Then my son asked me for them every year...Now as an adult, out his own, he makes it himself! :) Don't let the one ingredient fool you...it does call for mashed potatoes...adds moisture, you can't actually taste the potatoes when all is said and done.

3/4 c mashed potatoes
4 c coconut, flaked
4 c powdered sugar
12 oz semi sweet chocolate chips
1/2 cake *parafin wax, optional

Steps:

  • 1. Mix together potatoes, sugar and coconut. Place in refrigerator for 1/2 an hour. Shape into 1" balls, place on waxed paper lined cookie sheets. Freeze for 1/2 an hour. Melt chocolate with wax in double boiler. If you opt not to use the wax, I would add 2 Tablespoons of veg oil to the chocolate for smoother melting and dipping. Dip balls and place back on waxed paper. Allow to dry/harden...and Enjoy! Store in cool place, they freeze really well. *parafin wax - you can use this if you want, it provides a nicer, more glossy texture on the bonbon...don't melt so easily in your fingers...but you really don't need it.

2 box confectioner's sugar
1 can(s) sweetened condensed milk
1/2 lb butter, softened
1 pkg sweetened shredded coconut, pulsed until fine in food processor
1 12 oz. package of good quality chocolate chips (i use ghiradelli)
1/8 to 1/4 piece off of a block of peraffin
1 tsp coconut extract, optional

Steps:

  • 1. Mix first four ingredients by hand and refrigerate for one hour.
  • 2. Roll into 3/4 inch balls and place on cookie sheet. Refrigerate for one hour.
  • 3. In a double boiler, melt chocolate and paraffin and mix well. Pierce candy balls with toothpick and dip in melted chocolate. For chocolate lovers, you can dip them twice if you like. Regrigerate after the first dip and then dip them again.
  • 4. NOTE: The teaspoon of coconut extract is optional according to your taste. For a stronger coconut flavor, use the extract.

1 1/2 tsp cherry brandy
1 tsp pure vanilla extract
1/8 tsp salt
1 c sifted powdered sugar
1 c moist coconut flakes
12 oz maraschino cherries
1/2 c dessicated coconut
1/2 c dessicated coconut for rolling
16 oz semi sweet or dark chocolate to be melted

Steps:

  • 1. Line a 9x13 pan with parchment paper.
  • 2. Combine condensed milk, cherry brandy, vanilla extract, and salt in a bowl.
  • 3. Add powdered sugar and stir with a wooden spoon until fully incorporated.
  • 4. Add coconut flake, dessicated coconut & chopped maraschino cherries and stir until combined.
  • 5. Chill mixture in refrigerator until easy to mold, about 1 hour. Take 1 rounded teaspoon of mixture at a time and roll into balls, then roll in desiccated coconut.
  • 6. Line a cookie tray with parchment paper. Melt the chocolate and dip the balls into the chocolate, covering completely, and place them on the prepared tray until set. Store in airtight container in refrigerator or a cool place.

1 can(s) eagle brand sweetened condensed milk
1 c unsalted butter, softened
1/2 c godiva white chocolate liquer
3 c shredded coconut, finely chopped
1 c toasted pecans, chopped
2 tsp vanilla extract
9 c confectioners' sugar, sifted
1 pkg ghirardelli candy making & dipping bar (2.5 lb.), double chocolate flavor

Steps:

  • 1. In the mixing bowl of your electric mixer, blend sweetened condensed milk, butter and Godiva liquer. Gradually add coconut (whiz it through the food processor to finely chop). Stir in chopped pecans and vanilla.
  • 2. Gradually add the sifted confectioners sugar until thoroughly blended. Chill if necessary before rolling into 1" balls. Freeze rolled balls overnight.
  • 3. In a double boiler over not quite simmering water, break dipping bar into small chunks to begin melting. Meanwhile, line a large area (or multiple cookie sheets) with waxed paper. Once dipping bar is melted, take coconut balls from freezer and dip to cover and place on waxed paper until set. Store in airtight container. *Not sure how many this makes but it does make a BUNCH!! If I had to guess...I'd say you're looking at approximately 6-8 dozen coconut bon bons. :-)
