11OZ. biscuits or cookies
7OZ. butter
4 1/2 OZ. sugar
4 tablespoons bitter cocoa

Steps:

  • Chop up the biscuits and transfer to a large bowl. Add the sugar. Add 4-5 tablespoons of bitter cocoa, sifting it to remove any lumps. Mix all the dry ingredients together. Mix in 2 whole eggs. Melt the butter, let it cool, and pour it into the bowl. Using a spatula, knead everything together.
  • Transfer the mixture onto a large sheet of baking parchment and shape it into the form of a salami. Wrap it in baking parchment and aluminum foil. Put the chocolate salami in the freezer for 30 minutes. Then transfer to a fridge for a couple of hours. Finally, remove the two layers of foil and parchment. Roll the salami in powdered sugar. Serve in slices. Covered in plastic wrap, chocolate salami will last in the fridge for 1-2 days or 1 month in the freezer: Just thaw it in the fridge before eating it.

Italian Chocolate Salami image

This recipe is handed down to me by my Italian mother. I grew up with this dessert. It's quick and easy. The chestnut puree may be hard to find. It's actually called 'Torta di Castagne' or Chestnut Cake. It just looks like a salami log. Great for a holiday meal. Great topped with whip cream.

½ cup white sugar
½ cup unsweetened cocoa powder (such as Hershey's®)
½ cup melted butter
1 (1 pound) package sweetened chestnut puree
½ cup chopped almonds
½ cup chopped walnuts

Steps:

  • Stir together the sugar, cocoa powder, butter, and chestnut puree in a bowl. Fold in the almonds and walnuts until evenly blended. Pat the mixture into a log and wrap tightly with wax paper. Refrigerate overnight before slicing to serve.
