1 1/4 to 1 1/2 pounds tilapia (fillets)
1 tablespoon butter (melted)
Salt and pepper to taste
1 tablespoon olive oil
1 clove garlic (finely minced)
2 scallions (green onions, thinly sliced)
1 cup cream (heavy)
1/4 cup cilantro (fresh, chopped)
1 tablespoon lime juice
1 teaspoon zest (lime, finely grated)
Salt and freshly ground black pepper, to taste

Steps:

  • Heat the oven to 375 F (190 C / Gas 5).
  • Line a baking pan with foil; spray with nonstick cooking spray.
  • Brush the tilapia fillets lightly with butter and arrange in the prepared pan. Sprinkle the fillets lightly with salt and pepper.
  • Bake the fish for about 20 minutes, or until the tilapia is cooked through and flakes easily with a fork.
  • Heat the olive oil in a small saucepan over medium heat; sauté the garlic and onion for 1 to 2 minutes. Add the heavy cream and bring to a simmer. Simmer for about 3 to 4 minutes to reduce slightly.
  • Stir in the fresh chopped cilantro, lime juice , and zest, and salt and pepper to taste. Simmer for about 1 minute longer.

1 1/2 c fresh cilantro stems included
3 bay leaves
2 tsp cumin
2 tsp dried thyme
2 tsp ground pepper
1 tbsp salt
1/2 cup onion
4-6 garlic cloves - depending on taste
1 cup white wine vinegar
1/2 cup vegetable oil
cilantro compound butter
1/2 lb unsalted butter
1/4 cup chopped cilantro
1 garlic clove
1 small shallot
juice and zest of 1 lime
salt and pepper

Steps:

  • preheat oven to 400 saute' the veggies in a little olive oil and salt and pepper to taste put all ingredients for adobo in blender or food processor and chop up real good n stuff put tilapia on a greased pan so it doesn't stick...dur spread a heaping helping of adobo over the tilapia. the more the better put the tilapia in the oven until done. 8-10 minutes or until you can eat it without getting sick make the butter chop up the cilantro however chunky you like it finely chop the shallot and garlic clove...unless you like big ass pieces of garlic...I dont add to the softened butter add the lime juice salt and pepper to taste put the veggies on a plate and add a dollop of the butter to melt over the veggies once the fish is done place it on top of the veggies and let some stick out the sides to make it pretty and shit. not put it in your face and enjoy

4 tilapia fillets (6 ounces each)

1/2 cup reduced-sodium chicken broth
2 tablespoons minced fresh cilantro
1 teaspoon grated lime zest
2 tablespoons lime juice

Steps:

  • In a shallow bowl, mix flour, salt, pepper and 1/4 teaspoon cumin. Dip fillets in flour mixture to coat both sides; shake off excess., In a large nonstick skillet, heat oil over medium heat. Add fillets; cook, uncovered, 3-4 minutes on each side or until fish flakes easily with a fork. 1 teaspoon cayenne pepper

½ cup fresh cilantro, roughly chopped
½ teaspoon salt

They combine flour tortillas filled with breaded, fried tilapia, layered with chipotle mayo, topped with napa cabbage, dressed with honey-cumin sauce, and served with pico de gallo, sour cream, chips and salsa. You'll find them very refreshing and packed full of flavor!

1 pound tilapia fillets, cut into chunks
½ cup fresh lime juice
⅓ cup fresh lime juice
2 tablespoons honey
1 tablespoon vegetable oil
1 teaspoon ground cumin
½ cup mayonnaise
2 chipotle chilies in adobo sauce
1 tablespoon adobo sauce from chipotle peppers
¼ teaspoon salt
⅛ teaspoon cayenne pepper
⅓ cup all-purpose flour
2 eggs, lightly beaten
2 cups panko crumbs
salt and ground black pepper to taste
1 cup vegetable oil for frying
2 cups 3 color coleslaw blend
1 cup minced fresh cilantro leaves
8 (7 inch) flour tortillas, warmed

Steps:

  • Place the tilapia chunks in a flat dish and pour 1/2 cup lime juice over the fish. Cover, and refrigerate at least 4 hours.
  • Meanwhile, make the honey-cumin sauce by whisking together 1/3 cup lime juice, honey, vegetable oil, and ground cumin a small bowl. Set aside until needed.
  • To make the chipotle mayonnaise dressing, place the mayonnaise, chilies, adobo sauce, 1/4 teaspoon salt, and cayenne pepper together in the bowl of a food processor. Pulse until smooth. Cover, and refrigerate until needed.
  • To bread the fish, place the flour, eggs, and panko crumbs in three separate shallow dishes. Season the fish with salt and pepper to taste. Dip the fish pieces first in the four, coating evenly, and shaking off any excess. Dip next in the eggs, and last in the panko crumbs, patting the pieces to help the breadcrumbs hold. Set the fish aside on a plate.
  • To cook the breaded fish, pour 1 cup vegetable oil into a skillet to 1/4 inch deep. Heat the oil to 365 degrees F (185 degrees C) over medium heat. Cook the fish, turning until all sides are golden brown, and flesh is easily flaked with a fork. Drain on paper towels. Brush the fish with the honey-cumin sauce.
  • Mix the coleslaw and cilantro together in a bowl. Reserve 1/4 cup of the chipotle mayonnaise dressing, and pour the remaining dressing over the coleslaw mixture. Toss to coat evenly with the dressing.
  • Place the tortillas on a flat surface, and spread each with 1 tablespoon reserved chipotle mayonnaise dressing. Divide the fish between the tortillas. Top with the cilantro coleslaw.

4 to 6 tilapia filets
cooking spray
8 to 12 ounces baby spinach, cleaned
1/4 cup chicken broth
1/4 teaspoon onion powder
salt and pepper
Creole seasoning blend
1 small tomato, chopped
4 green onions, thinly sliced

Steps:

  • Spray a 9x13-inch baking dish with cooking spray and add the spinach. If necessary to make the spinach fit it into the baking dish, steam or saute the spinach for a minute or two to wilt slightly. Sprinkle spinach with salt and pepper and onion powder; add the chicken broth. Sprinkle tilapia filets lightly with salt, pepper, and Creole seasonings. 1 teaspoon garlic powder

¼ cup canola oil

1 jalapeno pepper, seeded and minced
1 small red onion, finely chopped
1 clove garlic, minced

1 tablespoon pureed chipotle peppers in adobo sauce

¼ cup mayonnaise
2 (15 ounce) cans black beans, rinsed and drained

Steps:

  • Stir together the chipotle chile powder, garlic powder, salt, and cracked black pepper in a shallow bowl. Brush the tilapia fillets with the canola oil, and press into the spice mixture to coat, and set aside. Make the salsa by stirring together the mango, jalapeno, red onion, 1 clove garlic, cilantro, and lime juice in a separate bowl, and set aside. Make the aioli by stirring together the chipotle puree, 1 clove garlic, and mayonnaise in a small bowl, and set aside.
  • Bring the black beans and 2 cloves of garlic to a simmer in a saucepan with a pinch of salt. Cover, and cook over low heat for 20 minutes. Meanwhile, heat a large skillet over medium-high heat, and cook the tilapia until opaque in the center, and crispy on both sides, about 7 minutes. Heat the tortillas in a skillet over medium heat, and keep warm.
  • To serve, place the tortillas on a plate, spoon on some Spanish rice and black beans. Top with some of the coleslaw mix, hot tilapia, and a spoonful of the mango-cilantro salsa. Top with a dollop of chipotle aioli to serve.

2 cups lemon juice, divided
2 teaspoons Tony Chachere's Seasoning
1/4 cup butter or 1/4 cup olive oil
