Number Of Ingredients 8

7 quarts plain popped popcorn
2 cups dry roasted peanuts
2 cups brown sugar
½ cup light corn syrup
1 teaspoon salt
1 cup margarine
½ teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Place the popped popcorn into two shallow greased baking pans. You may use roasting pans, jelly roll pans, or disposable roasting pans. Add the peanuts to the popped corn if using. Set aside.
  • Preheat the oven to 250 degrees F (120 degrees C). Combine the brown sugar, corn syrup, margarine and salt in a saucepan. Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.
  • Remove from the heat, and stir in the baking soda and vanilla. The mixture will be light and foamy. Immediately pour over the popcorn in the pans, and stir to coat. Don't worry too much at this point about getting all of the corn coated.

Number Of Ingredients 12

4 ounces whole macadamia nuts (about 1 cup), optional
1/2 teaspoon vegetable oil
1/3 cup unpopped popcorn
1/4 cup water
2 cups sugar
2 tablespoons light corn syrup
1 vanilla bean, split lengthwise and scraped
3/4 teaspoon ground cinnamon
1 1/2 teaspoons freshly grated nutmeg
1/8 teaspoon ground cloves
1/4 teaspoon ground cardamom
1 1/2 teaspoons coarse salt

Steps:

  • Preheat the oven to 325 degrees. Spread nuts on a small rimmed baking sheet, and bake until fragrant and beginning to brown, 10 to 15 minutes. Remove from oven, and let stand until cool. Coarsely chop; set aside.
  • Line a baking sheet with a Silpat (a French nonstick baking mat); set aside. In a medium stockpot, heat oil over high heat. Add popcorn, and cover. Once the corn begins to pop, shake the pan constantly. When the corn has finished popping, remove from the heat, uncover; set aside.
  • In a large deep pot, at least 12 inches wide, stir together water, sugar, and corn syrup. Add vanilla pod and seeds, cinnamon, nutmeg, cloves, cardamom, and salt. Bring to a boil over medium-high heat without stirring. Using a pastry brush dipped in water, brush down the sides of the pan to remove any undissolved sugar granules. Reduce heat to medium, and cook, tilting and swirling the pan, until the mixture just begins to smoke and is a deep caramel color, 4 to 5 minutes more.
  • Stir in the popcorn and nuts. Cook, stirring, while moving the pot on and off the heat to prevent the caramel from burning, until the popcorn is completely coated and the mixture is deep mahogany in color. Pour onto prepared baking sheet, and spread in an even layer. Let cool. Remove and discard vanilla bean. Store in an airtight container at room temperature for up to 3 days.

Tips:

  • Use fresh popcorn: Stale popcorn will not produce the best caramel corn. If you can, make your own popcorn or buy fresh popcorn from a reputable source.
  • Choose the right type of sugar: Light brown sugar is the traditional choice for caramel corn, but you can also use dark brown sugar for a richer flavor. Granulated sugar will also work, but it will not produce the same gooey texture as brown sugar.
  • Cook the caramel to the right temperature: The caramel should reach a temperature of 240 degrees Fahrenheit (115 degrees Celsius). This will ensure that the caramel is thick and glossy, and that it will coat the popcorn evenly.
  • Stir the caramel constantly: Stirring the caramel constantly will prevent it from burning. If the caramel starts to burn, remove it from the heat and stir it vigorously until it cools down.
  • Add the popcorn to the caramel immediately: Once the caramel is ready, add the popcorn and stir it until it is evenly coated. If you wait too long, the caramel will start to harden and it will be difficult to coat the popcorn evenly.
  • Spread the caramel corn out on a baking sheet: This will help the caramel corn to cool and harden evenly. If you leave the caramel corn in a bowl, it will clump together.
  • Store the caramel corn properly: Caramel corn can be stored in an airtight container at room temperature for up to two weeks. You can also store it in the freezer for up to six months.

Conclusion:

Caramel corn is a delicious and festive treat that is perfect for Christmas parties and gatherings. It is easy to make and can be customized to your liking. With a few simple tips, you can make the best caramel corn that everyone will love. Happy Holidays!
