1 cup quinoa
2 teaspoons olive oil, divided
5 skinless, boneless chicken breasts, cubed
salt and ground black pepper to taste
1 yellow onion, chopped
1 cup chopped carrots
1 cup chopped celery
½ cup chopped red bell pepper
½ cup chopped yellow bell pepper
2 tablespoons chopped garlic
8 cups chicken broth
2 cups chopped spinach leaves
½ teaspoon dried marjoram
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon crushed bay leaf
⅓ cup cornstarch
¼ cup cold water

Steps:

  • Bring 3 cups water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.

1 teaspoon Cajun seasoning, plus more for topping
1 cup quinoa
1 quart fat-free low-sodium chicken broth
Kosher salt and freshly ground pepper
2 cups chopped broccoli florets
2 1/2 cups shredded rotisserie chicken (white meat only), skin removed
2 tablespoons low-fat sour cream

Steps:

3 cups chopped cooked chicken breast
2 eggs
4 ¾ cups chicken broth, divided
1 cup all-purpose flour
¼ cup chopped fresh parsley
2 teaspoons salt

¼ cup butter
2 cups chopped onion
1 ½ cups thinly sliced celery
2 cloves garlic, minced
½ cup all-purpose flour
2 quarts chicken broth

Steps:

2-1/4 quarts cold water
5 chicken bouillon cubes
6 whole peppercorns
3 whole cloves
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1-1/2 cups chopped carrots
1 cup fresh or frozen peas
1 cup chopped celery
1 cup chopped peeled potatoes

1-1/2 teaspoons seasoned salt
1/4 teaspoon pepper

DUMPLINGS:
