Aunt Dorothy's Marinated Carrot Salad image

This has been a family favorite for years. The key to this recipe is not overcooking the carrots and allowing the entire salad to marinate for at least 12 hours. For a spectacular presentation when serving, garnish the top with rings of each color of bell pepper and rings of onion. Serve alone or over a bed of lettuce.

Tips:

  • Choose fresh, crisp carrots: Look for carrots that are brightly colored and free of blemishes. Avoid carrots that are limp or have brown spots.
  • Use a sharp knife or mandoline to slice the carrots: This will help you achieve thin, even slices that will cook evenly.
  • Blanch the carrots briefly in boiling water: This will help to soften them slightly and make them more tender.
  • Use a combination of white and green onions: This will give the salad a more complex flavor and color.
  • Toast the sesame seeds before adding them to the salad: This will bring out their nutty flavor.
  • Use a light, flavorful dressing: A simple vinaigrette made with rice vinegar, sesame oil, and soy sauce is a good option.
