CHOCOLATE CHIP DATE NUT CAKE

Chocolate Chip Date Nut Cake image

This was my favorite birthday cake growing up as a young boy. Everytime my Grandma Laura would come to visit us in Taos, NM, she'd pick one up from Dory's Bakery and bring it over. I was able to get ahold of Dory long after she'd sold the place and surprisingly she still remembered me and my mother, Joan, who was her friend. She gladly gave me the recipe although the measurements were obviously for multiple cakes, I quartered it and came up with the right increments for just one really large one or a couple regular ones. This cake doesn't include frosting but was sprinkled with powdered sugar and served. Believe me when I tell you the frosting is not missed! This coming from a former little boy with a hell of a sweet tooth!

CHOCOLATE CHIP DATE NUT CAKE

This is an old recipe that I can remember showing up at every picnic! As a kid I never appreciated this cake. I wanted gobs of sweet frosting on a cake! Now I love this cake and will make it for Jim and I when we go fishing or just because we like it!

Time 55m

Number Of Ingredients 13

1 c dates, chopped
1 tsp baking soda
1 c boiling water
1 c shortening
1 c sugar
2 eggs
1 3/4 c flour
1 heaping Tbsp cocoa powder
1 tsp salt
sprinkle on top:
chocolate chips
chopped nuts
brown sugar

Steps:

  • 1. Preheat oven to 325 degrees. Grease and flour a 13x9 inch cake pan.
  • 2. Combine dates, baking soda and boiling water. Let cool.
  • 3. Cream shortening and sugar. Add eggs and beat until fluffy.
  • 4. Stir in cocoa, flour and salt. Mix in cooled date mixture.
  • 5. Pour into prepared pan. Sprinkle with nuts, chocolate chips and brown sugar.
  • 6. We never measured the topping mixture. I always liked more on top than my mother did. Use about 1/3 brown sugar, 1/3 cup chocolate chips (semi sweet or milk chocolate), 1/3 cup nuts. If you feel you want more on top ~ go for it!
  • 7. Bake for 40 minutes. Let cool.

Tips:

  • Use high-quality chocolate chips: This will make a big difference in the flavor of your cake. Look for chips that are made with real cocoa butter and have a high percentage of cacao.
  • Don't overbeat the batter: Overbeating can make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake in a preheated oven: This will help to ensure that the cake bakes evenly.
  • Let the cake cool completely before frosting it: This will help to prevent the frosting from melting.
  • Store the cake in an airtight container at room temperature: The cake will stay fresh for up to 3 days.

Conclusion:

This chocolate chip date nut cake is a delicious and easy-to-make treat that is perfect for any occasion. With its moist texture, rich flavor, and plenty of chocolate chips, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this chocolate chip date nut cake a try. You won't be disappointed!
