CHOCOLATE CRUMB CRUST
The ingredient amounts are for one 9-inch pie or an 8 x 8-inch square baking pan, this makes a wonderful crust that slices perfectly without crumbling, you may bake the crust or prepare without baking, I prefer to bake it as the crust will hold together better, if you are not a lover of cinnamon you may omit :)

RED VELVET CRUMB BASE
I use this version primarily as a base for Volcanoes (page 74), but it could certainly be used for the Double-Chocolate Crumb Cake (page 110) or the Macaroons (page 76), or as a foundation for a special recipe of your own. The red velvet cake, like the chocolate, is already fairly moist and sticky, so it doesn't need much additional oil to hold it together.

Steps:
- In a medium bowl, use your hands to crumble the cupcakes into small, fine bits. Add the oil, agave nectar, and salt to the crumb. Using a rubber spatula, fold together the ingredients until thoroughly combined. Store in an airtight container at room temperature for up to 4 days. For longer shelf life, store in the freezer for up to 3 weeks.

Tips:
- Prepare the Oreo Cookie Base in Advance: To save time, make the Oreo cookie base a day ahead and refrigerate it overnight. This will allow the flavors to meld and the base to set firmly.
- Use High-Quality Chocolate: The quality of the chocolate you use will greatly impact the flavor of your dessert. Opt for a high-quality semisweet or bittersweet chocolate for the best results.
- Tempering Chocolate: Tempering chocolate is an important step that helps to stabilize the chocolate and give it a smooth, glossy finish. If you're new to tempering chocolate, there are many resources available online to guide you through the process.
- Keep the Ganache Cool: As you work with the ganache, keep it cool to prevent it from becoming too soft and runny. You can do this by placing the bowl of ganache over a bowl of ice water or by refrigerating it for a few minutes before using.
Conclusion:
The chocolate crumb base is a versatile and delicious addition to a variety of desserts. With its rich chocolate flavor and crumbly texture, it's a perfect complement to mousses, ganaches, and fruit-based desserts. Whether you're making a classic chocolate pie or a modern deconstructed dessert, the chocolate crumb base is sure to impress your guests. So next time you're looking for a special dessert, give this recipe a try. You won't be disappointed!
