These are absolutely addictive! Sweet and salty with lots of crunch, and very easy to make. These should probably be stored in the fridge to keep from going soft or you could probably coat in an extra layer of chocolate if you wanted to go through the trouble.

- In a double boiler or microwave (on 50 % power, in a large bowl) melt the chocolate and peanut butter. If microwaving, start with a minute and then add additional time (30 secs at a time, mixing in between) until melted. Be careful not to burn the chocolate.
- Mix in the pretzels and rice cereal until everything is coated and well incorporated.
- Drop by the teaspoonful onto a lined cookie sheet and place in the fridge. Once hardened, you can transfer to a bag or container. These are best stored in the fridge.
CHOCOLATE PEANUT BUTTER PRETZEL BALLS

- Crush pretzels into small bits. (I tried this first by bashing the pretzels in a baggie. Then I tried chopping them in a food processor. The results were mostly the same, though I felt I had more control with the baggie method.) In a small bowl, combine peanut butter, butter, brown sugar and salt. Stir until all ingredients are completely blended and smooth. Add pretzel bits to peanut butter mixture and mix thoroughly. Add powdered sugar and, again, mix thoroughly. Prepare a chilling tray--a dinner plate covered with waxed paper works well. Take about a teaspoon of the peanut butter pretzel mixture into your fingers and gently pat it into a ball with your fingertips. If the peanut butter starts sticking to your fingers, your fingers are too warm. Run your fingers under cold water for a minute to chill them, and begin rolling again. Place the peanut butter balls onto the plate. When you have rolled all the balls, place the entire plate into the refrigerator to chill for at least 30 minutes. After the peanut butter balls have chilled, prepare your chocolate. Pour the chocolate chips into a small microwaveable bowl. Microwave for 30 seconds and stir. If needed, microwave for another 10 seconds and stir again. Continue until the chips are completely melted, which means they stir easily into smooth, fluid chocolate with no lumps. Place one peanut butter ball into the melted chocolate and gently roll it around with a fork until completely coated. Remove from the bowl with the fork and place back on the waxed paper plate. Repeat for all other balls. Once all the peanut butter balls are coated in chocolate, return the plate to the refrigerator and chill another 30 minutes.

- 1. Crush the pretzels in a ziploc bag until they are in small pieces. The smaller the pieces the more round you can make the chocolates and the better the ingredients will stick together
- 2. In a small bowl, mix together the pretzel pieces and peanut butter (or other nut butter) until well combined and place in the freezer for about 15-20 minutes which will make it easier to roll the balls together.
- 3. Pull the mixture out of the fridge and roll the pretzel peanut butter into small balls a little larger than a teaspoon. It should make 20 pretzel peanut butter balls. Place on parchment or wax paper on a cookie tray.
- 4. Return the peanut butter pretzel balls to the freezer and let chill for 1 hour.
- 5. After a hour, remove the pretzel peanut butter balls from the freezer. Heat up the chocolate chips in a small bowl in the microwave. Heat the chocolate chips on medium power and stir every minute. They will take between 2-4 minutes to become melted and smooth
- 6. Dip the peanut butter pretzel balls into the chocolate and roll to cover completely. You can also just dip half the ball in, as you can see in the pictures, which will count down the calories
- 7. Place in the refrigerator for about 30 minutes until the chocolate hardens. Store in an airtight container in the fridge.
