CHILES RELLENOS CASSEROLE

Chiles Rellenos Casserole image

The poblano chiles and cotija cheese in this rich and creamy Mexican-style casserole earn a gold star for authenticity. If you cannot locate them in your neighborhood supermarket, look for poblanos (a dark green chile that resembles green peppers) and cotija (a salty white cheese) in any Hispanic grocery store.

Provided by BHG Test Kitchen

Time 43m

Number Of Ingredients 9

2 large fresh poblano chile peppers or fresh Anaheim chile peppers (8 ounces)
4 ounce Monterey Jack cheese with jalapeno chile peppers, shredded, or shredded Mexican-style four-cheese blend (1-1/2 cups)
2 ounce crumbled Cotija cheese (1/2 cup)
3 eggs, lightly beaten
0.25 cup milk
0.333 cup all-purpose flour
0.5 teaspoon baking powder
0.25 teaspoon cayenne pepper
0.125 teaspoon salt

Steps:

  • Preheat oven to 450 degrees F. Grease a 2-quart square baking dish; set aside. Quarter the chile peppers and remove seeds, stems, and veins.* Immerse peppers in boiling water for 3 minutes; drain. Invert peppers onto paper towels to drain well. Place the peppers, cut side up, in prepared baking dish. Top with cheeses.
  • In a medium bowl combine eggs and milk. Add flour, baking powder, cayenne pepper, and salt. Beat with a rotary beater until smooth (or place in a food processor or blender; cover and process or blend until smooth). Pour egg mixture over chile peppers and cheeses.
  • Bake, uncovered, about 15 minutes or until a knife inserted into the egg mixture comes out clean. Let stand 5 minutes before serving.

8 poblano peppers
8 Colby Jack cheese sticks (1 ounce each) or 8 ounces Colby Jack cheese, cut into 1-inch pieces
One 10-ounce can enchilada sauce
8 large eggs
1 cup grated Cheddar
1 cup whole milk
3 tablespoons all-purpose flour
1/2 teaspoon baking powder

Steps:

  • Roast the poblanos over an open flame or under the broiler until charred all over, turning as necessary, about 8 minutes. • Bake until the casserole is set in the center and golden brown all over, about 1 hour. Let rest for 5 minutes. Serve warm.

My mother has been making this recipe for years. Its quick and easy and comes close to the original. I am not a big fan of the "chile". I have substitued chopped green chiles and shredded the jack cheese - which I actually prefer - but either way, this is a tasty one!

Tips:

  • Choose the Right Chiles: Select large, firm, and fresh poblano chiles for a better taste and texture.
  • Roast the Chiles Properly: Roast the chiles directly over an open flame or under a broiler until the skin is blistered and charred. This step is crucial for removing the skin easily.
  • Handle the Chiles with Care: Wear gloves while handling roasted chiles to prevent skin irritation from the capsaicin oils.
  • Stuffing the Chiles: Use a spoon or piping bag to fill the chiles with the cheese mixture. Make sure not to overstuff them, as they may burst during baking.
  • Baking Temperature and Time: Bake the stuffed chiles at 350°F (175°C) for about 20-25 minutes, or until the cheese is melted and bubbly.
  • Serving Suggestions: Serve the chile relleno casserole hot, topped with your favorite salsa, crema, and guacamole. It pairs well with rice, beans, or a side salad.
