My mother loved potatoes, and she was always on the lookout for ooey-gooey potato recipes. Here is one from my treasure trove of her recipes. This one, I'm sure, actually came from a church potluck, and I actually have it written in her handwriting! This recipe works as a sub for mashed potatoes, or baked potatoes, when you don't want to set out a lot of condiment dishes. Use cheddar or Swiss cheese, instead of Gruyere, if you prefer.

ENGLISH PARSLEY POTATOES

English Parsley Potatoes image

A classic British potato dish, which is probably traditionally served with roast beef, English mustard and green peas. Adapted from a recipe on a 'Pan or Wok' recipe card from International Masters Publishers. A suggested variation on the card is that these potatoes can also be made with left-over roast potatoes. I've only made this dish with new potatoes, and served it as an accompaniment to grilled or BBQd meat.

CARAWAY PARSLEY POTATOES

Caraway Parsley Potatoes image

Categories     Herb     Potato     Side     Quick & Easy     Low/No Sugar     Gourmet

Yield Serves 6

Number Of Ingredients 4

2 1/2 pounds small red potatoes (about twenty-four, 1 1/2-inches in diameter)
1 tablespoon caraway seeds
1 1/2 tablespoons unsalted butter
2 tablespoons minced fresh parsley leaves

Steps:

  • Peel potatoes and in a 3- to 4-quart saucepan cover with salted cold water by 2 inches. Simmer potatoes until just tender, 12 to 15 minutes, and drain in a colander.
  • While potatoes are cooking, in a small heavy skillet dry-roast seeds over moderate heat, shaking skillet, until fragrant and slightly darker, being careful not to burn them, 3 to 4 minutes. Transfer seeds to a small bowl and cool. With mortar and pestle or in an electric coffee/spice grinder grind seeds coarse.
  • In a heavy skillet melt butter over moderately low heat and add potatoes, stirring and shaking skillet to coat. Sprinkle potatoes with ground seeds, parsley, and salt and pepper to taste and stir, shaking skillet occasionally, to coat.

Tips:

  • Use the right potatoes. Waxy potatoes, such as Yukon Gold or red potatoes, hold their shape well and won't become mushy when boiled.
  • Boil the potatoes until they are just tender. Overcooking will make them fall apart.
  • Drain the potatoes well. This will help to prevent them from becoming watery.
  • Mash the potatoes until they are smooth. Lumps will make the parsley potatoes less appealing.
  • Add the parsley, butter, and cream. Stir until well combined.
  • Season the potatoes to taste. Salt and pepper are a good starting point, but you can also add other herbs and spices, such as garlic powder, onion powder, or paprika.
  • Serve the parsley potatoes immediately. They are best when they are hot and fresh.

Conclusion:

Parsley potatoes are a simple but delicious side dish that can be served with a variety of main courses. They are also a great way to use up leftover mashed potatoes. With just a few simple ingredients, you can make a dish that is sure to please everyone at the table.
