a lovely dessert after a Rosh Hashana supper or as part of a spread to break the Yom Kippur fast.

Provided by Joan Nathan

Categories     cakes, dessert

Time 1h45m

Yield 8 to 10 servings

Number Of Ingredients 15

1 cup/170 grams lightly packed chopped prunes
1 cup plus 2 tablespoons/270 milliliters good apple cider
1 cup/170 grams grated apple (Pink Lady or other tart variety, peeled, grated and firmly packed)
7 tablespoons/100 grams unsalted butter, at room temperature, plus more for buttering the pan
1 cup plus 2 tablespoons/145 grams all-purpose flour
1/3 cup/40 grams einkorn flour (or use whole wheat pastry flour)
2 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon fine salt
2 1/2 teaspoons cardamom
1 teaspoon cinnamon
1/2 cup/92 grams packed muscovado sugar, or 1/2 cup/110 grams light brown sugar
1/2 teaspoon vanilla extract
2 large eggs
Whipped cream, crème fraîche or ice cream for serving (optional)

Steps:

  • Put the prunes in a medium bowl and pour in the apple cider. Let soak at room temperature for at least 1 hour or, if longer, refrigerate up to overnight.
  • In a small saucepan over medium-low heat, simmer the soaked prunes and cider for 15 to 20 minutes until the prunes are soft and mostly broken down. Set aside and let cool to room temperature, then stir in the grated apples.
  • Heat oven to 350 degrees and generously butter a 9-inch cake pan. In a large bowl, thoroughly whisk together the flours, baking powder, baking soda, salt, cardamom and cinnamon.
  • In a stand mixer, using the paddle attachment, cream the butter and sugar until light and fluffy, about 4 to 5 minutes. Scrape down the bowl, then add the vanilla extract and mix until combined. Scrape down the bowl once again, and add the eggs one at a time, scraping down in between each addition. Alternate adding half the prune mixture, then half the flour mixture, to the stand mixer bowl, starting with wet and ending with dry, scraping down between each addition. Take care not to overmix.
  • Bake for 30 to 35 minutes or until golden brown and a toothpick inserted in the middle comes out with moist crumbs and no wet batter. Let cool on a rack for 10 minutes, then invert onto a plate. Invert again onto a serving plate and serve warm with whipped cream, crème fraîche or ice cream, if you'd like.

CARDAMOM-PISTACHIO CARROT CAKE

Cardamom-Pistachio Carrot Cake image

Take your time when streaming the butter into the egg and sugar mixture-you want to create an emulsion, as when making a vinaigrette. If you go too quickly, you'll end up with a greasy batter.

Provided by Sohla El-Waylly

Yield Makes one 9"-diameter cake

Number Of Ingredients 20

Cake:
Vegetable oil (for pan)
3 medium carrots, peeled
1 cup (2 sticks) unsalted butter, cut into pieces
1 cup (130 g) raw pistachios
3 large eggs, room temperature
1 cup (packed; 200 g) dark brown sugar
¼ cup (50 g) granulated sugar
1¾ tsp. baking powder
¼ tsp. baking soda
1½ tsp. ground cardamom
½ tsp. ground cinnamon
1¼ tsp. Diamond Crystal or ¾ tsp. Morton kosher salt
1½ cups (188 g) all-purpose flour
Glaze and assembly:
½ cup carrot juice
½ cup heavy cream
½ cup (100 g) granulated sugar
¼ tsp. kosher salt
2 Tbsp. unsalted butter

Steps:

  • Cake:
  • Place a rack in middle of oven; preheat to 350°F. Lightly coat bottom and sides of a 9"-diameter cake pan with oil. Line bottom of pan with a round of parchment paper and smooth to eliminate any air bubbles.
  • Grate carrots on the large holes of a box grater. Measure out 2½ cups (lightly packed; 250 g); reserve remaining carrots for another use (like raita!).
  • Set a fine-mesh sieve over a measuring glass and place next to stove. Heat butter in a medium saucepan over medium until foaming, about 2 minutes. Add pistachios and cook, stirring often, until butter browns and nuts smell toasty, about 5 minutes. (Butter will get very foamy and it will be hard to see what's going on, so once the foam is golden brown, remove pan from heat every 10 seconds to check how the nuts are browning.) Pour mixture through prepared sieve, scraping in all of the browned bits; set nuts and butter aside.
  • Crack eggs into a large bowl; add brown sugar, granulated sugar, baking powder, baking soda, cardamom, cinnamon, and salt. Using an electric mixer on high speed, beat 3 minutes (mixture should be thick, pale, and increased in volume). Decrease speed to medium-high and gradually stream in reserved brown butter (including browned bits); beat until combined. Coarsely chop reserved pistachios. Using a rubber spatula, fold in flour until almost completely combined, then add nuts and carrots and continue to fold until everything is incorporated. Scrape batter into prepared pan; smooth surface. Place pan on a clean smooth surface and give it a fast 360-degree spin (this pushes the batter up the sides of the pan and minimizes doming during baking).
  • Bake cake until deeply browned and a tester inserted into the center comes out clean, 50-55 minutes. Let cake cool in pan. Run a small offset spatula or butter knife around perimeter of cake to loosen. Place a plate upside down over cake and invert cake onto plate (leave flat side up). Remove parchment paper.
  • Do Ahead: Cake can be baked 1 day ahead. Store tightly wrapped at room temperature.
  • Glaze and assembly:
  • Place a small plate in the freezer. Cook carrot juice, cream, granulated sugar, and salt in a small saucepan over high heat (do not stir) until thick like lava, 8-10 minutes. Mixture will initially bubble and foam vigorously and look like it's going to boil over, but it won't! Don't be tempted to reduce the heat; the bubbling will subside and mixture will thicken. You want it to be thick enough to stick to the cake, but do not let it brown. Test glaze by putting a small dollop onto the cold plate: When you run your finger through the glaze, it should leave a defined trail.
  • Once the glaze is thick enough, remove pan from heat and stir in butter. Let cool until you can comfortably hold your finger in it (if it's too hot, it will run right off the cake), about 15 minutes.
  • Stir glaze well and pour over center of cake, nudging to the edges with offset spatula or butter knife. Pop any air bubbles with a toothpick. Let glaze cool at least 10 minutes before slicing cake.

CARDAMOM CREAM CAKE

Cardamom Cream Cake image

Layer cakes are always festive, particularly when they are four-layered, fluffy and cloudlike. This one, based on the flavors of an Indian dessert called ras malai, combines rose water, ricotta cheese and cardamom. Egg whites in the batter and mascarpone in the buttercream give the cake an especially ethereal texture, while a cardamom-infused milk syrup keeps it moist. Make sure to use cold, straight-from-the fridge mascarpone and yogurt for the frosting; it can curdle if you try to beat it when the ingredients are too warm.

1/2 teaspoon rose water
1 1/2 cups/300 grams granulated sugar
1 tablespoon plus 1 teaspoon/20 grams baking powder
1/2 teaspoon ground cardamom
1/4 teaspoon fine sea salt
12 tablespoons/170 grams unsalted butter, softened (1 1/2 sticks)
1 cup/125 grams confectioners' sugar
1 teaspoon rose water, or to taste
1/2 teaspoon ground cardamom
1 cup/240 milliliters cold mascarpone
1/4 cup/60 milliliters cold Greek yogurt
1/3 cup/50 grams pistachios, toasted and chopped
Candied rose petals, for garnish (optional)

Steps:

  • Drain the ricotta in a fine mesh sieve placed in a large bowl for 1 to 2 hours until very thick. If you've bought very thick, very freshly made ricotta from a specialty shop (not the kind from the supermarket), you can skip this step.
  • Meanwhile, make the milk syrup: In a small saucepan, combine the milk and cardamom pods. Bring to a boil, then reduce heat and simmer the milk until it reduces by half, 30 to 45 minutes. Stir in the sugar until it dissolves, then continue to simmer until the mixture thickens to the texture of half and half, about 10 minutes longer. Let cool, strain the mixture to get rid of the cardamom and any coagulated milk, then stir in the rose water. (Syrup can be prepared up to 3 days ahead and refrigerated.)
  • Make the cake: Heat the oven to 350 degrees. Grease two 9-inch cake pans, line the bottoms with parchment paper, then grease the parchment. Flour the entire pan and parchment, tapping out any excess.
  • In a medium bowl, lightly whisk together the egg whites, milk, vanilla and rose water.
  • Using an electric mixer, combine the cake flour, sugar, baking powder, cardamom and salt, and mix on low speed for 30 seconds to blend. Add the butter and about a third of the milk-egg white mixture. Mix on low speed until the dry ingredients are moistened. Increase to medium speed and beat for a minute or so until everything is very smooth. Scrape down the sides and bottom of the bowl.
  • Add the remaining milk mixture in 3 batches, beating well between additions. Scrape down the sides.
  • Transfer the batter to the prepared pans and smooth the surface with a spatula. Bake until a tester inserted near the center comes out clean and the cake springs back when pressed lightly in the center, 25 to 35 minutes. The cakes should start to shrink from the sides of the pans only after removal from the oven. Let the cakes cool in the pans on racks for 20 minutes, then unmold and cool completely.
  • Make the ricotta filling: Using an electric mixer fitted with the whisk attachment, beat the ricotta, cream and confectioners' sugar until quite smooth, about 30 seconds. Beat in rose water to taste. Beat on medium-high speed for about 30 seconds to 1 minute. The mixture will thicken.
  • Make the mascarpone frosting: Using an electric mixer fitted with the paddle attachment, beat the butter, confectioners' sugar, rose water and cardamom until fluffy, about 2 minutes. On low speed, beat in mascarpone and yogurt until the mixture is just combined and looks smooth. Do not overbeat or the mixture may curdle.
  • When the cakes have cooled, use a long serrated knife to trim the tops of the cakes, so the tops are flat and even. Then cut each cake in half into 2 layers, to make a 4-layer cake. Brush cake layers on all sides with milk syrup. Place one cake round on a cake stand or serving platter, then top with one third of the ricotta filling, leaving a small border around the edge of the cake. Repeat with the remaining cake layers and ricotta filling.
  • Frost top and sides of the cake with the mascarpone frosting. Top with chopped pistachios and candied rose petals, if using; chill until ready to serve.

APPLE CARDAMOM CAKE

Apple Cardamom Cake image

Ready for a fresh fall dessert that's rooted in tradition? Pick this recipe for a simple scratch cake that might remind you of something Grandma used to make. Similar to a pound cake but with fragrant, sweet cardamom cutting through its rich buttery crumb. Sliced apples strewn across the top melt into the cake just slightly during baking for a pretty look that only needs a dusting of powdered sugar to be complete. The end result is an apple dessert that's not too sweet but incredibly flavorful. It's as perfect with a steaming cup of coffee at breakfast time as it is mounded with whipped cream after dinner. And since it's ready to serve in just over an hour, it's totally weeknight friendly!

UPSIDE-DOWN PEAR CARDAMOM CAKE

Upside-Down Pear Cardamom Cake image

Categories     Cake     Fruit     Dessert     Bake     Pear     Winter     Gourmet     Kidney Friendly     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 6 to 8 servings

Number Of Ingredients 15

For caramelized pears
4 firm-ripe Forelle or small Bosc pears
1/2 cup sugar
1/2 stick (1/4 cup) unsalted butter
For cake batter
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cardamom
1/4 teaspoon salt
3/4 stick (6 tablespoons) unsalted butter, softened
3/4 cup sugar
3/4 teaspoon vanilla
1 large egg
3/4 cup whole milk
Accompaniment: vanilla ice cream

Steps:

  • Preheat oven to 375°F.
  • Make caramelized pears:
  • Peel pears, then halve lengthwise and core. Spread sugar on a plate, then press cut sides of pear halves into sugar to coat, reserving remaining sugar.
  • Melt butter in a well-seasoned 10-inch cast-iron skillet over moderate heat until foam subsides. Reduce heat to low and arrange pears, cut sides down, decoratively in skillet. Sprinkle reserved sugar all around pears. Cook pears over moderately low heat until sugar begins to caramelize, about 15 minutes, and remove skillet from heat.
  • Make cake batter:
  • Whisk together flour, baking powder, cardamom, and salt. Beat together butter and sugar in a bowl with an electric mixer until light and fluffy. Add vanilla and egg and beat well. Add flour mixture and milk alternately in 3 batches, mixing at low speed after each addition until just combined.
  • Spoon batter over pears in skillet, gently spreading evenly and being careful not to disturb pears (batter will not cover tops of all pears). Bake in middle of oven until golden brown and a tester comes out clean, 20 to 25 minutes.
  • Cool cake in skillet on a rack 5 minutes. Run a thin knife around edge and invert a plate over skillet. Invert cake onto plate (wearing oven mitts), keeping plate and skillet firmly pressed together. Replace any fruit stuck to bottom of skillet if necessary.
  • Serve cake warm or at room temperature.

• 1/2 tsp salt
• 1 tbs cardamom

SPICY CARDAMOM COFFEE CAKE

Spicy Cardamom Coffee Cake image

This is a recipe my friend Jen served at Easter brunch that I had to have the recipe for. It is very spicy (2 Tablespoons of cardamom!) and yummy. It is wonderful served with strawberries, but just fine on its own.

Time 1h10m

Yield 12-24 serving(s)

Number Of Ingredients 14

1 cup butter
2 cups brown sugar
4 eggs
4 cups flour
2 teaspoons vanilla
2 teaspoons baking powder
2 teaspoons baking soda
1/2 teaspoon salt
2 tablespoons cardamom
1 cup sour cream
1/2 cup milk or 1/2 cup cream
1/2 cup brown sugar
1 tablespoon cinnamon
1/2 cup chopped nuts (walnuts or pecans would work well)

Steps:

  • Cake: Cream together sugar and butter until fluffy.
  • Beat eggs in one at a time.
  • Add vanilla.
  • Stir in the baking powder, soda, salt, and Cardamom.
  • Stir in the floor one cup at a time, adding sour cream and milk as you go along.
  • Topping: In a separate bowl mix together the"topping" ingredients.
  • To Assemble: You can bake this in a few different style pans.
  • A bundt cake pan would work well.
  • I used two tall round 8" cake pans.
  • Oil your pans well.
  • Pour the batter in your pans- be sure to leave some room at the top as these cakes should rise.
  • Sprinkle the top with your topping.
  • Alteration: Instead of sprinkling the topping over the cake, you might prefer to pour half your batter in the pan, create an inside layer by sprinkling in some of your topping and then pour the remaining batter in your pan and sprinkle the rest of the nut mixture over the top.
  • You can always whip up some more topping if you need to!
  • To Bake: Preheat your oven to 350 degrees.
  • This is a dense cake and will bake for about an hour (in a bundt cake pan).
  • Keep checking on it by inserting a knife in the top.
  • If it comes out clean, it's done.
  • To Serve: Let the cake cool for a while (at least half an hour).
  • Turn the cake over and slide onto a plate (if you have used a bundt cake pan).
  • If you used a cake pan, loosen the edges of the cake pan with a knife, gently easing the cake up out of the pan.
  • If you need to, turn the cake over and gently tap it out of the pan, once the cake is out of the pan you can turn it back over onto a plate for presentation.

NORWEGIAN CARDAMOM CAKE

Norwegian Cardamom Cake image

Serve this with coffee or tea. As per Dreamer's suggestion in her review, I have changed the amount of vanilla wafers needed. Crush enough wafers to have enough crumbs to coat your pan.

Provided by Outta Here

Categories     Dessert

Time 1h15m

Yield 12 serving(s)

Number Of Ingredients 10

3 -10 vanilla wafer cookies, crushed into crumbs
1 3/4 cups flour
1 teaspoon baking soda
1 cup sugar
1/2 cup unsalted butter, softened
3 eggs
2 teaspoons ground cardamom
1/2 teaspoon ground cinnamon
2/3 cup sour cream
confectioners' sugar, for dusting

Steps:

  • Pre-heat oven to 350 degrees.
  • Grease a 9-inch bundt pan with butter; dust with cookie crumbs. Set aside.
  • Combine flour and baking soda in small bowl; set aside.
  • Place sugar and butter in bowl of electric mixer; beat until light and fluffy, 3 minutes. Add eggs, one at a time, beating after each addition, about 5 minutes total.
  • Beat in cardamom and cinnamon.
  • Add flour mixture; beat until just combined. Add sour cream; beat until smooth, about 1 minute.
  • Pour batter into pan.
  • Bake until toothpick inserted in center of cake comes out clean, about 50 minutes.
  • Let stand 5 minutes; turn out on a wire rack. Cool completely.
  • Dust with confectioners' sugar.

Tips:

  • Use fresh cardamom pods: Freshly ground cardamom pods provide the best flavor for your cake. If you don't have access to fresh pods, you can use ground cardamom, but it will not be as flavorful.
  • Grind the cardamom pods finely: Finely ground cardamom powder will distribute the flavor more evenly throughout the cake.
  • Use unsalted butter: Unsalted butter allows you to control the amount of salt in the cake. If you use salted butter, you may need to reduce the amount of salt called for in the recipe.
  • Cream the butter and sugar together until light and fluffy: This will help to incorporate air into the batter, resulting in a lighter, more tender cake.
  • Add the eggs one at a time: Adding the eggs one at a time will help to prevent the batter from curdling.
  • Do not overmix the batter: Overmixing the batter can result in a tough, dense cake. Mix only until the ingredients are combined.
  • Bake the cake in a preheated oven: This will help to ensure that the cake bakes evenly.
  • Let the cake cool completely before frosting: This will help to prevent the frosting from melting.

Conclusion:

Cardamom cake is a delicious and versatile dessert that can be enjoyed for any occasion. With its unique flavor and aroma, cardamom cake is sure to be a hit with your friends and family. So next time you're looking for a special treat, give cardamom cake a try!
