BABY CEREAL COOKIES
Daniel was never keen on baby cereal or other pureed foods. I found this recipe when I was searching for ways to incorporate baby cereal and other iron-rich foods into a finger-food diet for him. They are wonderful! Daniel has one or two each morning for breakfast. To mix things up, I sometimes add a banana or a handful of raisins to the mix. These freeze well, so if you end up with too many cookies, just pop them in a freezer bag and save for later! (I found the recipe at www.simcoehealth.org.)

CRISPY CEREAL COOKIES
not a very unique name..but I like this recipe..just messed around one day and decided to use up some small amounts of cereal left in boxes..Measure the cereal then crush it slightly..If you crush then measure..it will be too much cereal..I always "underbake" my cookies..the residual heat in cookies will finish the cookies Try using different flavor cake mixes sometimes I add dried cherries, cranberries or raisins..always like to do something different to change the recipe a little

Steps:
- 1. Preheat oven to 350. 2. Line four cookie sheets with parchment paper and set aside. 3. Combine margarine and sugars in the bowl of an electric mixer; beat until fluffy. 4. Add eggs and vanilla; beat until smooth. 5. Add flour, baking soda, baking powder and salt. Mix to combine. 6. With the mixer on the LOWEST setting, stir in Cocoa Pebbles. (If you prefer, you can do this by hand with a silicone spatula or wooden spoon.). 7. Drop batter by tablespoonfuls onto prepared cookie sheets. COOKIES WILL SPREAD, so make sure you leave sufficient space between them --I'd say about two inches. 8. Bake for 10-12 minutes. Allow cookies to cool for 3-4 minutes on the tray, then remove with a metal spatula and allow to cool completely on a rack.
CEREAL COOKIES
Steps:
- Cream sugars, butter, and oil. Beat in eggs, vanilla. Add dry ingredients and mix well. Mix in cereal, oatmeal, coconut, and nuts by hand. (mixed all in big bowel, dumped in mixer together) Chill several hours or overnight. Shape into balls and flatten with sugared glass. Bake at 350 degrees until lightly browned. Makes 7 dozen cookies.
Tips:
- For chewier cookies, use less flour and more oats.
- For crispier cookies, use less oats and more flour.
- Add a variety of mix-ins to your cookies, such as chocolate chips, dried fruit, or nuts.
- Be sure to chill the cookie dough before baking. This will help the cookies hold their shape.
- Don't overmix the cookie dough. Overmixing will make the cookies tough.
- Bake the cookies at the correct temperature and for the correct amount of time. Overbaking will make the cookies dry and crumbly.
