1 teaspoon vanilla extract
2 cups grated carrots (about 5)
1 cup chopped walnuts
1/2 stick unsalted butter
8 ounces cream cheese
3 1/2 cups powdered sugar
3/4 teaspoon vanilla extract

Edible gold glitter stars, for serving, optional

Steps:

  • Preheat the oven to 350 degrees F.

3/4 cup graham or whole-wheat flour
1/2 teaspoon baking soda

1/2 cup packed dark-brown sugar
1 large egg

Steps:

1/2 cup graham cracker crumbs
1/2 cup brown sugar, packed
1/4 cup unsalted butter, melted
1 cup unsalted butter, room temperature (2 sticks)
1 1/2 cups sugar
5 large eggs, separated into 5 yolks and reserving only 3 egg whites, room temperature
2 teaspoons madagascar bourbon vanilla extract
2 1/2 tablespoons ground cinnamon
1 1/3 cups whole milk, room temperature
1/2 cup graham cracker crumbs
1/2 cup brown sugar, packed
1/4 cup unsalted butter, melted
1 (8 ounce) package cream cheese, room temperature
1/2 cup unsalted butter, room temperature
1 teaspoon madagascar bourbon vanilla extract
1 tablespoon ground cinnamon
1/2 teaspoon salt
2 cups confectioners' sugar, sifted
