1/3 cup finely chopped maraschino cherries, well drained
1 ounce semisweet chocolate, grated
GLAZE:
2 tablespoons butter
1 ounce semisweet chocolate
1 tablespoon light corn syrup
1 cup confectioners' sugar
3 to 5 teaspoons maraschino cherry juice
Maraschino cherries and fresh mint, optional

Steps:

  • In a large bowl, prepare cake mix according to package directions. Fold cherries and chocolate into batter., Gently spoon into an ungreased 10-in. tube pan. Cut through the batter with a knife to remove air pockets. Bake on the lowest oven rack at 350° for 40-45 minutes or until lightly browned and entire top appears dry. Immediately invert pan; cool completely, about 1 hour. Run a knife around side and center tube of pan. 1/2 cup finely chopped maraschino cherries
1 cup semisweet chocolate chips

1/2 cup buttermilk, at room temperature
1 large egg, at room temperature
1 teaspoon pure vanilla extract
1/4 cup well-drained good-quality cherries in syrup, such as Amarena or Luxardo, plus 2 tablespoons syrup
One 1/4-ounce packet unflavored gelatin
4 ounces cream cheese, at room temperature
1/2 cup sour cream, at room temperature
1/4 cup sugar
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F. Butter two 8-inch round cake pans, line the bottoms with parchment paper. Butter the parchment and dust with flour, tapping out excess.

1 angel food cake
1 (12 ounce) container frozen whipped topping, thawed
1 1/2 cups milk
1 (3 ounce) package instant chocolate pudding mix (4-serving size)

Steps:

  • Place cake on a serving platter, slice a 1 inch layer from top of cake and set aside.
  • Cut around cake 1 inch from outer edge down to 1 inch from the bottom.
  • Then cut around cake 1 inch from inner edge down to 1 inch layer on bottom.
