CHOCOLATE CROISSANT BREAD PUDDING

Chocolate Croissant Bread Pudding image

I love bread pudding and I love chocolate croissants. Why not combine them? My daughters love chocolate, so this was a winner in my house. It's like a combination of a soft-brownie-cakey-chocolate-chip-cookie with a bit of a creamy texture inside. It tastes good warm, as all melted chocolate desserts do, but even better cooled. My daughters couldn't wait to eat, so good luck holding out for it to cool.

What's not to like, especially if you're a chocoholic who loves those tart little red berries AND bread pudding! Although the original of this recipe was found in the Pillsbury Holiday Baking 2008 cookbook, it has been considerably tweaked ! For the optional dark chocolate, I use half of a Hershey's Special Dark Mildly Sweet Chocolate bar, chopped.

RASPBERRY CHOCOLATE BREAD PUDDING

Raspberry Chocolate Bread Pudding image

This recipe calls for brioche, an enriched bread that makes a lovely, buttery pudding, but you could use any bread that you have on hand. Stale croissants are equally delightful. Or you can even try a rustic white boule. And bread pudding is customizable, even beyond the bread. You can make this pudding with whatever you've got. Try raisins instead of raspberries. Or maybe blueberries. You could even put that can of leftover pumpkin puree to good use. Stir in rum, or vanilla, or some orange zest. Let your pantry be your guide.

Provided by Samantha Seneviratne

Time 2h5m

Yield 8 servings

Number Of Ingredients 10

Butter, for buttering the dish
1 1/2 cups heavy cream
1 1/2 cups whole milk
4 large eggs plus 2 large egg yolks, lightly beaten
3/4 cup packed light brown sugar
1 teaspoon pure vanilla extract
1/2 teaspoon kosher salt
8 cups cubed brioche (1 1/2-inch cubes)
1 cup frozen raspberries
3/4 cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F. Butter a 2-quart baking dish.
  • In a large bowl, whisk together the cream, milk, egg and yolk mixture, brown sugar, vanilla, and salt. Make sure the mixture is well combined.
  • Add half of the brioche to the prepared baking dish, and sprinkle evenly with half of the raspberries and chocolate. Top with the remaining brioche, raspberries, and chocolate.
  • Pour the cream mixture over the brioche mixture. Press down gently, cover it with plastic wrap, and let stand for 30 minutes. You want the bread to soak up that luscious custard.
  • Bring a kettle of water to a boil. Remove the plastic wrap and set the baking dish in a large roasting pan. Fill the roasting pan with enough boiling water to get about halfway up the sides of the baking dish. Carefully place the pan in the oven and bake until the custard is set (even in the very center), and the bread has puffed, 50 to 60 minutes. Let cool slightly and remove the baking dish from the water. Serve warm, room temperature, or chilled.

Categories     Berry     Chocolate     Dairy     Egg     Dessert     Bake     Winter     Gourmet     Vegetarian     Pescatarian     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Serves 6 to 8

Number Of Ingredients 10

6 cups lightly packed bite-size pieces croissant (from about eight 5 1/2-inch croissants)
6 ounces fine-quality bittersweet chocolate (not unsweetened)
1 1/2 cups fresh or unthawed frozen cranberries
3 large eggs
3/4 cup sugar
1 1/3 cups milk
3/4 cup heavy cream
1 teaspoon vanilla
1/4 teaspoon salt
2 tablespoons unsalted butter

Steps:

  • In a large baking pan dry bread, uncovered, at room temperature 12 hours. (Alternatively, dry bread in a 250°F oven 1 hour.)
  • Butter a 1 1/2-quart shallow baking dish.
  • Chop chocolate. In a food processor finely chop cranberries. Arrange half of bread in one layer in baking dish and sprinkle evenly with half of chocolate and all of cranberries. Top mixture with remaining bread.
  • In a bowl whisk together eggs, sugar, milk, 1/2 cup cream, vanilla, and salt and pour slowly and evenly over bread. Cut butter into bits and dot pudding with it. Chill pudding, covered, at least 1 hour and up to 1 day.
  • Preheat oven to 350°F.
  • Bake pudding in middle of oven until slightly puffed and golden, about 40 minutes.
  • In a small metal bowl set over a small saucepan of barely simmering water melt remaining chocolate and whisk in remaining 1/4 cup cream and a pinch salt until combined well. Keep sauce warm, covered.
  • Serve pudding warm or at room temperature with sauce.

Tips:

  • Use stale bread for a better texture. Fresh bread will absorb too much of the custard and become mushy.
  • If you don't have stale bread, you can toast fresh bread cubes in the oven to dry them out.
  • Use a variety of berries for a more flavorful bread pudding. Cranberries, blueberries, and raspberries all work well.
  • Add some chocolate chips or chopped nuts for an extra layer of flavor and texture.
  • Don't overcook the bread pudding. It should be set in the center, but still slightly moist.
  • Serve the bread pudding warm or at room temperature. It can be topped with whipped cream, ice cream, or a drizzle of chocolate sauce.

Conclusion:

Chocolate cranberry bread pudding is a delicious and easy-to-make dessert that is perfect for any occasion. It is a great way to use up stale bread and it can be made ahead of time, making it a convenient option for busy weeknights. The combination of chocolate and cranberries is a classic flavor combination that is sure to please everyone. Give this recipe a try the next time you are looking for a sweet treat.
