8 slices prosciutto
1 tablespoon olive oil

Steps:

  • 1. Preheat oven to 375 degrees F. Place chicken on cutting board. Holding sharp knife horizontal to board, cut a 3-inch deep pocket lengthwise in the thick side of each breast.
  • 2. Place 2 basil leaves on each slice of mozzarella, then sprinkle with salt and pepper. Stuff each breast pocket with a cheese bundle. Wrap 2 slices prosciutto around each breast, anchoring with toothpicks.
  • 3. Heat oil in large oven-proof nonstick skillet over medium-high. Add chicken and cook about 3 minutes on each side or until browned. Transfer chicken in skillet to oven; bake 12 minutes or until done (internal temp 170 degrees F).

2 cups cut-up cooked chicken
1/2 cup shredded Swiss cheese (2 oz)
4 medium green onions, thinly sliced (1/4 cup)
1 box (9 oz) frozen asparagus cuts, thawed, drained
1 package (6.5 oz) garlic-and-herbs spreadable cheese, softened
1 box (16 oz; 40 sheets) frozen phyllo (filo) pastry sheets (14x9 inch), thawed
Butter-flavored cooking spray

Steps:

  • Heat oven to 375°F. In small microwavable bowl, place carrots. Cover; microwave on High about 1 minute or until tender. Meanwhile, in medium bowl, gently mix chicken, Swiss cheese, onions, asparagus and spreadable cheese. Stir in carrots.
  • To make 1 bundle, layer 5 phyllo pastry sheets, generously spraying each layer with cooking spray (sheets can be stacked randomly). Keep remaining pastry sheets covered with damp cloth until needed to prevent dough from drying out. Place about 1/2 cup chicken mixture in center of stack of pastry. CREAMY MUSHROOM SAUCE

1/2 teaspoon dried parsley flakes
2/3 cup milk
1 (2 1/2-ounce) jar sliced mushrooms, drained
1/2 cup sour cream

1 1/2 cups cooked white rice
2 teaspoons dried thyme
2 tablespoons, plus 2 teaspoons pitted and chopped imported black olives
1 red bell pepper, cored and diced very small
2 ribs celery, diced very small
1/4 cup chopped Italian parsley
6 large cloves garlic, peeled and minced
2 teaspoons grated lemon zest
4 teaspoons kosher salt
Freshly ground pepper to taste
12 large romaine lettuce leaves
4 scallions, green part only, leaves separated and halved or quartered if large
Roasted-lemon-and-garlic steaming liquid (see recipe)

Steps:

  • Place the chicken in a food processor and process until chicken forms a smooth paste. Scrape it into a medium-size mixing bowl and stir in the rice, thyme, olives, red pepper, celery, parsley, garlic, lemon zest, salt and pepper.
  • Steam the lettuce leaves and the scallions over the lemon garlic liquid just until wilted; this will only take a few seconds. Remove the steaming liquid from the heat. Cut the tapered ends off of the lettuce leaves, leaving a large circle of leaf. Cut out the heavy center stems and overlap the lettuce where the stems were.
  • Place a scant 3 tablespoons of the filling in the center of each leaf. Lift the lettuce up around the filling and tie each one with a scallion leaf; they should look like little drawstring bags.

1 (5 1/4 ounce) can whole green chilies, drained
4 (1 ounce) monterey jack pepper cheese, sliced
1 large egg

1 cup tortilla chips, crushed

1 (10 ounce) package frozen chopped spinach (thawed and drained)
1 1/2 cups shredded Mozzarella cheese (divided)
1/4 cup grated Parmesan cheese
4 boneless skinless chicken breasts
2 eggs
20 Ritz crackers (crushed)
1 cup marinara sauce

  • Preheat oven to 375 degrees F.
