4 ounces vodka
2 tablespoons agave sweetener, or more to taste
2 limes, juiced (about 1/4 cup)
2 teaspoons freshly grated ginger, plus 4 thinly sliced rounds fresh ginger, for garnish

Steps:

  • Stir or shake the coconut water, vodka, agave, lime juice and grated ginger together in a cocktail shaker and pour over ice into 4 highball glasses. Garnish the glasses with the ginger rounds.

2 parts pineapple-coconut juice (recommended -- Kern's)
1 splash bottled lime juice (recommended -- Rose's)
1 part vanilla vodka
1/2 part half-and-half
1/2 part banana Schnapps
ice cube
1/4 cup honey
1/4 cup sweetened flaked coconut (recommended -- Baker's)

Steps:

  • Add all ingredients, except coconut flakes and honey, in a cocktail shaker with ice.
  • Pour honey onto a plate.
  • Lay out coconut on a plate.
  • Dip the rims of chilled glasses into honey and roll in coconut.
  • Shake and pour into chilled martini glasses to serve.
  • NOTE: For a non-alcoholic version, omit the vodka and the banana Schnapps and substitute the ice with 1 banana. Puree the mixture in a blender.

My mother made this all the time when we were growing up. It is very sweet so a little goes a long way. Not a pretty cake but oh so good and easy to prepare. I have frozen this in precut squares and popped in the microwave for a sweet warm treat.

1 (18 ounce) package yellow cake mix
1 (16 ounce) can fruit cocktail in syrup
2 1/3 cups coconut
2 eggs
1/2 cup brown sugar, firmly packed
1/2 cup butter
1/2 cup white sugar
1/2 cup evaporated milk

Steps:

  • Combine cake mix, fruit cocktail with syrup, 1 cup coconut and eggs in large bowl. Beat at medium speed with electric mixer for 2 minutes.
  • Pour into greased 13x9 inch baking pan. Sprinkle with brown sugar.
  • Bake at 325 degrees for 45 minutes or until cake springs back when lightly touched.
  • In saucepan bring butter, sugar and milk to a boil, boil 2 minutes. Remove from heat, stir in remaining coconut. Spoon over hot cake in pan. Serve warm or cool.

1 medium cantaloupe
1/2 cup unsweetened coconut milk
1/2 cup tequila
1/4 cup Midori or tequila
1/4 cup fresh lime juice
1/4 cup agave nectar
Mint sprigs and lime wheels (for serving)

Steps:

  • Slice a thin piece of rind off both ends of cantaloupe; cut in half crosswise and remove seeds. Scoop out flesh; set aside cantaloupe halves.
  • Transfer half of flesh to a blender; reserve remaining flesh for another use. Add coconut milk, tequila, Midori, lime juice, agave nectar, and 1/2 cup ice to blender and blend until smooth.
  • Divide cocktail between reserved melon halves and add ice to fill. Garnish with mint sprigs and lime wheels and serve each with 2 straws.

Yesterday I served Christmas Brunch for my family. This year I was not my typical over-the-top foodie self and opted for a simple brunch. My one signature "Star" of the meal was a Shrimp cocktail bar with 4 very different types of cocktail sauces. I searched the internet for ideas, recipes, and was able to compile my taste buds and about 100 recipes into four choices. This one was REALLY good....rated as second best of the four. Since I'm a big fan of Green Curry lately, I really really loved it!

2 tablespoons green curry paste
3 mangoes, peeled, pit removed, roughly diced
1 small red onion, roughly diced
1 (15 ounce) can coconut milk
2 serrano chili peppers, roughly chopped
1 tablespoon ginger, freshly grated
1 garlic clove, minced
2 tablespoons cilantro, chopped
1 lime, juiced
1 teaspoon lime zest
salt, to season
pepper, to season

Steps:

  • Put all ingredients except the cilantro into a sauce pot and bring to a boil over medium high heat. Reduce to a simmer and cook uncovered for about 10-15 minutes.
  • Turn off heat and cool for a few minutes. Place in a blender or use a hand held blender to puree mixture.
  • Place back in the sauce pot, cook over medium to medium-low heat and reduce to your desired thickness.
  • When making this sauce for shrimp cocktail, I like it much thicker so I did use about a tablespoon of cornstarch -- made a slurry -- and brought back up to a boil to thicken a bit. If you do this, however, do not use too much cornstarch that would alter the flavor.
  • Chill the sauce before serving. Add cilantro right before serving.
  • This sauce can also be used as a sauce for any other dishes -- chicken, vegetables, etc. On the heat scale, I would place it as a 2 out of 5 -- a little kick but not much. Add additional Serranos if you desire more heat.

  • Heat oven to 425°F. Line large cookie sheet with foil; lightly spray foil with cooking spray. In food processor, place coconut, bread crumbs, salt and ground red pepper; process 10 seconds to mix slightly. Place in pie pan or shallow dish.
  • Pat shrimp dry with paper towels; place in medium bowl. In 1-quart saucepan, heat honey over low heat just until melted. Pour over shrimp; toss to coat. Roll shrimp in coconut mixture to coat; place in single layer on cookie sheet.
  • Bake 9 to 12 minutes or until shrimp turn pink and coconut begins to brown.
  • In small serving bowl, mix sauce ingredients. Arrange shrimp on serving platter; serve with sauce.
