BLUEBERRY COCONUT COFFEE CAKE

Blueberry Coconut Coffee Cake image

Adapted from Quick Cooking. I tried this delicious recipe and wrote in capital letters across the page "Excellent!" I rediscovered this yummy recipe again today as I was digging through my recipe box searching for fall favorites. The recipe originally called for shortening, but I prefer the rich flavor or real unsalted butter. Since this recipe makes 2 cakes, you can leave the coconut off the second if you want one plain. I often freeze the second cake after baking.

COCONUT BLUEBERRY CAKE

Categories     Fruit

Yield 12-15 servings

Number Of Ingredients 16

2 cups all-purpose flour
1 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
1-1/2 cups fresh or frozen blueberries
1 cup flaked coconut
Lemon Sauce:
1/2 cup sugar
4-1/2 teaspoons corn starch
1 teaspoon grated lemon zest
1 cup water
1 tablespoon butter
2 tablespoons lemon juice

Steps:

  • In a bowl, combine the flour, sugar, baking powder and salt. Beat the eggs, milk and oil; stir into dry ingredients just until moistened. Fold in blueberries. Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with coconut. Bake at 375 F. for 22-24 minutes or until a toothpick inserted near center of cake comes out clean. Cool on a wire rack. In a small saucepan, combine sugar, cornstarch and lemon zest. Gradually add water until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter and lemon juice. Cut cake into squares and drizzle with the lemon sauce. Yield: 12-15 servings.

Tips:

  • Use fresh blueberries: Fresh blueberries will give your cake the best flavor and texture. If you can't find fresh blueberries, you can use frozen blueberries, but be sure to thaw them completely before using.
  • Don't overmix the batter: Overmixing the batter will make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake until a toothpick inserted into the center comes out clean: This is the best way to tell if the cake is done baking. If the toothpick comes out with batter or crumbs attached, the cake needs to bake longer.
  • Let the cake cool completely before frosting it: This will help the frosting set properly.
  • Store the cake at room temperature for up to 3 days: The cake can also be stored in the refrigerator for up to a week.

Conclusion:

This coconut blueberry cake is a delicious and easy-to-make dessert that is perfect for any occasion. The moist coconut cake is topped with a sweet and tangy blueberry frosting, and the combination of flavors is simply irresistible. Follow these tips to make the best coconut blueberry cake: use fresh blueberries, don't overmix the batter, bake the cake until a toothpick inserted into the center comes out clean, and let the cake cool completely before frosting it.
