This is a slow-roasted version of the stove-top tomato sauce, and it's jam-packed with flavor. CHERRY TOMATO SAUCE WITH PENNE
The best ways to eat cherry tomatoes are as follows: plucked warm off the vine and eaten raw standing in front of the plant. Next best is raw, in some sort of salad. Third best is made into a sauce as I've done here. Ladle into bowls and top with Parmigiano-Reggiano.

Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Peel off outer layers of the garlic but leave cloves intact. Chop about 1/2 inch off the top of the garlic head and place in a ramekin or small casserole dish. Drizzle the exposed side with 2 tablespoon olive oil and sprinkle with 1/4 teaspoon salt. Cover with aluminum foil.
- Roast in the preheated oven until tender, 45 minutes to 1 hour. Remove from the oven and cool for 15 minutes. Remove roasted garlic by squeezing it from the skins; set aside.
- Heat remaining 1/4 cup olive oil in a deep skillet over medium-high heat. Add onion, cayenne, and remaining 1 teaspoon salt. Reduce heat to medium and cook until onion is translucent and slightly golden, about 5 minutes.
- Add tomatoes and white wine and continue to cook until most of the wine has been reduced, about 5 minutes. Add butter and cook until completely melted, 1 to 2 minutes.
- Add roasted garlic and enough chicken broth to completely cover the tomatoes; bring to a boil. Reduce heat to a simmer and cook until sauce has reduced and thickened, about 15 minutes.

SAUTEED FISH WITH LEMON BUTTER AND CHERRY TOMATOES
We loved this buttery, flavorful sauce and it makes the fish so pretty, too. (I saw something like this on Irish Food Trails some time ago and have recreated it as closely as I could recall. The measurements are all estimated.)

Steps:
- Sautee the fish in the olive oil over medium heat until cooked through, adding salt and pepper to taste. This will take 1-4 minutes per side. Remove to a plate.
- Make a sauce by adding a good dollop of butter and the juice of a lemon to the pan. Stir it around, loosening all the crispy bits in the bottom of the pan and allowing it to thicken a bit.
- Add a handful of cherry tomatoes, halved and cook just until they are warmed through and begin to break down, adding their juices to the sauce.
- Top the plated fish with the gorgeous orange, buttery, lemony sauce you just made and the tomatoes and eat it up.

PASTA WITH CHERRY TOMATOES, BASIL, LEMON, AND CLAMS
Steps:
- Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain pasta; return to same pot.
- Meanwhile, heat oil in heavy large skillet over medium-high heat. Add garlic and sauté until fragrant, about 2 minutes. Add tomatoes; sauté until beginning to soften, about 5 minutes. Add drained clams and basil; stir 1 minute.
- Add clam sauce, 1 cup Parmesan cheese and lemon juice to pasta. Toss over medium-high heat until heated through, adding reserved clam juices by 1/4 cupfuls if pasta is dry. Season with salt and pepper. Serve with additional Parmesan cheese, if desired.
Tips:
- Selecting the Best Tomatoes: Choose ripe, firm, and brightly colored cherry tomatoes for the freshest and most flavorful sauce. Look for tomatoes that are free of blemishes and bruises.
- Roasting the Tomatoes: Roasting the cherry tomatoes intensifies their sweetness and flavor. Toss the tomatoes with olive oil, salt, and pepper, then roast them in a preheated oven at 400°F (200°C) for 20-25 minutes, or until they are slightly charred and softened.
- Using Fresh Herbs: Fresh herbs like basil, oregano, and thyme add a burst of flavor to the sauce. Chop the herbs finely and stir them into the sauce just before serving to preserve their delicate flavors.
- Balancing the Acidity: Lemon juice adds a bright, tangy flavor to the sauce, but it's important to balance the acidity with a touch of sweetness. Add a pinch of sugar or honey to the sauce to round out the flavors.
- Adjusting the Consistency: If you prefer a thicker sauce, simmer it for a longer period of time, allowing the tomatoes to break down and release their juices. For a thinner sauce, add a little bit of water or vegetable broth.
Conclusion:
With its vibrant color, bursting flavors, and versatile applications, this cherry tomato sauce with lemon is a culinary delight that will elevate any dish. Whether you're using it as a pasta sauce, a pizza topping, or a dipping sauce for appetizers, this recipe delivers a winning combination of tangy, sweet, and savory flavors. The roasting process caramelizes the tomatoes, intensifying their sweetness and producing a rich, complex flavor profile. The addition of fresh herbs and lemon juice brings a refreshing brightness that perfectly complements the sweetness of the tomatoes. Bon appétit!
