3/4 cup all purpose flour (105g plain flour)
1 tbsp confectioners sugar (icing sugar (or a little more to taste))
1 tbsp unsweetened cocoa powder
1/4 tsp salt
2 tbsp unsalted butter (30g)
1 egg yolk
2 tbsp cold water (approx)
2 tbsp unsalted butter (30g)
1 oz dark chocolate (25g)
3/4 cup almond flour (75g ground almonds)
3 tbsp sugar
1 egg
1/4 tsp ground cardamom ((optional))
1/2 tsp vanilla
2 oz raspberries (55g, approx)

Steps:

  • First, make the pastry by mixing the dry ingredients (flour, sugar, cocoa powder and salt) in a food processor then add the butter and pulse until you get a fine breadcrumb texture. Add the egg yolk, pulse again to mix then add a little water gradually and pulse so that the dough comes together in large clumps.
  • Bring the dough together into a ball and wrap in plastic wrap/cling film and refrigerate for 30 minutes - this helps to avoid the pastry shrinking when you bake it.
  • While the pastry is cooling, make the filling by melting the butter in a small pan until just starting to smell nutty and light brown in color. Remove form the heat and melt the chocolate with the residual heat from the pan and allow to cool slightly.
  • In a small bowl, mix the almond flour, sugar, cardamon, egg and vanilla. Add the butter-chocolate mixture and mix well. Alternatively, you can just add the almond flour etc to the chocolate-butter mixture once it is lukewarm.
  • Once pastry has almost finished cooling time, preheat the oven to 375F/190C.
  • Roll out the pastry to around 1/8in/2-3mm thick and line 4 small tart moulds. Blind bake the pastry (by lining with parchment paper and filling with baking beans) for 15 mins until starting to dry.
  • Remove the parchment paper and beans, allow the pastry to cool slightly then put some of the filling in each and spread carefully across the bottom. Press some raspberries, open side down into the filling (as many as you like, but around 6 per tart works well) then bake for around 30 minutes until the filling looks like it is fairly dry and feels springy-firm rather than soft. Serve warm or cold. You can chill and keep any leftover in the fridge for a day or two.

1 1/4 cups finely ground chocolate wafer cookies (about 25)
5 tablespoons unsalted butter, melted
Filling and topping:
6 ounces almond paste, crumbled into 1/4-inch pieces (about 1 1/3 cups)
6 ounces bittersweet chocolate (do not exceed 61% cacao), chopped
1/2 cup heavy whipping cream
3 half-pint baskets fresh raspberries
2 tablespoons seedless raspberry jam
2 teaspoons kirsch (clear cherry brandy)
Sliced almonds, toasted

Steps:

  • For crust:
  • Preheat oven to 350°F. Combine cookie crumbs and 5 tablespoons butter in medium bowl. Stir until crumbs are evenly coated and beginning to stick together. Press crumb mixture in thin even layer onto bottom and up sides of 9-inch-diameter tart pan with removable bottom. Bake crust until set and beginning to crisp, pressing with back of fork if crust puffs, about 15 minutes. Cool crust completely on rack.
  • For filling and topping :
  • Sprinkle almond paste over crust. Gently press to even layer. Place chocolate in medium bowl. Bring cream to simmer in small saucepan. Pour cream over chocolate.   • Using small sharp knife, loosen crust from pan sides. Push up pan bottom, releasing tart. Cut into wedges; serve cold.

6 tablespoons (3/4 stick) unsalted butter, melted
12 ounces semisweet chocolate chips
1 1/4 cups heavy cream
1 1/2 cups fresh raspberries (6 ounces)

Steps:

  • Preheat oven to 350 degrees. In a food processor, combine cookies, sugar, and 1/2 teaspoon salt. Process until very fine crumbs form. Add butter and pulse until mixture just comes together. 1 teaspoon baking powder
1 cup sugar, divided
1 cup cold butter, divided
3 large eggs

1 egg, beaten to blend
3/4 cup whipping cream
1/4 cup powdered sugar
2 tablespoons amaretto liqueur

2 (6-ounce) baskets fresh raspberries
Unsweetened cocoa powder, for dusting

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut a 3/4-inch wide strip off each side of the pastry and reserve. Roll out the pastry sheet on a lightly floured work surface to a 10-inch square. Brush the edges of the square with the egg. Working with 1 strip at a time, stand the strips along the edges of the pastry square and crimp where they meet. You want to create a shallow box, where the pastry square is the base and the 4 strips are the walls. Overlap the strips at the corners, stretching them if necessary to complete the walls of the box.   • 1. Preheat the oven to 375 degrees F. Open up the 2 pieces of pie crust dough and lay one down on your work surface. Dip your finger in water and run it around the perimeter of the dough. Use a rubber spatula to gently fold the egg into the cooled chocolate mixture.
  • 3. Spread the jam over the bottom of the tart. Pour the chocolate mixture into the prepared tart over the jam and bake until the filling is slightly firm but still has a bit of movement in the center, 25 to 30 minutes. Remove from the oven and place on a rack to cool.

1/4 teaspoon cream of tartar
1/2 cup sugar
1 teaspoon vanilla

1 1/4 cups cake flour (That is presifted and then measured to 1 1/4 cups)
1 teaspoon baking powder
1/4 teaspoon salt
4 ounces semisweet chocolate
2 cups whipping cream, divided (2 tablespoons for chocolate rest for filling and frosting)
1/3 cup seedless raspberry jam
1/2 cup sliced almonds, toasted
1 cup fresh raspberry (optional)

Steps:

  • Prepare 2 8 inch cake pan by greasing with butter apply wax paper to pan then butter again.
  • Preheat oven to 350 degrees.
  • Beat egg white and cream of tartar using clean, dry and oil free bowl and beaters till soft peaks form set aside.
