Champagne is a sparkling wine that is produced in the Champagne region of France. It is made from a blend of Chardonnay, Pinot Noir, and Pinot Meunier grapes. Champagne is known for its complex flavor and aroma, which can include notes of citrus, apple, brioche, and toast. It is a popular choice for celebrations, such as weddings and New Year's Eve. While champagne is typically enjoyed as a beverage, it can also be used in cooking. Champagne can be used to make a variety of dishes, including sauces, soups, and desserts. Its acidity can help to balance out rich flavors, and its bubbles can add a festive touch to any dish.

2 large eggs
2 tablespoons unsalted butter, melted
1/2 teaspoon salt
1 cup diced yellow onion
1 cup chopped carrots
1 cup chopped celery
1 large shallot, minced
2 tablespoons chopped garlic
2 ounces clarified butter
2 cups white wine
3 tablespoons commercial lobster base
2 cups water
4 cups heavy cream
1/2 cup champagne
4 ounces roux
White pepper
2 ounces clarified butter
2 ounces lobster meat, cubed
2 ounces crawfish tail meat
2 ounces shrimp pieces, large
2 ounces crabmeat
1/2 cup champagne
2 plum tomatoes, seeded and diced
1/2 cup chopped green onions (scallions)
Salt and pepper

Steps:

  • Crepes: In a medium bowl, mix together all of the crepes ingredients. Cover and refrigerate for a few hours, or overnight.
  • To a small, non-stick pan (crepe pan), coat with butter and put over medium heat. Pour about 2 ounces of batter in the pan and lift the pan off the heat, tilting in a circular motion until the batter forms a nice and even thin layer. Cook until top is firm and bottom has set. Turn the crepe over and cook until firm. Remove the crepe and begin a new one. Repeat with all of the remaining batter. Lobster Champagne Sauce: Sweat the onions, carrots, celery, shallots, and garlic in a medium saucepan with clarified butter for about 5 minutes. Add the white wine and reduce by half. Then, add the lobster base and water and let simmer for about 5 minutes longer. Strain the mixture and put back in saucepot. Add the heavy cream and cook for 5 to 10 minutes. Add the champagne and cook for 2 minutes. Incorporate the roux and bring back to a simmer to thicken. Season with white pepper, to taste.
  • Filling: In a medium saute pan, add the clarified butter. Add the seafood and let the shrimp cook through, about 3 minutes. Add the champagne and reduce for 1 minute. Add the lobster champagne sauce and let cook for another 2 minutes. Fold in the diced tomatoes and scallions and season with salt and pepper. Mixture is ready to serve.
  • Take 2 crepes and fill with some of the mixture and roll the crepes. Place in a shallow gratin dish. Repeat with the remaining ingredients. Add the remaining sauce and seafood on top of the crepes.

2-INGREDIENT PUNCH (MOCK CHAMPAGNE PUNCH)

2-Ingredient Punch (Mock Champagne Punch) image

I've been making this punch for years. I wish I had a dollar for every time someone asks for the receipe and then thinks that I'm truly keeping it a secret because they cant believe it only has 2 ingredients. It is the easiest, most light and refreshing compliment to any shower, tea or party gathering. It's beautiful looking too and matches any theme or color. You can make it for a few people up to 100's and still, it is a money friendly punch because it has only 2 ingredients. But don't let the 'only 2' ingredients fool you. It's delicious! (Some people say it reminds them of champagne.) Kid friendly, teen friendly, adult friendly. Enjoy!

Provided by teastockton

Categories     Punch Beverage

Time 5m

Yield 4 quarts, 16-20 serving(s)

Number Of Ingredients 6

1 (2 quart) bottle white grape juice (any brand)
1 -2 liter ginger ale (i use canada dry diet ginger ale, you can't tell it's Diet)
raspberries (optional)
blackberry (optional)
strawberry, cut in half with the green stem still attached (optional)
blueberries (optional)

Steps:

  • Place white grape juice and ginger-ale in refrigerator overnight or until well chilled. Placing them in the freezer for a couple of hours before serving will make them 'icy' and everyones favorite.
  • In a serving picture or punch bowl, pour equal parts white grape juice and ginger-ale. Stir gently. Fill each glass, and if you want garnish with frozen fruit.
  • Optional Garnish: On a lined cookie sheet, place the fruit(s) in a single layer but not touching, into the freezer for several hours until frozen (or overnight). After they are completely frozen, they can be bagged together as long as they stay in the freezer so they don't stick together. Then use one of each fruit to garnish each glass. It is beautiful and also keeps it colder longer and doesn't water down the flavor.

PINK CHAMPAGNE CAKE

Pink Champagne Cake image

This is a very easy to make cake that tastes elegant! I got this out of a magazine years ago and every year i have to hunt for it so now am posting on Zaar for safe keeping. UPDATE: There used to be a white cake mix that had no oil added to it but it has since been discontinued. For the cake mix use the specified amount of oil on the cake mix box and amount of eggs. this is just to replace the water.

Provided by Jessica K

Categories     Dessert

Time 1h10m

Yield 1 cake, 16-20 serving(s)

Number Of Ingredients 8

18 1/4 ounces white cake mix, no pudding, and must be white to taste champagne
1/2-3/4 cup champagne, chilled (pink, white, sweet, dry)
1 cup butter, softened
4 cups powdered sugar
1/4 cup milk
1/4 cup champagne
1 tablespoon vanilla
5 -5 1/2 cups additional powdered sugar

Steps:

  • Use a box of white cake mix (NO pudding) and substitute champagne - 1/2 to 3/4 cup to replace all of the liquid called for in the cake mix. So if the box says 3/4 cup water replace with 3/4 cup champagne. I did use one that had 1 1/4 cups water and replaced with champagne, just depends on the cake mix brand you buy. The kind of champagne/sparkling wine (pink, white, sweet, dry) used will determine the flavor. I usually just buy the cheap pink sparkling stuff in the grocery store, it's sweet and yummy in this!
  • Tint with red food coloring to a soft pink, use a drop at a time, this stuff will stain, probably take about 3 drops.
  • Bake cake as instructed on box. I usually make in 9x13-inch pan, but for an elegant layer cake use two 9 round cake pans, a heart pan would be perfect for Valentine's Day!
  • Creamy champagne frosting:.
  • Beat 1 cup softened butter for 30 seconds. Gradually add 4 cups powdered sugar.
  • Beat in 1/4 cup milk, 1/4 cup champagne, and 1 TB vanilla.
  • Beat in 5-5 1/2 more cups powdered sugar till you can spread it or is consistency you want.
  • Add red coloring till pink color, again slowly add a drop at a time till color you want. Frost completely cooled cake.
  • This is excellent served the next day after being refrigerated all night so the flavors can blend!

CHAMPAGNE RISOTTO

Champagne Risotto image

Provided by Giada De Laurentiis

Categories     main-dish

Time 55m

Yield 2 servings

Number Of Ingredients 10

4 thin slices prosciutto
3 cups reduced-sodium chicken broth
12 asparagus spears, cut diagonally into 1-inch pieces
2 tablespoons butter, divided
1 shallot, finely chopped
3/4 cup Arborio rice or medium-grain white rice
3/4 cup Champagne
1/4 cup freshly grated Parmesan
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the slices of prosciutto on a lightly greased baking sheet. Bake until the prosciutto slices are almost completely crisp, about 6 to 8 minutes. The slices will crisp up even more as they cool. Reserve for garnish.
  • In a medium saucepan, bring the chicken stock to a boil. Reduce heat to a simmer. Blanch the asparagus in the chicken stock for 2 minutes. Remove the asparagus with a slotted spoon. Set the asparagus aside and keep the chicken stock at a low simmer.
  • In another medium saucepan, melt 1 tablespoon of the butter. Add the shallot and cook until tender, about 3 minutes. Add the Arborio rice and stir to coat in the butter. Continue toasting the rice, stirring constantly, for about 3 minutes more. Add the Champagne and simmer until the liquid has almost evaporated, about 3 minutes. Add 1/2 cup of the simmering broth and stir until almost completely absorbed, about 2 minutes. Continue cooking the rice, adding the broth 1/2 cup at a time, stirring constantly and allowing each addition of broth to absorb before adding the next, until the rice is tender but still firm to the bite and the mixture is creamy, about 20 minutes total. Remove from the heat. Gently stir in the asparagus, remaining butter, Parmesan, salt, and pepper. Spoon the risotto into serving dishes and garnish by breaking the crisp prosciutto into smaller pieces over the top of the risotto. Serve immediately.

CHAMPAGNE VINAIGRETTE DRESSING

Champagne Vinaigrette Dressing image

Make and share this Champagne Vinaigrette Dressing recipe from Food.com.

Provided by kasue5

Categories     Salad Dressings

Time 7m

Yield 16 ounces, 8 serving(s)

Number Of Ingredients 7

12 tablespoons champagne vinegar
8 tablespoons Dijon mustard
3 cups canola oil
1/2 cup honey
1/2 cup water
salt
white pepper

Steps:

  • In bowl, whisk vinegar, honey and mustard. Gradually add oil and whisk until emulsified. Season with salt & pepper.

Tips:

  • Choose the right champagne. Not all champagnes are created equal. For cooking, you'll want to choose a brut champagne, which is a dry champagne with no added sugar. This will help to ensure that your dish doesn't become too sweet.
  • Use champagne sparingly. A little bit of champagne goes a long way. Too much champagne can overpower the other flavors in your dish.
  • Add champagne at the right time. When you're cooking with champagne, it's important to add it at the right time. For most dishes, you'll want to add the champagne towards the end of the cooking process, so that the alcohol has a chance to cook off.
  • Don't boil champagne. Boiling champagne will drive off the alcohol and ruin the flavor. If you need to reduce the champagne, do so over low heat.
  • Experiment with different recipes. There are many different ways to cook with champagne. Try experimenting with different recipes to find ones that you enjoy.

Conclusion:

Cooking with champagne can be a great way to add a touch of elegance and sophistication to your dishes. By following these tips, you can ensure that your champagne-infused dishes are delicious and memorable.
