CHILE VERDE GUACAMOLE

Chile Verde Guacamole image

Mexicans are split into two camps when it comes to guacamole: those who always add lime juice and those who absolutely do not. Many Sonoran friends shout "Never!" at the mere suggestion. Having grown up in the pro-lime camp in Mexico City, I was filled with skepticism before trying versions from the deep Mexican north, but what a pleasant surprise. The creamy and nutty avocado takes a deserving central role in Sonoran guacamoles. What won me over was the combination of two chiles: roasted Anaheim, with its tart, fresh, peppery flavors, and raw serrano, with its grassy taste and heat. (I hate to admit it, but this guacamole really needs no lime.)

Time 30m

Yield About 3 cups (4 to 6 servings)

Number Of Ingredients 6

1 fresh Anaheim chile
1 serrano chile, finely chopped
3 tablespoons finely chopped white onion
2 tablespoons coarsely chopped cilantro leaves and tender stems
1 teaspoon kosher or sea salt, plus more to taste
3 ripe avocados, halved and pitted, meat diced and mashed

Steps:

  • Place the Anaheim chile on a small baking sheet covered with aluminum foil. Roast it under the broiler, flipping a couple times, until the chile is wilted and its skin is completely charred and wrinkly, 9 to 12 minutes. (Alternatively, you can char the chile directly on a hot comal or a cast-iron pan set over medium heat, or on a grill set to high.)
  • Place the charred Anaheim chile in a plastic bag and close it well. Let it steam and sweat for 5 to 10 minutes.
  • As the Anaheim chile steams, add the serrano chile, onion, cilantro and salt in a bowl or molcajete, and mash until combined. Add the avocado and continue to mix and mash until you form a chunky purée.
  • Once it is cool enough to handle, remove the Anaheim chile from the bag, slip off the charred skin, make a slit down the side and remove the seeds and stem. You could rinse the chile under a thin stream of water, to help remove the seeds, or rinse it off by dipping it into a bowl of water.
  • Finely chop the Anaheim chile. Add it to the avocado mixture, and stir to combine. Season to taste with salt.

VERDE CHILAQUILES

Verde Chilaquiles image

This recipe was something I made up after having some sub-par chilaquiles at my favorite local breakfast place. This is my favorite Mexican breakfast dish and is great for a light dinner as well, serve with refried beans and some pico de gallo and you'll be craving for more! Garnish with more cilantro and sour cream. Great for leftover salsa verde or stale tortilla chips, perfect for a family brunch or other special breakfast occasion.

EASY LA VICTORIA CHILE VERDE

Easy La Victoria Chile Verde image

I love chile verde, and I've been impressed by this, the easiest and tastiest recipe I've found. Yes, it cheats a bit by using sauce from a jar (hmmph, you might say!), but sometimes you can achieve really good results from shortcuts. :) This is the recipe I use most often for Chile Verde. Delicious, and folks ask for the recipe.

COLORADO GREEN CHILI (CHILE VERDE)

Colorado Green Chili (Chile Verde) image

My version of my mother's green chili. I like to serve it over oven-baked burritos or with beans and rice. If you can't find a chile roaster, look for frozen diced chiles at your supermarket. You can also freeze fresh roasted chiles for off-season use.

Time 1h35m

Yield 6

Number Of Ingredients 11

1 tablespoon olive oil
1 ½ pounds cubed pork stew meat
salt and pepper to taste
1 large yellow onion, diced
4 cloves garlic, minced
2 cups chopped, roasted green chiles
1 (14.5 ounce) can diced tomatoes with juice
1 ½ cups tomatillo salsa
5 cups chicken broth
½ teaspoon dried oregano
1 pinch ground cloves

Steps:

  • Heat the olive oil in a Dutch oven or large pot over medium-high heat. Season the pork with salt and pepper to taste, then place into the hot oil. Cook until golden brown on all sides, about 7 minutes. Once browned, remove the pork and set aside. Reduce heat to medium, and stir in the onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Return the pork to the pot, and stir in the green chiles, diced tomatoes with juice, tomatillo salsa, and chicken broth. Season with oregano and clove. Bring to a simmer over medium-high heat, then reduce heat to medium-low, cover, and simmer 20 minutes.
  • After 20 minutes, remove 2 cups of the soup (ensure there are no pork cubes in it), and pour into a blender. Hold down the lid of the blender with a folded kitchen towel, and carefully start the blender, using a few quick pulses to get the soup moving before leaving it on to puree. Puree until smooth, then pour back into the cooking pot. This will create a thicker texture for your chili and will eliminate some of the chunky bits of chiles. Continue to simmer, stirring occasionally until the pork is very tender, at least 35 minutes more.

GRANDMA'S CHILE VERDE

Grandma's Chile Verde image

This is a recipe that has been in our family for many years. If you love Mexican food, you'll love this! It's almost like a stew but you serve it with a side of beans, rice, and tortillas. Hint: It is best to make a day ahead because all the flavors have time to really come together!

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 12

6 large lean pork chops
1 large yellow onion (chopped)
1 large garlic clove (pressed)
1 large yellow wax chili pepper (chopped)
2 (7 ounce) cans green chilies (chopped)
1 jalapeno chile (canned, chopped)
1 medium tomatoes (chopped)
salt (to taste)
cumin (to taste)
2 tablespoons flour
3 tablespoons olive oil
3 cups water

Steps:

  • Cut pork in medium size chunks. Brown in olive oil.
  • When pork liquid is gone, coat with the flour and stir up with a fork (like when you are making a gravy).
  • Pour the water over pork, add all ingredients (salt, cumin, and jalapenos to taste). Stir to make sure everthing is well mixed. Cook over medium heat until boiling, lower to simmer with lid on. Simmer until meat is tender, remove lid while simmering for less sauce.

Tips:

  • Choose ripe avocados: Ripe avocados are easier to mash and have a creamier texture. Look for avocados that are dark green or black in color, and are slightly soft when you gently squeeze them.
  • Use fresh ingredients: Fresh ingredients will give your guacamole the best flavor. If possible, use fresh cilantro, lime juice, and tomatoes.
  • Don't over-mash the avocados: Over-mashing the avocados will make your guacamole too smooth and runny, thus losing its chunky texture. Mash the avocados until you reach your desired consistency, whether that's chunky or smooth.
  • Add some heat: If you like spicy guacamole, add some chopped jalapeños or serrano peppers. You can also add a pinch of cayenne pepper for a milder heat.
  • Serve immediately: Guacamole is best served fresh, as it can start to brown after a while. If you're not serving it right away, store it in the refrigerator for up to 2 days.

Conclusion:

Chile verde guacamole is a delicious and versatile dip that can be enjoyed as an appetizer, a snack, or as part of a main meal. It's easy to make and can be tailored to your own taste preferences. Whether you like it spicy, mild, chunky, or smooth, there's a chile verde guacamole recipe out there for you. So next time you're looking for a quick and easy snack or dip, give chile verde guacamole a try. You won't be disappointed!
