1 pound boneless, skinless chicken breast
1 teaspoon dried oregano
Salt and pepper
1 tablespoon olive oil
1/4 cup white wine
4 tablespoons butter
3 cloves garlic (minced)
2 tablespoons lemon juice
1/2 pound fresh mozzarella
1 cup pesto sauce
2 cups cherry tomatoes (quartered)
1/2 cup Parmesan cheese (grated)

Steps:

  • Gather the ingredients.
  • Season the chicken breasts with dried oregano, salt, and pepper. Preheat the oven to 400 F.
  • Heat the olive oil in a large cast-iron skillet or sauté pan on medium-high heat. Add the chicken to the pan and brown it on both sides for 3 to 5 minutes.
  • Remove the chicken from the pan and place it on a plate. Turn down the heat, add the white wine to the pan, and deglaze it by scraping at the browned bits on the bottom. 15 -18 cloves garlic
1 onion, sliced
1 green pepper, sliced
1/2 cup sun-dried tomato, chopped (not packed in oil)
1/4 cup white wine
1/2 cup chicken broth
1 teaspoon dried oregano
1/4 teaspoon ground black pepper

  • Rinse and cut all visible fat off of chicken breasts.
  • Coat a skillet with nonstick cooking spray (nonfat), and preheat over medium heat.

1/4 cup KRAFT Sun Dried Tomato Vinaigrette Dressing

2 Tbsp. KRAFT Grated Parmesan Cheese

This is a quick and easy meal to make. I have cooked chicken with sun-dried tomato and oregano dressing for some time, but found a recipe in Chatelaine with the dried seasonings added. Original recipe called for 4 cloves of garlic, but I found that a bit much. I would only use 4 cloves if they were small. Wonderful flavor. Serve this with steamed green beans and rice pilaf.

4 chicken legs or 4 chicken thighs
1/2 cup bottled sun-dried tomato and oregano salad dressing
1 (1 tablespoon) bottle chopped garlic or 2 garlic cloves, minced
1 teaspoon dried Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
1/2 cup chopped fresh basil (optional)

Steps:

  • Using sharp knife, make 2 or 3 slashes in each piece of chicken.
  • Place chicken in a large plastic bag, then pour dressing overtop chicken.
  • Sprinkle with garlic, Italian seasoning, salt and pepper.
  • Seal bag and shake or massage bag to mix spices and evenly coat chicken.
  • Refrigerate chicken in the bag with marinade at least 1 hour (preferably overnight) When ready to cook, heat barbeque to medium heat.
  • Remove chicken from marinade and pour remaining marinade into a small bowl.
  • Barbeque with lid closed 10 minutes.
  • Brush tops of chicken with remaining marinade, then turn chicken.

8 ounce(s) package of sliced baby portobello mushrooms
1 package(s) frozen spinach, thawed, and drained of any excess water
1 pint(s) cherry tomatoes, halved
1 large roasted red pepper, sliced julienne
3 clove(s) roasted garlic, minced
1 large chicken breast, grilled and sliced
1 cup(s) sun-dried tomato vinaigrette (or your favorite sauce/vinaigrette)
- salt & pepper
1 box(es) whole wheat penne pasta
2 ounce(s) shredded mozzarella cheese
1 teaspoon(s) dried basil

Steps:

  • In a large non-stick skillet over medium heat, saute mushrooms until they have reduced in size. You can add a little salt and pepper to help season them at this point, if desired.
  • While mushrooms are sauteing, start large pot of water and bring to a boil. Slice the cherry tomatoes in half and sprinkle just a little salt over them.
  • Once the mushrooms have reduced in size, add the spinach and cook for about 4 to 5 minutes.
  • Cook pasta according to package and drain. Reserve 1/2 cup of water from the pasta water.
  • Add garlic and roasted red peppers to the mushroom/spinach mixture. Add the 1/2 cup of pasta water and reduce to medium-low heat.
  • Once most of the water has evaporated, add the chicken and basil. Simmer for about 7 minutes.
  • Add vinaigrette and mozzarella cheese. Stir until the cheese has melted. Add the tomatoes and cover the skillet. Simmer for approximately 5 minutes. Serve warm over pasta.
