2 tablespoons honey
2 teaspoons Dijon mustard
2 tablespoons rice vinegar
20 sprigs mint, leaves only, roughly chopped
8 ripe apricots, pitted and each cut into 8 wedges
1 pound bok choy
Soy sauce to taste, optional

Steps:

  • Whisk together the honey, mustard and vinegar in a small bowl.
  • Toss the mint and the apricots with the dressing.
  • Core the bok choy, then wash, dry and chop it. Toss with the apricots and dressing, and season with soy sauce if desired.

1 bunch green onion
1/2 cup olive oil
1/4 cup apple cider vinegar
2 tablespoons low sodium soy sauce
3/4 cup brown sugar (or less to taste)
1/2 cup pdiced almonds
1/4 cup sesame seeds
3 tablespoons olive oil
1 (50 ml) package mr noodles, crumbles (noodles only)

Steps:

  • Rinse and dry bok choy. Break up leaves and chop stalks. Chop green onion into medium-sized chunks,.
  • Combine dressing ingredients. Boil for 2 minutes; allow to cool. Brown noodle mix items in a frying pan.
