Steps:

  • Combine all in a bowl and mix with hand blender until smooth and thick.
  • For Vanilla - Use Vanilla flavored pudding.
  • For Milk Chocolate - Use chocolate pudding.
  • For dark chocolate - Use chocolate pudding and add 2 T cocoa powder (or more to your liking).
  • For cheesecake flavored - Use cheescake pudding.
  • Be sure to use it on cooled layer cakes and refrigerate it after it is mixed and/or on the cake. You can use fat free milk if you want to but it is no where near as rich, thick and creamy.

I literally CRAVE this amazing, hearty soup from Panera when the weather begins to chill.... this is the closest recipe I have found to theirs. The best part is, it's ready in less than an hour!! I've found that the reviews are right and have lessened the amount of flour; originally 1 cup; just use 1/2 or a bit more depending on how thick you like your soup (Panera's is VERY thick).

6 cups chicken broth
2 chicken breast halves (cooked, boneless and cubed)
1 (6 ounce) package long grain and wild rice blend, quick cooking version (You will use the seasoning packet. I used Uncle Bens roasted chicken flavor)
1/2 teaspoon ground black pepper
1/2 cup all-purpose flour
3/4 cup butter (12 tbsp. or a stick and a half)
1 cup carrot, diced
1 cup celery, diced
1 cup onion, diced
3 cups light cream (can lighten by substituting part or all of the cream with fat-free evaporated milk, or half-and-half)

Steps:

  • Open rice, pull out seasoning packet and set aside.
  • In a small bowl, combine pepper and flour. Set aside.
  • In a large pot over medium heat, combine broth and chicken. Bring to a boil, then stir in rice. Cover and remove from heat.
  • In a medium saucepan over medium heat, melt butter. Add carrots, celery and onion and saute for 5 minutes. Stir in contents of seasoning packet, and continue cooking vegetables until softened, about 5 minutes more. Add seasoned flour gradually while constantly stirring, to form a roux. Saute roux for 3-4 minutes to cook out raw flour taste.
  • Whisk in cream, a little at a time, until fully incorporated and smooth. Cook until thickened, 5 minutes.
  • Stir cream mixture into broth and rice. Cook over medium heat until heated through and rice is done,15-20 minutes.
  • Alternatively, for those who cannot get the quick-cooking version of the rice, I have put the broth on to boil and cooked the 25-minute version of long grain and wild rice blend according to the directions, while sauteeing the veggies in the butter. I tend to cook the veggies longer this way, and I like them quite soft. I then follow the rest of the directions above, adding the rice/broth to the cream mixture. I've also used fat-free half and half with no appreciable difference in flavor. Enjoy!

1 tablespoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder

1 teaspoon dried parsley flakes
1 teaspoon olive oil

Steps:

  • In a medium sized mixing bowl, combine the salt, pepper, onion powder, and garlic powder.
  • Add the sugar, paprika, and turmeric.
  • Stir the mixture gently until all seasonings are thoroughly mixed.
  • Add a teaspoon of olive or other oil to the ground beef when combining the seasoned salt to incorporate it into the burgers.
  • Use sparingly. 2 - 3 tablespoons for 2lbs of ground beef. Keep a jar handy to store for future use.

This is a copy that I made up myself of the Old version of the Panera Chicken Salad Sandwich. Not the new one with grapes and almonds. It's delicious! I just made it and its actually better because there aren't a lot of chemicals and preservatives like the Panera kind. I took cue from the main ingredients in the sandwich. Here are Panera's ingredients : Chicken (water, food starch modified, salt, chicken fat, chicken flavor (beef extract, wheat starch, silicone dioxide, thiamine hydrochloride, alpha tocopherol)) dextrose, corn starch, flavors, sodium phosphate) mayonnaise (water, soybean oil, vinegar, food starch modified, egg yolk, whole eggs, corn syrup, spices, salt, propylene glycol alginate, xanthan gum, sodium benzoate & potassium sorbate-preservatives, calcium disodium EDTA), celery, lemon juice, onion powder, garlic powder, white pepper, parlsey.) 1/2 lb boneless skinless chicken breast
2 celery ribs, chopped
tomatoes, slices
red onion, slices
lettuce
mustard
onion powder
garlic powder
1 pinch white pepper (Black pepper is ok too)
1 teaspoon lemon juice
1 cup mayonnaise (I like Kraft Real Mayonnaise)
1 1/2-2 tablespoons granulated sugar
sliced white bread (or Semolina bread from Panera)

Steps:

  • Take the Chicken Breasts and place them on a cutting board. Cover with plastic wrap and pound with a mallet (or a frying pan if you don't have one) to a 1/2 inch thickness. They will cook more evenly and it will be easier to chop them into even chunks. HEAVILY season both sides of the chicken with garlic and onion powder. (You are going to boil the chicken so don't worry about it being too salty.) Put the chicken in a saucepan and cover with water. Bring it to a boil and then cover and let simmer till cooked, about 10 minutes. If it finishes cooking earlier then take it out then so it doesn't become rubbery. Take the chicken out and let cool.
  • Chop the celery and the cooled chicken and set in a bowl. In another small bowl put mayo, sugar, pepper, lemon juice together and whisk until well combined. You want the sugar to disintegrate so that you're not tasting the grain.
  • Mix the mayo with the chicken and celery. Take a slice of bread and place a large slice of lettuce, then tomato, then red onion. Top with the chicken salad and another slice. Serve with potato chips and pickle. (Or you're favorite soup!).
  • I hope you like this recipe. I really thought it out and was RELIEVED that my hard work paid off and it tasted so close to the real thing!

1 c dark brown sugar
2 1/2 c flour
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp ground ginger

1 c buttermilk**
1/2 c unsalted butter, melted

Steps:

  • 1. Preheat oven to 350 degrees (F). Spray/butter muffin tins.
  • 2. Combine sugar, flour, soda, salt and spices in a bowl.
  • 3. In a separate bowl mix the egg, molasses, milk, and butter.
  • 4. Add the wet ingredients to the dry and stir until just blended.
  • 5. Add to muffin tins** (about 3/4 full, these muffins don't rise too much, so you don't have to worry about them overflowing) and bake for 15 minutes. If making normal sized muffins, it'll be more like 20 minutes. Muffins are done when a toothpick comes out clean.
  • 6. **If you don't have buttermilk (I almost never do), just add 1 tbsp. of white vinegar or lemon juice to a cup of regular milk and let sit out for about 10 minutes.**

  • 2. Bring mixture to a boil and stir to combine. Cover saucepan with a lid, turn down heat to a simmer and simmer gently for 10-15 minutes until all the liquid is absorbed.
  • 3. NOTE: May be used in any recipe that calls for Uncle Ben's Wild Rice.

6 Tbsp water
2 lb lean ground chuck
2 c chicken broth (i use swanson's)
1/2 tsp salt (less if broth is salted)
1/2 tsp pepper
hamburger buns/hot dog buns for children (less messy)
mustard, to taste
2 chopped fresh onion
1 envelope of dry onion soup mix

Steps:

  • 1. Soak the dried onions in the water.
  • 2. Crumble ground beef into a hot skillet and cook over medium high heat with 1/2 of your fresh chopped onion.
  • 3. When the soaked onions have begun to soften and expand, add it and any remaining water (if any) to the beef.
  • 4. Stir frequently as the meat browns, using a wooden spoon to break the meat into small crumbles.
  • 5. When the meat has browned, drain off fat add the chicken broth, small squirt of mustard, salt and pepper and dry onion soup mix
  • 6. Cook until liquid is ALMOST gone, about 10 minutes
  • 7. Serve meat on buns with mustard, fresh chopped onions, mustard and dill pickle.
  • 8. Enjoy!

1 large sesame seed bun
1 Tbsp kraft mayonnaise
2 tsp heinz hamburger relish (the red stuff)
1/4 c chopped iceberg lettuce
2 vlassic hamburger pickle slices
1 slice american cheese
salt
pepper

Steps:

  • 1. Mix the mayonnaise with the relish to make the "secret sauce". Set aside for now. On waxed paper, form the 1/5 pound beef patty. It should be about 1/4 inch thick and 5 inches in diameter. Freeze at least an hour. Fire up the indoor electric grill, or outdoor barbecue. Follow the manufacturer's instructions for pre-heating. Toast the buns by laying them face down on the grill for 30-60 seconds. (About :30 for outdoor barbecue, :60 for indoor.) Cook the frozen beef patty about 2 minutes per side, (outdoor barbecue) or 3 minutes per side (indoor barbecue grill). Salt and pepper liberally on both sides. Dress your toasted top buns (crown) in the following order: special sauce pickles lettuce cheese Place the cooked beef patty on top of the dressed bun, and add the bottom. (heel) Microwave about 10 seconds to warm the bun, and serve.

1 (8 1/2 ounce) box Jiffy cornbread mix
1 1/4 cups unbleached flour
1 1/2 teaspoons bread machine yeast
1/4 cup butter
1/4 cup cornmeal (optional)

Steps:

  • Heat milk to lukewarm. Add to bread-machine pan along with the egg, cornbread mix, flour, and yeast. Set on "Dough" cycle.
  • When complete, remove dough to floured surface. Roll into 15 x 8-inch rectangle.
  • Cut ¾-inch strips the short way. (See picture above.) Dip in butter, then cornmeal, if desired. Knock off excess cornmeal. Twist and lay onto greased cookie sheet or silicone mat. Don't crowd. I use two cookie sheets.
  • Cover twists and set in warm place to rise about 30 minutes.
  • Preheat oven to 375 degrees.
  • Bake 12-15 minutes until golden.

2 c all-purpose flour, plus more for kneading and rolling
2 tsp baking powder
1/2 tsp salt
1 c milk
1/4 c vegetable oil
2 qt water for boiling
2 tsp chicken soup base
SAUCE
3 Tbsp butter
salt & pepper to taste
1/4 all-purpose flour
1/2 tsp sugar
1 c milk
2 tsp chicken soup base
1/2 to 3/4 cup dumpling cooking liquid (from after dumplings have been cooked)

Steps:

  • 1. Mix the flour, baking powder, salt, milk, and oil, blending well, and turn out on to a floured surface. Knead four or five times. Roll out dough to 1/8-inch thick and cut into 1 x 1 1/2-inch dumplings.
  • 2. In a large saucepan, combine the water and bouillon cubes/soup base. Boil until the bouillon cubes/soup base dissolve. Cook the dumplings until just about done; dumplings are done when they float up towards the top of the pot. Use a strainer to remove them to a bowl and set aside. Reserve the cooking liquid.
  • 3. While the dumplings are cooking, you can start to prepare the sauce. Melt the butter in medium saucepan. Add salt and flour; stir until thick. Mix the sugar with the milk and add to flour mixture a little at a time, stirring constantly with a whisk until thick and smooth. Remove from heat. Add the cooked dumplings to the sauce.
  • 4. Reserve 3/4-1 cup of the cooking liquid and stir gently into the sauce and dumplings. Return to low heat and simmer until blended. If the sauce seems too thick, gently stir in a little more cooking liquid. Add pepper to taste.

salt and pepper, to taste
1 large romaine lettuce head, chopped
1 c rice, mexican - prepared per package instructions
1 can(s) black beans or pinto beans, drained and rinsed
1 medium jalapeno, seeded and diced
1/2 c white onion, diced
1 c fresh salsa
1 c guacamole picado
1/2 c cheddar cheese, shredded
2 Tbsp sour cream, divided
1 Tbsp fresh cilantro, chopped
2 Tbsp roasted tomatillo salsa verde

Steps:

  • 1. Season chicken with cumin, salt and pepper. In a skillet over medium high heat, cook the chicken until the juices are clear and the internal temperature is 165 degrees F.
  • 2. In a bowl, layer the lettuce, 1/2 cup rice, 1/2 cup beans, 4 oz chicken, onions, jalapenos, fresh salsa, guacamole picado. Top with cheese, sour cream, fresh cilantro and a bit of roasted tomatillo salsa verde.
  • 3. Note: When I put this salad into my WW points calculator, it is a 9 point salad. However, it is both filling and satisfying and carries me all the way until dinner or beyond. I had to find a way to replicate this salad as it is the only thing I want to eat some weeks! At almost $7 a salad, I can make it at home and enjoy it for a few days/servings for that same price or less.

1/2 c light corn syrup
1/4 c butter, softened
1 tsp vanilla
1/4 tsp salt
3 c powdered sugar
4 drops yellow food coloring
2 drops red food coloring
12 oz chocolate chips
2 Tbsp vegetable shortening

Steps:

  • 1. Combine corn syrup, butter, vanilla, salt in a large bowl. Beat well with an electric mixer until smooth. Add powdered sugar, 1 cup at a time, mixing by hand after each addition. Mix well until creamy. Remove about 1/3 of mixture, place it into a small bowl. Add yellow, red food coloring, stir well to combine. Cover both mixtures, refrigerate at least 2 hours, or until firm. When mixtures are firm, roll a small, marble-size ball from orange filling, wrap around it a portion of white filling that is roughly twice size. Form this filling into shape of an egg, place it onto a cookie sheet that has been brushed with a light coating of shortening. Repeat process with the remaining filling ingredients and then refrigerate these "eggs" for 3-4 hours, or until firm. Combine the milk chocolate chips with the shortening in a glass or ceramic bowl. Microwave chocolate on HIGH for 1 minute, then stir, and microwave again for 1 minute more; stir. Use a fork to dip each center into the chocolate; tap the fork lightly on the side of the bowl, then place each candy onto waxed paper. Chill. After 1-2 hours of chilling, dip each candy once more, and chill for several hours, or until completely firm.

1 (20 ounce) can pineapple chunks, drained

Steps:

  • For the chicken, dip strips in flour. I usually do this by putting the chicken strips in a big zip-top bag with the flour in it, and shake until all of the chicken pieces are evenly covered with flour. Next, drop the chicken strips in the beaten egg. Again, I do this all at once. Just make sure the egg is in a big bowl, dump all of the chicken strips in, and evenly coat. Lastly, dip in cornstarch. This time the process is a little more precise, so I take about one-third of the strips and toss them in a zip-top bag with cornstarch. Lay them on a wire rack to prep for frying, and repeat the process. This method is pretty messy, and if you have another way of doing it, feel free to do it! =).
  • In a large skillet, heat oil to medium-high heat. Carefully lay chicken strips into the oil. Be careful to not crowd the pan. Fry the strips for about 1 minute, and then flip them over. Once they are evenly goldish-brown, and appear to be crispy, remove them from the oil and lay on a wire cooling rack lined with paper towels to allow the excess oil to drain off of them. Set aside and make the sauce.
  • For the sauce, combine all ingredients, except for cornstarch and 3 tablespoons of water, in a food processor. Blend until the ingredients are well combined, and garlic and jalapeño is finely minced into the liquid. Next, place the mixture into a medium saucepan, and simmer over medium heat for about 5 minutes. Combine the cornstarch and water in a separate container to form a thick paste. Incorporate paste into the simmering sauce. Whisk together, until the sauce starts to thicken slightly. Remove from heat, and toss in pineapple chunks (or use fresh pineapple if you prefer it).
  • In a large skillet, heat the sauce to a simmering, and add the fried chicken strips. Simmer for about five minutes, or until all of the chicken strips are well coated and reheated (if they were set aside to cool for a long time). Serve over white rice, or by itself. 3 c granulated sugar
3/4 c light corn syrup
3/4 c water
1/8 tsp salt
3 egg whites
1/3 c semi-sweet chocolate chips
2 bag(s) (12 oz) milk chocolate chips

Steps:

  • 1. In a large saucepan over medium heat, combine the sugar, corn syrup, water, and salt.
  • 2. Heat, stirring, to boiling, then continue to cook, using a candy thermometer to monitor the temperature.
  • 3. Beat the egg whites until they are stiff and form peaks.
  • 4. When the sugar solution comes to 270 degrees F, or the soft-crack stage, remove from the heat and pour the mixture in thin streams into the egg whites, blending completely with a mixer set on low speed.
  • 5. Continue to mix until the candy begins to harden to the consistency of dough.
  • 6. Add the semisweet chocolate chips. Once thoroughly blended and the nougat has thickened, press it into a greased 9x9-inch pan.
  • 7. Refrigerate until firm. With a sharp knife, cut the candy in half down the middle of the pan. Then cut across into 7 segments to create a total of 14 bars.
  • 8. Melt the milk chocolate chips in the microwave for 2 minutes on half power, stirring halfway through the heating time.
  • 9. Resting a bar on a fork (and using your fingers if needed), dip each bar into the chocolate to coat completely and place on wax paper.
  • 10. Cool till firm at room temperature, 1 to 2 hours.

vegetable oil

Steps:

  • Cut plantains diagonally or round; should be about 1/4 inch thick.
  • Drizzle oil into frying pan just enough to coat the bottom of the pan and place on medium heat.
  • When oil begins to shimmer, add plantains (work in batches), and fry for 1½ minutes on one
  • side.
  • Flip and cook for 1½ minute on the other side.
