1/2 cup green pepper, chopped
2 tablespoons minced dried onion
1/2 cup celery, chopped
1 (2 ounce) jar pimiento
2 (10 1/2 ounce) cans cream of chicken soup or 2 (10 1/2 ounce) cans cream of mushroom soup
1 (4 ounce) can sliced mushrooms, drained
1 (10 ounce) package frozen peas
2 cups uncooked rice

1 1/2 lbs boneless skinless chicken breasts
1 (10 3/4 ounce) can condensed cream of chicken soup or 1 (10 3/4 ounce) can cream of mushroom soup
3 tablespoons flour
1/4 teaspoon pepper
1 (10 ounce) package frozen peas and pearl onions, thawed and well drained
2 tablespoons pimiento, chopped and drained
1/2 teaspoon paprika
1/2 teaspoon celery salt, optional
1 dash cayenne pepper

Steps:

  • Cut chicken into bite size pieces.
  • Place in slow cooker.
  • Using a medium bowl, stir soup, flour and pepper until blended.
  • Pour over chicken but DO NOT STIR.

GRAVY SAUCE
1/2 c butter or margarine
1 1/2 c milk
1/2 tsp salt
1/4 tsp black pepper
1 medium green bell pepper (chopped)
1/2 large onion *diced
1/2 c all purpose flour
1 small can of mushrooms (optional)
1 jar(s) (diced) pimientos 2 o.z.
1 1/4 c chicken broth
1 1/2 c velveeta cheese (cubed)
6 chicken bouillon cubes
1 large whole chicken or ( cups of turkey) boiled and deboned
BASE ( CAN USE ONE OF THE FOLLOWING ITEMS)
mashed pototoes
rice
biscuits
toast or bread

Steps:

  • 1. Boil 1 large whole chicken, add 3 chicken bouillon cubes to the water. Once chicken is falling off the bones, remove from stove top and de-bone, set chicken aside.
  • 2. In a large soup pot ( I use the same pot I boiled my chicken in) Melt butter on medium-high heat. Cook bell peppers and mushrooms in butter, stirring occasionally, until bell pepper is crisp-tender.
  • 3. Add flour, salt and pepper. 3 remaining bouillon cubes. Cook over medium heat, stirring constantly,Stir in milk and broth. Heat to boiling, stirring constantly. Boil and stir 1 minute. Turn down to a low-medium heat and stir in chicken (or turkey) and pimientos.cut up Velveeta cheese into cubes to melt faster, I let my sauce simmer for about 30-40 mins to thicken up.
  • 4. Once thickened, pour over rice,potatoes, biscuits,bread or even toast!! It's fabulous over all these different items. That way you never get board with it. I usually cook up some cornbread to go with it. Hope you love it as much as my friends and family do.

This is a recipe my mom made for the restaurants she worked for. She was a cook from the time she was 16 ( only cook for a small private hospital) until she retired at 90. I have no idea how many people have enjoyed the meals she made in all those years. But I know she was happy to touch that many lives. Enjoy this recipe.

4 Tbsp butter
2 to 4 c sauteed sliced mushrooms
2 to 4 c each of sauteed chopped green and red sweet peppers
SEE NOTE IN DIRECTIONS FOR OPTIONAL ADDITIONAL VEGETABLES
1 1/2 c butter
1 1/2 c flour
6 c chicken broth
4 c cream
8 to 10 c chopped cooked chicken
1 c sherry wine
salt and pepper to taste
nutmeg and cayenne to taste

Steps:

  • 1. In a large stockpot over medium high heat, melt the 4 Tbsp butter and saute the mushrooms and peppers ( 10 to 20 minutes). When cooked and tender remove veggies and any juices to a bowl and set aside.
  • 2. Melt the 1 1/2c of butter in the stockpot and add flour. Whisk together and cook over medium heat for 5 minutes or so to cook out the raw flour taste. Do not brown the roux. Whisk in chicken broth and sherry until smooth. Simmer until thickened. Remove pot from heat to make additions.
  • 3. Add cream and season the sauce to taste with salt and pepper, fresh grated nutmeg and a bit of cayenne. Add chopped cooked chicken and sauteed veggies to cream sauce and mix well. Return to heat to serving temperature (Do not boil) and serve hot over biscuits, toasted English muffins, toast points, or in puff pastry shells.
  • 4. Note: You may add other additional sauteed vegetables if desired. Suggestions include chopped celery, cubed carrots, chopped onion, and/or frozen peas. The traditional recipe includes only peppers and mushrooms.

1 can(s) cream of chicken soup
2 1/2 c coarse chopped cooked turkey or chicken, deli chicken is fine
1 can(s) mushroom stems and pieces drained
1 Tbsp chopped pimientos
1 Tbsp parsley flakes
1/8 tsp dried marjoram leaves
1 tsp onion powder
1/8 tsp pepper
salt to taste
1 c cream
1 c chicken broth
1/2 c grated parmesan cheese
4 tsp cooking sherry

Steps:

  • 1. Place prepared biscuits in the oven while you make the chicken mixture, or you can make your own from scratch.
  • 2. Make a roux. Melt equal parts of 2 tablespoons of butter in a large skillet over medium high heat, add 2 tablespoons of flour, a cup of broth stir until thickened. Add chicken, heat through and turn heat to low and add the pimientos, mushrooms, parsley, marjoram and onion powder. Add the cream, can of soup and parmesan cheese. Stir gently, heat but don't boil. Add salt and pepper. Add the sherry, stir gently to combine. Split the biscuits and spoon mixture over them and serve. Enjoy!
  • 3. Cooks tip: You can add other ingredients to this, sometimes I add frozen peas I have steamed in a steamer bag. This can also be made in the microwave.
