3 1/2 cups potatoes, peeled and diced (I keep mine with the peel)
1/3 cup celery, diced
1/3 cup onion, finely chopped
1 cup chopped carrot
1 -2 cup ham, diced and cooked
3 1/4 cups chicken broth or 3 1/4 cups ham stock
2 tablespoons chicken bouillon granules (omit if using chicken broth)
salt (to taste)
1 teaspoon pepper
5 tablespoons butter
5 tablespoons flour
2 cups milk
2 cups cheddar cheese, shredded

Steps:

  • Combine potatoes, celery, carrots, onion, ham, and water/broth in stockpot and bring to boil.
  • Then cook over medium heat until potatoes are tender.
  • Stir in the chicken bouillon, salt (if using), and pepper.
  • In separate saucepan, melt butter over medium-low heat. Whisk in flour and cook stirring constantly until thick.
  • Slowly stir in milk as not to allow lumps to form and all milk is added. Turn up to medium heat. Continue to stir until thick (4-5 minutes).
  • Add in cheese and stir until melted.

1/3 cup chopped celery
1/3 cup chopped onion
4 cups diced peeled potatoes
3 cups chicken broth
2 cups milk
1 1/2 teaspoons salt

Steps:

  • In a large saucepan, melt butter over medium high heat. Sauté celery and onions together.

2 celery stalks, sliced
1/2 large red onion, diced
3 russet potatoes, cut into 1-inch cubes

2 cups milk
2 tablespoons butter
1 cup shredded Cheddar
Finely chopped fresh chives or scallions, for garnish
4 slices cooked bacon, chopped

  • Heat the oil in a deep pot over medium-high heat. Add the celery and onions and saute until the veggies begin to soften, about 2 minutes. Add the potatoes and toss with a good pinch of salt. Add the chicken stock and simmer until the potatoes soften, about 20 minutes. Then add the milk and butter, and stir until the butter melts.
  • At this point you have a few options. If you have an immersion blender, simply stick the wand in the pot and give it a few whizzes, blending some of the soup until it's nice and creamy. You'll still want a good amount of potato chunks in the soup, so don't go overboard, like I tend to do.
  • You can also scoop out about 2 cups of the soup and transfer it to a blender or food processor. Blend until creamy and transfer it back to the soup pot.
  • Or, you can simply mash a few of the potatoes with a potato masher, leaving it on the slightly chunkier side. It's up to you!
  • After you've creamified it, give it another taste and add plenty of salt and pepper if needed.
  • Scoop out a little for the kids and keep it simple for them with shredded Cheddar and a kiss of chives! (Chives are optional, of course.) As for you, adult faces, load up your bowls with plenty of chopped bacon, Cheddar, little dollops of sour cream, sliced jalapenos and chives!

I found this recipe in my mom's recipe collection after she passed away and we love it! The recipe is very forgiving if you need to sub ingredients based on what you have on hand. Don't have broth? Use the potato cooking liquid with a tsp of chicken bouillon mixed in. No heavy cream? No worries, use all milk.   • In a large pot melt butter over medium heat and stir in onion. If using real onion cook until just translucent.
  • Stir in the flour and cook stirring constantly for at least a minute to get rid of the raw flour taste. (If you've never worked with roux it will look like a really thick paste at this point. That's great- keep stirring :) ).
  • Add red pepper flakes and salt & pepper.
  • Slowly add the 1 cup of broth stirring as you pour it into the roux. Stir until smooth.
  • Start adding the milk and cream and stir until smooth.
  • Bring the mixture up to a low simmer stirring constantly. Simmer 2-3 minutes.
  • Add the sugar and the shredded cheese.
  • Stir until cheese is melted.
  • Stir in Bacon or Ham and potatoes and cook for 1 minute to heat potatoes thru.

1 celery rib, chopped
1 onion, chopped
2 carrots, chopped
5 potatoes, cut in cubes
2 (15 ounce) cans creamed corn
2 (14 ounce) cans chicken broth
2 cups milk
2 cups cheddar cheese, shredded
salt and pepper
2 tablespoons cornstarch (optional)
3 tablespoons cold water (optional)

Steps:

  • Place ham, celery, onion, carrots, potatoes, corn and chicken broth in crock pot. Add salt and pepper to taste. (The ham will provide some salt.) If cooking stovetop, cook until potatoes are done. Turn crock pot to low and cook 3 to 4 hours.
  • During last 10 minutes of cooking add evaporated milk. Heat only-do not boil. Str lightly to allow cheese to melt. If a thicker soup is desired, add optional cornstarch after dissolving it in cold water. Smash a few potatoes for thickening.

Steps:

  • In a saucepan, bring potatoes and water to a boil. Cover and cook for 10-15 minutes or until tender. Drain, reserving 1 cup cooking liquid. In a blender or food processor, process reserved liquid and 1/4 cup cooked potatoes until smooth; set aside. Set remaining potatoes aside., In a large saucepan, saute ham and onion in oil until onion is tender. In a bowl, combine milk powder, flour, pepper, milk and processed potato mixture until smooth. Stir into ham and onion. Bring to a boil; cook and stir for 2 minutes or until thickened., Reduce heat to low. Add the cheese, broccoli and reserved potatoes; cook and stir over low heat until cheese is melted and heated through. Serve immediately.

3 tablespoons white vinegar
1 ½ teaspoons garlic powder
1 teaspoon lemon juice
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
2 cups shredded sharp Cheddar cheese
½ cup shredded Swiss cheese
½ cup shredded American cheese
4 stalks scallions, chopped

Steps:

  • Combine cauliflower, potatoes, broth, celery, carrots, and onions in a large saucepan; bring to a boil. Cover and cook until vegetables have softened, about 10 minutes. Remove from the heat but keep the lid on.
