½ cup whole wheat flour
½ cup white flour
½ cup firmly packed brown sugar
½ cup Granulated sugar
1½ teaspoon baking powder
½ cup applesauce
2 large eggs
1 teaspoon vanilla
Garnish: sour cream

Steps:

  • 1. Preheat oven to 350℉. Spray a 9-inch springform pan or muffin tin with cooking spray. 2. In a food processor, puree carrots, add flours, sugars, baking powder, applesauce, eggs, and vanilla, pulse until combined. 3. Pour batter into prepared pan. Bake for about 45 minutes or until set in the middle. Serve hot or at room temp by itself or with sour cream.

4 matzo crackers, crushed
3 eggs, beaten
¼ cup white sugar
1 teaspoon salt, divided
½ teaspoon lemon juice
⅓ cup applesauce
3 Granny Smith apples - cored, peeled and chopped
½ cup dried cranberries
¼ cup white sugar
1 teaspoon ground cinnamon

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place the crumbled matzos in a medium bowl, and add enough water to cover. Let stand for 2 minutes, then drain off excess water. Do not squeeze.
  • To the bowl of matzo, add eggs, 1/4 cup sugar, salt, lemon juice and applesauce. Stir to combine. Mix in the apples and dried cranberries. Spread the mixture evenly into a 2 quart casserole dish. Mix together the remaining 1/4 cup of sugar, and cinnamon; sprinkle over the top.
  • Bake for 45 minutes in the preheated oven, or until the top is golden, and the apples are soft.

4 large carrots, cut into 3-4 inch pieces
vegetable oil cooking spray
1 cup all-purpose flour
1/2 cup dark brown sugar, firmly packed
1/2 cup sugar
1 1/2 teaspoons baking powder
1/2 cup oil or 1/2 cup applesauce
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Put carrots in a large saucepan and add water to cover. Boil over high heat for 25 minutes or until carrots are tender. Drain and place in a large mixing bowl. Mash carrots with a fork.
  • Preheat oven to 350 degrees. Coat a 9-inch non-stick springform pan with non-stick cooking spray. (You can also use a tart pan with a removable bottom, muffin or mini-muffin tin. Be sure sides are at least 2 inches high.) Set aside.
  • Add rest of the ingredients to the carrots. Beat at medium speed with an electric mixer until well blended. (Can also be mixed by hand.) Do not overbeat - should still have little bits of carrot.
  • Pour mixture in pan. Bake for 45 minutes or until toothpick inserted in the center comes out clean. (For muffins, 30 minutes and mini-muffins, start checking after 20 minutes.).

5 -6 cups chopped carrots (approximately 2lbs)
1/4 cup agave nectar
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 tablespoon orange rind
3 eggs
1/4 cup blanched almond flour

Steps:

  • Cook carrots in a steamer until soft, about 20 minutes.
  • Blend carrots, agave, cinnamon, orange rind, eggs and almond flour until smooth in vita-mix.
