I never liked coleslaw until I tried my husband's great aunt's. Now I can't get enough of it! Great with BBQ pork sandwiches. You can also use a bag of slaw mix instead of shredding the cabbage and carrots yourself.

Tips:

  • Use a sharp knife or mandoline to thinly slice the cabbage. This will help the coleslaw absorb the dressing better and make it more flavorful.
  • If you don't have a mandoline, you can use a food processor fitted with the slicing blade. Just be careful not to over-process the cabbage, or it will become mushy.
  • Shred the carrots and celery by hand. This will give them a more rustic texture and help them stand up to the dressing.
  • Use a combination of mayonnaise and vinegar for the dressing. This will give the coleslaw a creamy and tangy flavor.
  • Add a touch of sugar to the dressing to balance out the acidity of the vinegar.
  • Season the coleslaw with salt and pepper to taste.
  • Serve the coleslaw immediately, or chill it for later. Coleslaw is best when eaten within a few days of making it.

Conclusion:

Coleslaw is a classic side dish that is perfect for summer cookouts and picnics. It is also a great way to use up leftover cabbage and carrots. With its creamy, tangy dressing and crunchy vegetables, coleslaw is a refreshing and flavorful addition to any meal.
