½ cup margarine
1 teaspoon vanilla extract
3 eggs
3 tablespoons all-purpose flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
  • Bring a large pot of salted water to a boil. Add carrots and cook until tender, 15 to 20 minutes. Drain and mash. Stir in margarine, vanilla extract and eggs; mix well. Sift together flour, baking powder, salt and sugar; stir into carrot mixture and blend until smooth. Transfer to prepared casserole dish.
  • Bake for 45 minutes.

3/4 cup sugar
1 1/2 teaspoons baking powder
1 1/2 teaspoons vanilla

  • Steam or boil carrots til extra soft& drain well.
  • While carrots are warm, add sugar, baking powder and vanilla.
  • Whip with mixer til smooth.
  • Add flour and mix well.
  • Whip eggs separately and add to mixture, blending well.

  • Pour mixture into baking dish-ABOUT HALF FULL--as the souffle will rise.

2 pounds carrots, peeled and cut into 1/4-inch-thick rounds
Coarse salt
1 cup whole milk
1 cup saltine cracker crumbs
3/4 cup grated sharp white cheddar cheese
1/3 cup very finely chopped onion
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
3 large eggs

Steps:

  • Preheat oven to 350 degrees. Butter a 2-quart shallow baking dish; set aside.
  • Place carrots in a large pot and add enough water to cover by 1 inch. Generously salt water and bring to a boil over high heat. Reduce heat and simmer until carrots are tender and easily pierced with the tip of a sharp knife, about 10 minutes.
  • Strain carrots and transfer to the bowl of a food processor; process until pureed. Transfer carrot puree to a large bowl; stir in milk, cracker crumbs, cheese, onion, butter, salt, black pepper, and cayenne pepper.

1 teaspoon baking powder
1/2 cup butter, softened but not warm or melted

  • Remove tops from carrots and set aside in refrigerator until ready to serve. Peel carrots and cut into chunks. In 3-quart saucepan, place carrots and enough water to cover. Heat to boiling; reduce heat to medium. Cover; cook about 20 minutes or until soft. Drain; cool slightly.

1/4 teaspoon powdered cumin
3 tablespoons fresh dill, minced
Salt and freshly ground pepper to taste
8 eggs, separated

Steps:

  • Preheat oven to 425 degrees. Butter well and chill 8 1 1/4-cup souffle dishes.
  • Boil carrots in salted water until soft. Drain well.
  • Place carrots in food processor or blender with ricotta, cumin, dill, salt and pepper. Puree well. You should have about 3 cups. Transfer to mixing bowl.
  • Add yolks to mixture and blend well with wire whisk. In another bowl whisk whites until they form soft peaks. Fold 1/4 of whites into carrot mixture, then remainder. Taste for seasoning.
  • Place souffle dishes on baking sheet and fill to rim with mixture. Before placing in oven run thumb around rim of each to remove any overflow, which could cling and prevent souffle from rising fully. Bake for approximately 10 minutes.

This is more of a casserole than a traditional soufflé. It comes from Sam Beall, the proprietor of Blackberry Farm in Tennessee, who died at age 39 in a ski accident. The dish makes its seasonal debut on the Beall family table at Thanksgiving, but paired with a salad, it becomes lunch or a light dinner any time of year. Use the sweetest carrot you can find, and grate the onions on the same grater you use for the cheese to save a little prep and clean-up time. 2 1/2 c sugar
1 Tbsp baking powder
1 Tbsp vanilla
1/4 c flour
6 medium eggs
1/2 lb margarine
GARNISH FOR TOP
powdered sugar

Steps:

  • 1. Steam or boil carrots until extra soft. Drain well.
  • 2. While carrots are warm, add sugar, baking powder and vanilla. Whip with mixer until smooth. (I used a potato masher first and then the mixer. Either way works fine.)
  • 3. Add flour and mix well. Whip eggs and add to flour mixture, blend well. Add softened margarine to mixture and blend well.
  • 4. Pour mixture into 13 by 9 inch baking dish about half full as the souffle will rise.
  • 5. Bake in 350 degree oven about 1 hour or until top is a light golden brown. Sprinkle lightly with powdered sugar over top before serving.
  • 6. I tried this out in two smaller ramekins and they looked so festive. Plus it cut down on the cooking time about 20 minutes less. I may try serving this way next time.

1 lb frozen sliced carrots, cooked
1/2 cup margarine
3 eggs
1 cup sugar
3 tablespoons matzo cake meal
1 teaspoon kosher-for-passover baking powder
1 teaspoon vanilla
1 dash of cinnamon and nutmeg
1/4 cup matzo meal
3 tablespoons brown sugar
2 tablespoons melted margarine
1/4 cup chopped nuts
1 dash of cinnamon and nutmeg

Steps:

  • Blend carrots and margarine in food processor. Add rest of ingredients and mix well. Pour into lightly greased baking dish.
  • Mix topping ingredients and sprinkle on top. Bake at 350 for 25-35 minutes or until set.

2 lbs carrots (peeled and sliced)
1/2 cup butter, melted
3 eggs
3/4 cup sugar
1 tablespoon flour
1 teaspoon baking powder
1 teaspoon almond extract or 1 teaspoon vanilla extract
1 dash cinnamon
1 dash clove
1 dash nutmeg
4 graham crackers (or graham cracker crumbs)
3 tablespoons brown sugar
3/4 cup walnuts
1/3 cup butter, not melted

Steps:

  • Boil carrots until they are very soft and can easily be mashed.
  • Process carrots in food processor or blender with butter, eggs, and sugar.Blend well until smooth.
  • Separate a small amount of this mixture in a bowl and add flour and baking powder. Stir this.
  • Add this mixture to the carrot blend and mix well.
