Yield 4 servings

Number Of Ingredients 16

3 tablespoons olive oil, divided
2 large carrots (about 10 ounces), coarsely chopped
2 onions, coarsely chopped, divided
12 garlic cloves, thinly sliced, divided
1 leftover roasted chicken carcass, meat picked off in large pieces and reserved, or 1 1/2 cups shredded cooked chicken
10 cups low-sodium chicken broth
1 1/2 cups whole farro
2 1/2 teaspoons kosher salt, divided
1 (15-ounce) can cannellini (white kidney) beans, drained, rinsed
1 cup thinly sliced Tuscan kale
2 tablespoons fresh lemon juice
1/8 teaspoon freshly ground black pepper
4 tablespoons radish-top salsa verde (optional)
1/4 cup coarsely chopped dill
1 baguette, sliced, toasted
Lemon wedges (for serving)

Steps:

  • Heat 2 Tbsp. oil in a large pot over medium-high. Cook carrots, half of the onion, and 3 sliced garlic cloves, stirring occasionally, until softened and lightly browned, about 5 minutes. Add chicken carcass, if using, and broth; cover and simmer 30 minutes. (If you're not using carcass, simmer 15 minutes.)
  • Meanwhile, toast farro in another large pot over medium heat, stirring occasionally, until it starts to brown and smells nutty, about 3 minutes. Stir in 1 tsp. salt and 3 cups water. Cover and simmer until farro is tender and liquid evaporates, about 30 minutes; strain any remaining liquid, if necessary. Add remaining broth left in bowl, increase heat to medium-high, and bring to a simmer. Add reserved chicken meat, beans, kale, lemon juice, pepper, and remaining 1 1/2 tsp. salt and farro left in pot; cook until vegetables are cooked through, 3-5 minutes.
  • Divide soup among bowls. Stir 1 Tbsp. salsa verde into each bowl, if using, and sprinkle with dill. Serve with baguette slices and lemon wedges alongside.

He has a cooking show, Rocco Gets Real, which will air on A&E in October 2008. He states that to make soups and stews low-fat, skip the sauteing step. ITALIAN CHICKEN WITH WHITE BEANS

Italian Chicken With White Beans image

I'm making this tonight-posted for the nutrition info. From the Sonoma Diet. The original recipe calls for cannellini, but I have Great Northern so that's what I'm using.

Provided by greengirl512

Categories     Chicken Thigh & Leg

Time 23m

Yield 8 serving(s)

Number Of Ingredients 13

1 cup chopped onion
1 cup chopped carrot
1/2 cup thinly sliced celery
3 garlic cloves, minced
2 lbs boneless skinless chicken thighs
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
1 (14 1/2 ounce) can diced tomatoes, undrained
1/2 cup chicken broth
1/2 cup dry white wine
1 1/2 teaspoons dried Italian seasoning, crushed
1 (15 ounce) can great northern beans
1/4 cup grated parmesan cheese

Steps:

  • Instructions.
  • In a 3 1/2- or 4-quart slow cooker combine onion, carrots, celery, and garlic. Add chicken; season with salt and pepper. In a medium bowl stir together tomatoes, chicken broth, wine, and Italian seasoning. Pour over mixture in cooker. I'll bet you could make this with dry beans also, adding them here and maybe increasing the broth a little.
  • Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 31/2 hours. Turn off cooker and stir in beans. Cover and let stand for 10 minutes.Unless, of course, you added dry beans at the beginning-then skip this step.
  • Using a slotted spoon, move chicken and vegetables to a serving dish, saving the cooking liquid. Drizzle chicken and vegetables with cooking liquid until moist. Top with Parmesan cheese.

Tips:

  • Use a variety of vegetables: This will add flavor and nutrients to your soup. Some good options include carrots, celery, onion, garlic, and tomatoes.
  • Don't overcrowd the pot: If you add too many vegetables and chicken to the pot, the soup will be too thick. Add the vegetables and chicken in batches if necessary.
  • Simmer the soup for at least 30 minutes: This will allow the flavors to develop and the chicken to become tender.
  • Season the soup to taste: Add salt, pepper, and other seasonings to taste. You can also add a bay leaf or two for extra flavor.
  • Serve the soup hot with a side of crusty bread or crackers: This will make a delicious and satisfying meal.

Conclusion:

Chicken soup with pasta and white beans is a classic comfort food that is easy to make and loved by people of all ages. It is a great way to use up leftover chicken and vegetables, and it can be tailored to your own taste preferences. Whether you like your soup thick or thin, mild or spicy, there is a recipe out there for you. So next time you are feeling under the weather or just need a warm and comforting meal, give chicken soup with pasta and white beans a try.
