Tips:
- Use fresh or frozen cherries: Fresh cherries are in season during the summer months, but frozen cherries are available year-round. If using frozen cherries, thaw them completely before adding them to the muffin batter.
- Don't overmix the batter: Overmixing the batter will make the muffins tough. Stir just until the ingredients are combined.
- Fill the muffin cups only 2/3 full: This will allow the muffins to rise properly in the oven.
- Bake the muffins until a toothpick inserted into the center comes out clean: This usually takes about 20-25 minutes.
- Let the muffins cool before frosting: This will help the frosting to set properly.
