1 (9-inch) refrigerated pie crust
1 (10-ounce) package frozen chopped spinach, thawed and drained
1 cup cooked stir-fried vegetables
1 cup part-skim ricotta cheese
3/4 cup grated Cheddar
1/4 cup low fat milk
2 eggs, lightly beaten
2 teaspoons Dijon mustard
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon grated Parmesan

Steps:

  • Preheat oven to 375 degrees F.
  • Press pie crust into the bottom and up the sides of a 9-inch, removable-bottom tart pan (or 9-inch pie pan). Set aside.
  • In a large bowl, combine spinach, stir-fried vegetables and place on top of uncooked crust. In another bowl combine ricotta, cheddar, milk, eggs, Dijon, oregano, salt, and black pepper. Mix well. Spoon cheese mixture on top of vegetable mixture in prepared pie crust and top with Parmesan.

1 (17.5 ounce) package frozen puff pastry, thawed
1 cup fresh spinach, cleaned and stemmed
4 tablespoons water
¼ teaspoon ground nutmeg
1 onion, chopped
2 tablespoons butter
5 eggs
1 cup cottage cheese
1 cup shredded Cheddar cheese
salt and pepper to taste
2 tomatoes, thinly sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Spray a quiche dish with non-stick cooking spray.
  • Line the quiche dish with puff pastry, press the pastry firmly in place and trim away any excess pastry. Blind bake for 10 minutes.
  • In a large skillet place spinach and 4 tablespoons water. Heat the mixture over medium and cover the skillet. Cook until the spinach is done, approximately 2 minutes then drain well. Add nutmeg to the spinach and puree the mixture.
  • In a large skillet, saute the onion with butter or margarine to taste. Saute until the onions are soft and transparent.

1/2 cup vegetable shortening
1 1/4 cups all-purpose flour
1 pinch salt
3 -4 tablespoons ice water
1 egg yolk, lightly beaten
3 tablespoons butter
1 large onion, diced
1 small bunch spinach, chopped (8 oz. )
1/4 lb mushroom, sliced
2 cups provolone cheese (1/2 lb.total) or 2 cups cheddar cheese (1/2 lb.total)
1/4 cup grated parmesan cheese
4 eggs
2 cups half-and-half
2 tablespoons flour
1/4 teaspoon ground nutmeg
1/4 teaspoon cayenne pepper
1/4 teaspoon white pepper
1 pinch salt

Steps:

  • For Crust:.
  • Cut shortening into flour and salt until it resembles coarse meal.
  • Sprinkle with ice water as needed and toss gently just until dough ball forms; do not overmix.
  • Cover and refrigerate for 15 minutes.
