2 cups white sugar
⅔ cup evaporated milk
1 ¼ cups miniature marshmallows
½ cup butter
1 dash salt
1 ¼ cups cherry baking chips
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
¾ cup chunky peanut butter

Steps:

  • In a large saucepan over medium heat, stir together sugar, milk, marshmallows, butter, and salt. Simmer for about 5 minutes or until mixture reaches soft ball stage, 240 degrees F (115 degrees C). Turn off heat. Add cherry chips and vanilla; stir until melted.
  • Pour mixture into a well-greased 9x13 inch pan, and let cool until firm.
  • In a microwave, or in a saucepan over low heat, melt chocolate chips and peanut butter. Pour over cherry mixture and spread evenly. Allow to cool completely before cutting.

These ultra sweet bars are always a year-round request, even though I usually only make them at Christmas time. They are very easy to make, and quick! If cherry chips aren't available in your area, butterscotch chips can be substituted.

2 tablespoons butter
1 cup white sugar
¼ teaspoon salt
⅓ cup half-and-half cream
1 cup miniature marshmallows
1 cup cherry baking chips
1 cup semisweet chocolate chips
½ cup peanut butter
1 cup roasted Spanish peanuts

Steps:

  • Line an 8x8 or 9x9 inch square pan with waxed paper.
  • In a medium saucepan, combine butter, sugar, salt and half and half. Heat until boiling, stirring occasionally. Boil for 5 minutes, stirring enough to keep from scorching. Remove from heat and stir in the marshmallows, and cherry chips. Press the mixture into the prepared pan.
  • In the microwave or in a metal bowl over a pan of simmering water, melt chocolate chips, and peanut butter together stirring frequently until smooth. Spread over the mixture in the pan. Refrigerate for 2 hours before cutting into squares.

These taste like the real thing for those of us who don't have access to St. Joseph, MO's famous yummy candies. Rich cherry nougat surrounded by chocolate and chopped peanuts.

Number Of Ingredients 10

1/2 stick margarine
1/2 tsp vanilla
1 lb confectioners' sugar
1 box vanilla frosting mix (dry)
1 pkg cherry jello (small size, dry mix)
8 oz maraschino cherries, drained, dried, chopped in blender
1/2 can(s) sweetened condensed milk
10 oz unsalted peanuts, crushed
18 oz chocolate chips, either milk chocolate or semi-sweet
1/2 oz paraffin (1/8 of a bar)

Steps:

  • 1. Mix all ingredients with mixer til well-blended. Roll into desired size balls. I suggest small ones since this is a very rich candy and the chocolate coat will add some size, also. Chill thoroughly
  • 2. Melt chocolate chips with parafin. Stir til well-blended. Mix in peanuts.
  • 3. Dip chilled cherry balls into mixture, reheating chocolate if it begins to harden. Chill thoroughly til set. Enjoy!

5 oz maraschino cherries, drained and cut
4 Tbsp margarine, don't melt
2 Tbsp cherry juice, reserved from cherries
2 tsp vanilla extract
1 box powdered sugar
1 box dry cherry frosting
6 oz chocolate chips
1/2 c peanuts, salted and without skins, crushed

Steps:

  • 1. Combine margarine, cherry juice, cherries and vanilla. Beat on medium speed until creamy and well mixed. Add powdered sugar and dry frosting gradually, mixture will become very stiff. Add another tablespoon cherry juice, if needed. Roll in small balls and place on cookie sheet, Covered with wax paper. Chill.
  • 2. Melt chocolate chips, add peanuts. Dip candy into mixture. Drain on wax paper.

I haven't made this..found it online while looking for some tips on something, and then not two minutes later I saw it in a magazine I get every month. It had good reviews, so I figured seeing it twice in a short period of time was a sign I was supposed to post it..so here it is for the Holidays. One recipe called it Bing...

1 12 ounce package semisweet chocolate pieces
3/4 c creamy peanut butter
2 c finely chopped pecans, toasted, or finely chopped roasted peanuts
1 1/2 c sugar
12 large marshmallows
1/2 c butter
1 5 ounce can evaporated milk
1 10 ounce package cherry- or- peanut butter flavor pieces

Steps:

  • 1. Line a 13x9 inch pan with heavy foil; allowing foil to extend over sides of the pan; grease foil and set pan aside.
  • 2. In saucepan, mix chocolate and peanut butter. Cook and Stir over low heat until melted. Stir in nuts. Spread half (1 1/4 cups) in prepared pan; transfer to refrigerator. Let remaining mixture stand at room temperature.
  • 3. In another medium saucepan, combine sugar, marshmallows, butter and evaporated milk. Cook and stir over medium heat until mixture comes to a boil; cook 5 minutes more, stirring constantly. Remove from heat. Stir in cherry or peanut butter pieces until melted. Cool 10 minutes. Carefully spread over chocolate layer in pan. Chill the layered mixture for 20 minutes.
  • 4. carefully spread remaining chocolate over cherry layer. (If too firm to spread, place in microwave safe bowl; microwave on 50% power for 30 seconds, and then spread.) Cover; chill at least 1 hour. Use foil to lift candy from pan; cut into small pieces. Store up to one week in airtight container in refrigerator. Makes 120 pieces.
  • 5. NOTE: If you cannot find Cherry chips anywhere...it was suggested too use White Chocolate chips and add cherry extract with some food coloring (I would suggest in using oil based food coloring by wilton, to achieve the cherry color)..they said you could find the cherry extract at Walmart. It turned out well for this particular person who tried it. If doing this..be sure to use Good quality chocolate..high end brand.

1/2 c butter or margarine ( i use butter)
2 c granulated sugar (can be made with splenda)
2/3 c evaporated milk
dash of salt
12 large marshmallows
1 pkg (10 oz) cherry chips
1 tsp pure vanilla
1 pkg (12 oz) chocolate chips
3/4 c peanut butter ( i use skippy-extra crunchy); ( i use a little more )
1 pkg (12 oz) crushed peanuts

Steps:

  • 1. Combine butter or margarine, sugar, milk, salt and marshmallows in saucepan. Bring to a boil then boil for 5 minutes.
  • 2. Remove from heat and stir in cherry chips and vanilla. * Pour into a buttered 9 x 13 baking dish and chill for 2 hours.
  • 3. In a double boiler, melt chocolate chips. Add peanut butter and crushed peanuts. Stir until well blended. Spread evenly over the cherry layer. Chill until firm enough to cut into bite size pieces.
  • 4. * I line the 9 x 13 baking dish with aluminum foil (butter the foil) so that I could lift the candy out of pan when set, that way it would be easier to cut into squares.
  • 5. Lot and Lots of you have asked what is a "Cherry Chip"....yes, it's just like buying a bag of Chocolate, Butterscotch, Peanutbutter...etc. Chips. I use Log House premium quality CHERRY flavored Baking Morsels. There is a photo above by Karla showing the cherry chips in a bag...=;D
  • 6. NOTE: If you want your candy squares thick like this pic, then make it in a 8x9-inch pan (instead of a 9x13...you get more pieces using the larger pan, but the squares won't be as thick).
  • 7. and above is a pic of...the original 'CHERRY MASH' candy bar
  • 8. Kim's photo's above, without putting in the crushed NUTS...made a beautiful "fudge". She also has a photo above when she remade it and put the nuts in...beautiful.
  • 9. and...WHEN I USE SPLENDA, to make this candy, I USE Hershey's Sugar-Free Chocolate Chips.
  • 10. ADDING A NOTE FROM CARY BOWERS: For those of us that can't find the Cherry Chips in the local grocery store. Trust me I went to every one here in my area. There is a way you can still make this awesome candy with out them. I went to my local Walmart store in the isle with spices and extracts look for Watkins Cherry extract. I used the white chocolate chips and then added four capfulls' of the extract and red food coloring if that is important to you. You can also add the flavoring to taste. I will post a picture of it when I am done. The Cherry part is chilling now then on to the top ;) This has been a fave of my husband and I have loved this since we were kids. Ah, cherry and chocolate. Just seems to go together so many different ways. This is from the back of a Gurley's (TM) Sweet Cherry Chips. Going on the Christmas cookie tray!

2/3 cup milk
1/2 cup butter
12 regular-size marshmallows
1/4 teaspoon salt
1 cup gurley's sweet cherry chips (TM)
1 teaspoon vanilla
12 ounces Spanish peanuts, chopped in blender
2 cups gurley's real milk chocolate chips (TM)
3/4 cup creamy peanut butter

Steps:

  • In a 2-quart saucepan, boil sugar, milk, butter, marshmallows, and salt for 5 minutes, stirring constantly. Remove from heat.
  • Add cherry chips, vanilla, and half of the Spanish peanuts. Spread in an ungreased 9x13" pan.
  • In saucepan over very low heat, combine chocolate chips, peanut butter, and the remaining peanuts. When melted, pour evenly over first layer. Cool and cut into 1 1/2" squares.

1 can Eagle Brand milk
2 sticks oleo, softened
2 tsp. cherry flavoring
2 lbs powdered sugar
10 oz maraschino cherries
24 oz. chocolate chips
1 LB. raw peanuts
2-3 squares almond bark

Steps:

  • Drain juice from cherries and chop fine, mix first 6 ingredients together, it may take more powdered sugar to make the balls. Chill and roll into balls. Put on waxed paper and freeze. Melt 24 oz. chocolate chips, 1 lb. chopped peanuts and 2-3 squares almond bark. Dip frozen balls into chocolate mixture. Put back on waxed paper and let set out and dry.

2 cups chocolate chips (1/2 milk chocolate, 1/2 semi sweet)
3/4 cup peanut butter

Steps:

  • Boil sugar, milk, butter and marshmallows for five minutes, stirring constantly.
  • Remove from heat.
  • Stir in cherry chips, half of peanuts.
  • Spread in 9 x 13 pan. Allow to cool.
  • Melt chocolate chips.
  • Add peanut butter and remainder of peanuts.
  • Spread on top of cherry layer.
  • Chill, then cut into slices.
  • Instead of using a 9 x 13 pan, you can also make these in individual minature or regular size cupcake papers.

2 tablespoons butter (I used butter) or 2 tablespoons margarine (I used butter)
1/4 teaspoon salt
1/3 cup half-and-half (I used 1/2 and 1/2 mixed with whole milk) or 1/3 cup undiluted evaporated milk (I used 1/2 and 1/2 mixed with whole milk)
1 cup miniature marshmallow
1 cup cherry chips
1 cup chocolate chips (I used Ghirardelli Bittersweet Chocolate about 3 1/2 ounces) or 4 ounces bittersweet chocolate (I used Ghirardelli Bittersweet Chocolate about 3 1/2 ounces)
1/2 cup peanut butter
1 cup salted peanuts

Steps:

  • 1 Combine sugar, butter or margarine, salt and half and half in saucepan. Boil on high heat for about 5 minutes, stirring occasionally. Stir in marshmallows and cherry chips. 2 Spread in 8 or 9" square pan which has been lined with parchment or wax paper. 3 Melt chocolate with peanut butter in a small pan over low heat, stirring occasionally. 4 Stir in peanuts. Spread evenly over cherry layer. 5 Let set in refrigerator. Cut into 1" squares with warm sharp knife (hold under hot water and then dry before cutting).

  • Use fresh cherries. For the best flavor, use fresh cherries that are in season. If you can't find fresh cherries, you can use frozen or canned cherries, but the flavor will not be as good.
  • Pit the cherries before using them. You can use a cherry pitter to make this task easier. If you don't have a cherry pitter, you can use a knife to cut around the pit and then pop it out.
  • Use a good quality vodka. The quality of the vodka will affect the taste of the cherry mash. Use a vodka that you enjoy drinking straight.
  • Let the cherry mash steep for at least 2 weeks. The longer you let the cherry mash steep, the better the flavor will be. You can let it steep for up to 6 months.
