1 (11.5 ounce) package milk chocolate chips
¾ cup coffee
8 egg yolks
8 cups heavy whipping cream

16 egg whites

  • Melt semisweet chocolate chips and milk chocolate chips in heavy saucepan over very low heat while stirring. Stir coffee into the melted chocolate, remove from heat, and cool to room temperature.

1-1/4 cups whole milk
12 fresh basil leaves
1 cinnamon stick (3 inches)
1/2 cup sugar
4 large egg yolks, lightly beaten

  • In a small saucepan, heat milk to 175°. Remove from the heat; add basil and cinnamon stick. Cover and steep 30 minutes.
