Categories     Cheese     Potato     Vegetable     Side     Bake     Thanksgiving     Casserole/Gratin     Celery     Bon Appétit

Yield Serves 8 to 10

Number Of Ingredients 9

1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon ground nutmeg
3/4 cup thinly sliced shallots
2 1-pound celery roots, peeled, halved, thinly sliced
2 pounds russet potatoes, peeled, thinly sliced
2 cups whipping cream
1 cup canned chicken broth
8 ounces Fontina cheese, grated

Steps:

  • Preheat oven to 400° F. Mix salt, pepper and nutmeg in small bowl. Sprinkle half of shallots in 16-cup oval gratin dish or 15x10x2-inch glass baking dish. Top with half of celery root and half of potatoes. Sprinkle half of spice mixture over. Repeat layering with remaining shallots, celery root, potatoes and spice mixture. Bring cream and broth to simmer in medium saucepan. Pour over vegetables. Cover tightly with foil.
  • Bake until vegetables are almost tender, about 45 minutes. Increase oven temperature to 450° F. Press potatoes with spatula to even thickness. Bake uncovered until juices thicken, about 10 minutes. Top with cheese. Bake until cheese melts and browns, about 15 minutes. Cool 15 minutes before serving.

Tips for Making Celery Root and Cheese Bake:

  • Choose the right celery root. Look for one that is firm and has a smooth, unblemished skin. Avoid any celery roots that are soft or have brown spots.
  • Peel the celery root carefully. Use a sharp knife to remove the skin, being careful not to cut into the flesh of the celery root.
  • Grate the celery root finely. This will help it cook evenly in the casserole.
  • Use a good quality cheese. The cheese is one of the main ingredients in this dish, so it's important to use a cheese that you enjoy. Sharp cheddar, Gruyère, and Parmesan are all good choices.
  • Don't overcook the casserole. The celery root should be tender, but still slightly firm. Overcooking will make it mushy.

Conclusion:

Celery root and cheese bake is a delicious and easy-to-make casserole that can be enjoyed by people of all ages. It's a great way to use up leftover celery root, and it's also a good source of vitamins and minerals. With its creamy, cheesy flavor and crispy topping, this casserole is sure to be a hit at your next potluck or family gathering.
