RUMAKI

Rumaki image

Rumaki first became popular during the "Tiki Bar" era of the mid-20th century -- a trend that managed to stick around for decades, because trends used to be able to do that. Nowadays food trends can last for mere hours, but with enough support we can bring rumaki back into the spotlight for weeks, or maybe even months! After all, a dish that's this good is never really out of style.

2 tablespoons rice wine vinegar
1/4 teaspoon ground black pepper
2 cloves garlic, finely minced

1/4 cup turbinado sugar

Tips:

  • Choose high-quality chorizo: Opt for a flavorful and slightly spicy chorizo that will complement the sweetness of the dates.
  • Use soft and plump dates: Make sure your dates are soft and moist, as dry dates will not be as enjoyable.
  • Stuff the dates evenly: To ensure an even distribution of chorizo and cheese, stuff the dates carefully and avoid overfilling them.
  • Wrap the dates tightly with bacon: Wrapping the dates tightly with bacon will prevent them from bursting open during cooking and help keep the filling secure.
  • Bake until the bacon is crispy: Cook the wrapped dates in the oven until the bacon is crispy and browned, as this will enhance the overall flavor and texture.
  • Serve with a dipping sauce: Consider serving the chorizo date rumaki with a complementary dipping sauce, such as a sweet and tangy glaze or a creamy mustard sauce.

Conclusion:

Chorizo date rumaki is an easy-to-make and delicious appetizer that combines the savory flavors of chorizo and cheese with the sweetness of dates, all wrapped in crispy bacon. This dish is perfect for parties and gatherings, as it can be prepared ahead of time and baked just before serving.
