This is one of those dishes that illustrates how recipes can be tweaked without any noticeable effect. It called for milk; I had skim milk. It wanted butter for sautéing; I used olive oil.

CELERY ROOT PUREE

Celery Root Puree image

I joke that celery root tastes like celery if celery actually tasted good; for the most part, this is true. The flavor is quite mild and pleasant, and the texture is somewhat similar to mashed potatoes. This simple puree is a very versatile side dish, but the tasty root will also work sliced thin and layered in a gratin, either with or without potatoes. I hope you give this great fall and winter vegetable a try soon.

Yield Makes 2 servings (about 3/4 cup)

Number Of Ingredients 6

1/2 lb celery root, peeled with a sharp knife and cut into 1/2-inch cubes (1 cup)
1 small garlic clove
1/2 cup low-sodium chicken broth
1/4 teaspoon salt
3 tablespoons heavy cream
1 teaspoon unsalted butter

Steps:

  • Simmer celery root, garlic, broth, and salt in a 1- to 2-quart heavy saucepan, covered, until celery root is very tender, 12 to 15 minutes. Purée mixture with cream and butter in a food processor until smooth.

Tips:

  • Choose ripe pears: Look for pears that are slightly soft to the touch and have a sweet aroma. Avoid pears that are too hard or have bruises or blemishes.
  • Peel and core the pears before cooking: This will help to remove the tough skin and seeds from the pears, resulting in a smoother puree.
  • Cook the pears and celery root until they are very soft: This will help to create a smooth and creamy puree. You can cook them in a pot on the stovetop or in a slow cooker.
  • Use a food processor or blender to puree the pears and celery root: This is the easiest way to achieve a smooth and creamy puree. You can also use a potato masher, but it will take a bit more effort.
  • Season the puree to taste: You can add salt, pepper, and other herbs and spices to taste. You can also add a bit of cream or butter to make the puree richer.

Conclusion:

Celery root and pear puree is a delicious and healthy side dish that can be served with a variety of main courses. It is also a great way to use up leftover pears. The puree can be made ahead of time and reheated when you are ready to serve it.
