Sauerkraut with Chicken Leg Quarters and Sausages image

This recipe is based on the French dish "choucroute garnie" (garnished sauerkraut). Don't let the fancy name fool you -- it's simple to make and is the ultimate comfort food.

Time 1h

Number Of Ingredients 10

2 pounds sauerkraut, drained
2 pounds chicken leg quarters (about 3), split into drumsticks and thighs (see Smart Strategy note) and patted dry
Coarse salt and ground pepper
1 pound kielbasa, cut into 1-inch pieces
5 medium carrots, cut into 1 1/2-inch pieces
1 large yellow onion, halved and sliced 1/4 inch thick
2 cups dry white wine, such as dry Riesling or Pinot Gris
2 tablespoons sugar
2 dried bay leaves
1/2 teaspoon caraway seeds

Steps:

  • In a large bowl, cover sauerkraut with water. Heat a large Dutch oven or other heavy pot over medium-high. Season chicken with salt and pepper. Add to pot, skin side down, and cook, turning until browned on all sides, 8 minutes. Transfer chicken to a plate. Add kielbasa, cut side down, to pot and cook until browned on both sides, about 4 minutes, flipping once. Add carrots, onion, and 1/2 cup water; cook, stirring and scraping up browned bits with a wooden spoon, until water is evaporated and onion is softened, 6 to 8 minutes. Add wine and bring to a boil.
  • Drain sauerkraut, pressing to remove as much liquid as possible. Add to pot, along with sugar, bay leaves, and caraway seeds; season with salt and pepper. Stir to combine.
  • Place chicken, skin side up, on top of sauerkraut and bring mixture to a boil. Reduce heat, partially cover pot, and rapidly simmer until chicken is cooked through and liquid is slightly reduced, about 20 minutes. Remove bay leaves before serving.

Time 55m

Yield 4-6 serving(s)

Number Of Ingredients 9

4 chicken breasts, skin removed
1 (32 ounce) bag sauerkraut, drained
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/8 teaspoon garlic powder
1/2 teaspoon seasoning salt
2 -2 1/2 cups thousand island dressing
6 -8 slices swiss cheese

Steps:

  • Preheat grill on medium heat!
  • Rinse the chicken breast very well under cold water, pat dry.Mix all the ingredients in a small bowl, season both sides of the breast with all the spices. Grill for 10-15 minutes or until juices begin to run clear, remove from grill.
  • In a 3-4 QT casserole dish, make a layer of kraut on the bottom of the dish, about 1-11/2 inch deep. Put the chicken breast on top of the kraut.Add the rest of the kraut on top of the chicken breast. Depending on how much you like the taste of the thousand island dressing, spread it across the top layer of the kraut.Bake for 45-60 minutes covered.
  • The last 10 minutes of cooking, layer the cheese on top of the thousand island dressing.Remove lid, return to oven. Bake until the swiss cheese starts to turn a little golden in color.Remove and let rest for 5-10 minutes. Serve hot.

Tips:

  • For the most flavorful sauerkraut, choose a brand that is fermented for at least six months.
  • If you don't have time to brown the chicken, you can skip this step. However, browning the chicken will add a lot of flavor to the dish.
  • If you don't have a Dutch oven, you can use a large pot or skillet.
  • Serve the chicken and sauerkraut with mashed potatoes, egg noodles, or rice.
  • For a more flavorful dish, add a bay leaf or two to the pot while the chicken and sauerkraut are simmering.
  • If you like your sauerkraut a little sweeter, add a tablespoon of brown sugar or honey to the pot.
  • If you don't have any caraway seeds, you can use dill seeds instead.

Conclusion:

Chicken and sauerkraut is a classic comfort food dish that is easy to make and can be enjoyed by people of all ages. It's a great way to use up leftover chicken, and it's also a budget-friendly meal. So next time you're looking for a quick and easy dinner idea, give chicken and sauerkraut a try. You won't be disappointed!
