  • In a large bowl, using an electric mixer, beat cream cheese, butter, and sugar until light and fluffy. With mixer on low, add flour and salt; beat until combined (do not overmix).
  • Divide dough into 3 portions; flatten each into a disk. Roll each disk to an 1/8-inch thickness between sheets of parchment. Stack dough (still in parchment) on a baking sheet; refrigerate 20 minutes. (To store, wrap in plastic and freeze on sheet, up to 2 weeks. Thaw until pliable before using.)

1 1/4 teaspoons coarse salt
2 cups (4 sticks) unsalted butter, softened
6 ounces cream cheese (not whipped), room temperature
1 1/4 cups sugar
2 tablespoons plus 1/2 teaspoon pure vanilla extract
2 1/2 cups walnut halves (1 1/2 cups toasted and coarsely chopped and 1 cup finely chopped)

Steps:

  • Whisk together flour and salt in a large bowl; set aside. Put butter and cream cheese in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 2 minutes. Mix in sugar and vanilla. Reduce speed to low. Add flour mixture, and mix until just combined (do not overmix). Mix in toasted walnuts.

I cannot imagine holiday-time without rugelach around. They are the most addictive, filled cookie ever! I usually make 2-3 times the recipe (inviting a friend over for coffee, chat and helpful rolling), then freeze and bake as needed. You will have none left by the end of the holidays, trust me. The bake time is approximate - it could be slightly more or slightly less, depending on how big you make the rugelach.

1/2 lb unsalted butter, softened
8 ounces cream cheese, softened
2 cups all-purpose flour
1 tablespoon icing sugar
1 pinch salt
1/2 cup butter, melted
1/4 cup sugar (during the holidays, I use one of those coloured sugars)
1/2 cup sugar
1 teaspoon cinnamon
1 1/2 cups finely chopped nuts (I like to use walnuts, almonds or hazelnuts)
3 tablespoons butter, melted
1 cup ground almonds
1 cup jam (I like to use apricot, peach, strawberry or raspberry)
3 tablespoons butter, at room temperature, combined with
1 cup chocolate chips
3 tablespoons butter, at room temperature combined with
3/4 finely chopped dates, and
1/2 teaspoon cinnamon

Steps:

  • In a mixing bowl or food processor, cream the butter and cream cheese together.
  • Add the pinch of salt and sugar.
  • Beat in the flour, a little at a time.
  • Knead the dough lightly until all the flour is incorporated.
  • Divide the dough into 4 equal portions and refrigerate at least 1 hour.
  • Prepare one of the fillings by combining the ingredients (except the 1/4 cup sugar for the topping) and set aside.
  • Flour the surface you will be rolling out the pastry on very generously.
  • This is a delicate dough and is apt to stick.
  • Roll out one of the portions of dough into a 10 inch in diameter circle.
  • With a knife or pastry wheel, cut the pastry into 10-12 pie-shaped wedges (depending on how large or small you want the rugelach to be- I go for smaller).
  • If the dough is sticky, dust it with a little flour.
  • Sprinkle or spread a little of the filling of your choice on each little wedge.
  • Beginning at the wide edge, roll the dough up toward the point, as you would make a crescent roll or a croissant, turning the ends in slightly to achieve the crescent.
  • Place on an ungreased cookie sheet and brush with melted butter and sprinkle with a tiny bit of the topping sugar (this step can also be done just before baking and ensure that the sugar is not knocked off in the freezer).
  • Repeat with the rest of the dough and filling.
  • At this point, I pop the cookie sheet directly into my freezer and freeze the rugelach individually.
  • When frozen, I pack them into ziploc bags to use at whim over the holidays (and not just) so they can be freshly-baked for any occasion.
  • Preheat oven to 350°F and bake for 20-25 minutes, or until golden, brushing with melted butter after 15 minutes if desired.

2 cups sifted all-purpose flour
1 cup cold butter
1 cup plus 2 tablespoons cream-style cottage cheese
Raspberry jam
GLAZE:
1 cup confectioners' sugar
1/8 teaspoon almond extract
2% milk

Steps:

  • Place flour in a medium bowl; cut in butter as for pie crust. Blend in cottage cheese until mixture forms a ball (can use a food processor). Chill 1 hour. , On a floured surface, roll dough to 1/8-in. thickness. Cut with a 3-in. round cutter. Place a level 1/4 teaspoon jam in center of reach cookie. Moisten edges and fold in half; seal tightly with a fork. Place on lightly greased baking sheets; prick tops with fork., Bake at 400° for 15 minutes or until lightly browned. Cool on wire racks. For glaze, combine the sugar, extract and enough milk to make thin spreading consistency; drizzle over cooled cookies.

I love this recipe because it is so easy to roll out, and the taste is great. This is our favorite Christmas cookie recipe to make, but I also make them for Easter and Halloween. Sometimes I ice them or just sprinkle with colored sugar while they bake. I always double this recipe for us.

1 cup margarine
1 (3 ounce) package cream cheese
1 cup sugar
1 large egg yolk
1 teaspoon vanilla
2 1/2 cups flour

Steps:

  • Cream margarine and cream cheese, then add the sugar, egg yolk, and vanilla, and flour last.
  • I like to chill dough over night or at least several hours.
  • Roll out chilled dough and cut in desired shapes with your favorite cookie cutters.
  • Bake at 350° for 10 minutes.
  • Ice and decorate.

1 (8 ounce) package cream cheese
1 cup white sugar
½ teaspoon vanilla extract
2 ½ cups all-purpose flour
½ teaspoon salt
½ cup chopped pecans
½ cup green sugar crystals
½ cup red sugar crystals
1 cup pecan halves

Steps:

  • Cream together the butter and cream cheese. Add sugar and vanilla; beat until light and fluffy.
  • Combine the flour and salt; gradually add to creamed mixture, beating until well blended. Stir in chopped pecans. Cover bowl with plastic wrap and refrigerate for 15 minutes.
  • On four sheets of aluminum foil, shape dough into four 6 inch rolls, 1 1/2 inches in diameter. Wrap each roll tightly in foil and refrigerate over night.
  • Preheat oven to 325 degrees F (165 degrees C). Line cookie sheets with foil. Remove rolls of dough from refrigerator one at a time. Coat each roll with red or green sugar crystals; cut dough into 1/4 inch slices.
  • Place on prepared cookie sheets; top each cookie with a pecan half. Bake for 15 to 18 minutes or until bottom of cookie is lightly browned when lifted.

2 large eggs
4 cups all-purpose flour
2 tablespoons baking powder
1 teaspoon salt
1 1/2 cups confectioners' sugar
3 tablespoons milk
colored sprinkles (red and green)

Steps:

  • Preheat oven to 350 degrees F.
  • In large bowl, with mixer at low speed, beat sugar and margarine or butter until blended.
  • Increase speed to high; beat until light and fluffy, about 5 minutes.
  • At medium speed, beat in ricotta, vanilla, and eggs until well combined.
  • Reduce speed to low.
  • Add flour, baking powder, and salt; beat until dough forms.
  • Drop dough by level tablespoons, about 2 inches apart,onto ungreased large cookie sheet.
  • Bake about 15 minutes or until cookies are very lightly golden (cookies will be soft).
  • With pancake turner, remove cookies to wire rack to cool.
  • Repeat with remaining dough.
  • When cookies are cool, prepare icing: In small bowl, stir confectioners' sugar and milk until smooth.
  • With small metal spatula or knife, spread icing on cookies; sprinkle with red or green sugar crystals.
