2 tablespoons chopped flat-leaf parsley
1 tablespoon kosher salt

3/4 pound sweet or spicy Italian sausage, casings removed
1 cup chicken stock
1 cup dried cranberries

Steps:

  • Preheat the oven to 300 degrees F.

2 medium onions, finely chopped
1 fennel bulb, finely chopped
4 celery stalks, finely chopped

1 cup chopped parsley

1 Tbsp. chopped rosemary

3 cups chicken broth
2 tablespoons balsamic vinegar
1 teaspoon dried basil
1/2 teaspoon dried oregano

Steps:

  • Preheat oven to 325° F.
  • In a large shallow baking pan toast bread in middle of oven until just dry, 15 to 20 minutes. Trim fennel stalks flush with bulbs, reserving fronds, and discard stalks.
