VEGETARIAN CHILI

Vegetarian Chili image

I have shared this award-winning recipe with many die-hard chili fanatics over the past 15 years, and thought I should post it since it is so popular. I adapted it from a Cooking Light recipe from 1991. I serve this with grated cheddar cheese, sour cream, and Keebler Townhouse Bistro Cornbread crackers.

Tips:

  • Use a variety of beans. This will give your chili a more complex flavor and texture. Some good options include pinto beans, black beans, kidney beans, and Great Northern beans.
  • Don't be afraid to experiment with different vegetables. In addition to the traditional onion, garlic, and bell pepper, you can also add carrots, celery, zucchini, or corn. You can even add some greens, such as spinach or kale.
  • Use a good quality chili powder. This is the key to a flavorful chili. Look for a chili powder that is made with a variety of chili peppers, including ancho, guajillo, and cayenne peppers.
  • Don't overcook the chili. Chili is best when it is simmered for a long time, but you don't want to overcook it. Otherwise, the beans will become mushy and the chili will lose its flavor.
  • Serve chili with your favorite toppings. Some popular options include shredded cheese, sour cream, avocado, and chopped cilantro. You can also serve chili with cornbread or crackers.

Conclusion:

Vegetarian chili is a delicious and hearty meal that is perfect for a cold night. It is also a great way to use up leftover vegetables. With so many different recipes to choose from, you are sure to find one that you love. So next time you are looking for a vegetarian meal, give chili a try. You won't be disappointed.
