Yield 4 cups

Number Of Ingredients 9

1 teaspoon caraway seeds
1 tablespoon country Dijon mustard
1 tablespoon apple-cider vinegar
1 tablespoon fresh lemon juice
3 tablespoons extra-virgin olive oil
1/4 cup raisins or dried currants
Kosher salt and freshly ground pepper, to taste
1 pound peeled carrots
1/4 cup fresh parsley leaves, chopped

  • Lightly crush caraway seeds. Place in a large bowl with mustard, vinegar, and lemon juice. Whisk in olive oil. Stir in raisins or dried currants; season with salt and freshly ground pepper. Let stand 10 minutes.

Tips for Making the Best Carrot and Caraway Slaw

  • Use a sharp knife or mandoline to thinly slice the carrots. This will help them absorb the dressing better and make the slaw more crisp-tender.
  • If you don't have caraway seeds, you can substitute cumin or fennel seeds. Just be sure to use half the amount, as they are more potent than caraway seeds.
  • For a creamier slaw, add a dollop of sour cream or Greek yogurt to the dressing.
  • If you want a sweeter slaw, add a tablespoon or two of honey or maple syrup to the dressing.
  • For a more tangy slaw, add a tablespoon or two of apple cider vinegar or lemon juice to the dressing.
  • Let the slaw chill for at least 30 minutes before serving. This will allow the flavors to meld and develop.

Conclusion

Carrot and caraway slaw is a refreshing and flavorful side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. So next time you are looking for a healthy and delicious side dish, give carrot and caraway slaw a try.
