CHILI CHEESE BURRITO INSPIRED BY THE TACO BELL CHILITO
It's gooey cheesy goodness wrapped up in a soft burrito. Taco Bell once served the chili cheese burrito 'The Chilito' near me. This recipe recreates those amazing flavors.

Steps:
- In a large skillet, over medium heat, brown the ground beef along with the diced onions. Once browned, drain the fat. Add the cayenne pepper, salt, and the chili powder to the pot. Pour in the water and make sure that the seasoning is well mixed in and dissolved. In a small bowl, combine the cornstarch and water, then add to the pot.
- Add the refried beans and tomato paste to the pot. Keep stirring the pot until the refried beans and tomato paste have become smooth and everything is well combined.
- Slowly add the shredded cheese to the pot. Keep folding the cheese in until it has all melted. Reduce the heat down to medium-low. Let the pot simmer for about 10 minutes, stirring frequently so nothing sticks and burns on the bottom.
- Run each of the tortillas under faucet to wet. Place the tortillas on a microwave safe plate and microwave them for 1 minute.
- To serve, spoon about 3-4 tbsp on the chili cheese sauce into the center of the warmed flour tortilla. Pull one end up to the center to cover the sauce. Tuck the ends of the tortilla in and roll to close the burrito. Enjoy!
TACO BELL CHILITO (CHILI CHEESE BURRITO) RECIPE!!!
For those of you who live in a place where Taco Bell does not sell their classic Chilito (and judging from Net, this includes alot of places), you can simply make them at home! This recipe is something I developed through trial and error. It is VERY close to the taste of the original. It also has that perfect "chilito" texture. Enjoy!! Important Note: The hot sauce called for in the recipe is Taco Bell's Hot or Mild Sauce (DO NOT USE the Fire sauce) You can make your own Taco Bell Hot Sauce: http://www.recipezaar.com/Taco-Bell-Hot-Sauce-45527

Steps:
- Brown the hamburger and crumble into very small pieces; drain, but reserve some of the fat.
- Place hamburger back onto heat and add flour and mix until it is thick.
- Add the beans and heat through.
- Add the hot or mild sauce 1 packet at a time until you achieve that 'chilito' taste (usually 8 packets will do).
- Add the cheese, enough to make a big gooey mess, under medium heat.
- Taste, and you might need to add a little more sauce.
- Now here is the trick for that 'chilito' texture:.
- Take a tortilla and run warm water all over it to soften. The pop it in the microwave for 20 seconds to "steam" it.
- Fill tortilla with hot chilito filling, fold, and eat it. There will be a smile on your face.

REAL DEAL TACO BELL CHILI CHEESE BURRITO
I'm posting this recipe in response to seeing many inaccurate copycat recipes online. This is an extremely cheap and easy item to make but every other recipe is too complicated, uses too many ingredients, and adds things which were never in Taco Bell's version. They may be good additions but they aren't Taco Bell copycats!

Steps:
- Warm tortillas on a griddle. Keep warm.
- Heat a few spoonfuls of chili in a small pot.
- Add an equal or greater amount of cheese. More cheese than chili tastes most like Taco Bell's version.
- Melt. Don't allow the cheese to stick and burn.
- Wrap about a large spoonful or two of the melted chili cheese in a tortilla.
- Makes a great chip dip. May be easily expanded to make enough for a group.
- Optional (good) additions which make this unlike a Taco Bell version: beans, extra beef, onions, Taco sauce, other seasonings, Frito chips.
Tips:
- Choose the right cheese: A blend of cheddar and Monterey Jack cheese is a classic choice, but feel free to experiment with different types of cheese to find your favorite combination.
- Don't overcrowd the pan: When cooking the ground beef, do it in batches if necessary to avoid overcrowding the pan. This will help the meat to brown evenly.
- Use a large skillet: When assembling the burritos, use a large skillet so that you have plenty of room to work. This will help you to prevent the burritos from falling apart.
- Be careful not to overfill the burritos: If you overfill the burritos, they will be difficult to fold and will be more likely to fall apart. Aim for about 1/2 cup of filling per burrito.
- Cook the burritos until they are golden brown: Cook the burritos over medium heat until they are golden brown on both sides. This will help to seal in the flavors and prevent the burritos from falling apart.
- Serve with your favorite toppings: Serve the burritos with your favorite toppings. Some popular options include sour cream, salsa, guacamole, and pico de gallo.
Conclusion:
The Chili Cheese Burrito is a delicious and easy-to-make meal that is perfect for a quick lunch or dinner. With its combination of ground beef, chili, cheese, and tortilla, it is sure to be a hit with everyone at the table. So next time you are looking for a tasty and satisfying meal, give the Chili Cheese Burrito a try. You won't be disappointed!
