Healthy fat and healthy grain waffle. Freeze well for quick toaster breakfast! Recipe yield is for thin waffles; I'd guess at least half that for Belgian waffles. I like to top with sliced banana.

GRAIN-FREE PALEO WAFFLES WITH COCONUT FLOUR
If you are looking to turn traditional waffles into a grain-free paleo treat, this recipe made with coconut flour is for you! I created this one on a hot Sunday morning in Laguna Beach, when I was setting up a quick homemade brunch that was healthier than the waffles you get when you eat out in a restaurant. I feel making your own food is always the best option to maintain your healthy eating habit, so most of the time, I prefer to eat at home and only grab a drink when I am out. These paleo waffles are a winner: they are free from grains, dairy, and eggs and they have a delicious flavor.

COCONUT FLOUR WAFFLES
Steps:
- Directions: Mix eggs, then add sweetener (read notes), and coconut oil, mix well then add coconut flour, following baking powder, baking soda, pinch of salt, stir and add milk last. You might want to add more if it's too thick. Combine everything well, until the texture is smooth. The batter will be thicker than traditional waffles, but not far off. Preheat the waffle maker brush oil on the waffle iron and scoop the batter in and pour over the waffle iron. Close the lid and wait until it is ready to open. Once waffle is done, be careful when you remove it. The texture of the waffles with coconut flour is different so they rip easily. Carefully start from one corner and remove at ones. NOTE** Use a sweetener that supports your diet. I used sugar, but let's say you'd like to use liquid stevia, so I'd suggest for you to use like 1 teaspoon or to taste. As for coconut oil, you can melt the coconut oil in the pot of warm water, placing a jar in and waiting for a few minutes until it's easy for you to scoop. I said it in the directions, but I feel the need to say it again: These waffles are NOT your typical traditional waffles, they are very soft, and they rip easier than when made with all purpose flour. You can also use low fat 'regular' milk, even soy milk would work fine. Any other add-ins: cinnamon, nutmeg, powdered ginger etc. I used coconut sugar and increased the coconut milk to between 3/4 & 1 cup.

Steps:
- 1. In a large bowl, combine flour, baking powder, salt, coconut sugar and cinnamon; set aside. Preheat waffle iron
- 2. In a separate medium bowl, combine eggs, milk, coconut oil, butter, vanilla and coconut extract. Using a hand mixer, process until smooth. Add flour mixture and beat until blended. Fold in coconut flakes, if using.
- 3. Spray waffle iron with butter-flavored cooking spray. Ladle batter into preheated waffle iron. Cook waffles until golden and crisp. Transfer on a wire rack for a couple minutes so the moisture escape before transferring them onto a plate - if you want to serve them all at the same time, transfer the cooked ones in a 170ºF oven while cooking the remaining batter.
- 4. Note: To freeze them; arrange waffles in a single layer on a baking sheet. Transfer to the freezer overnight before placing them in a re-sealable freezer bag. When ready to use frozen waffles, reheat them in a toaster.

Tips:
- Use fresh coconut milk. Fresh coconut milk is thicker and creamier than canned coconut milk, and it will give your waffles a more authentic flavor.
- Don't overmix the batter. Overmixing the batter will make your waffles tough. Mix just until the ingredients are combined.
- Cook the waffles on a hot waffle iron. A hot waffle iron will help your waffles cook evenly and prevent them from sticking.
- Serve the waffles immediately. Waffles are best served hot and fresh. If you need to keep them warm, place them in a preheated oven at 200 degrees Fahrenheit.
Conclusion:
Coconut waffles are a delicious and easy-to-make breakfast or brunch dish. They're perfect for a special occasion or a lazy weekend morning. With just a few simple ingredients, you can create a stack of fluffy, golden brown waffles that are sure to please everyone at the table.
