  • Place potatoes in a Dutch oven and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender., Drain; mash potatoes with sour cream and milk. Stir in the chives, garlic, salt and pepper.

Coarse salt and freshly ground pepper
1/2 cup heavy cream
8 tablespoons (1 stick) unsalted butter
3 tablespoons snipped fresh chives

1/4 cup chopped fresh chives
2 tablespoons olive oil
1 tablespoon butter
1/2 cup parmigiano-reggiano cheese, fresh grated
2 tablespoons garlic, minced
1 tablespoon kosher salt
1 teaspoon black pepper, fresh ground
