1 tablespoon soy flour
1 tablespoon dry milk powder
1 teaspoon wheat germ

Steps:

  • Measure soy flour, nonfat dry milk and wheat germ into the bottom of a measuring cup before measuring each cup of flour in any bread recipe. The addition of these ingredients improves and enriches bread greatly. This formula can also be used with cakes and cookies.Experiments conducted at Cornell University and other laboratories showed that by the addition of the above ingredients, the nutritional content of bread could be improved to the point where, if need be, life could be sustained just with bread and butter. Animals used in the experiment were not able to live on ordinary commercial bread, exhibiting poor health in general and often dying at an early age. Animals fed bread made with the Cornell Bread Formula did survive.

Being a baking novice, I've wondered how a baker can create a cake recipe from scratch and know that it will work. When I found this "formula" I then understood the math and balancing of ingredients by WEIGHT not volume. Having the right proportions of flour, eggs, sugar, liquid and fat makes all the difference between the "rise & fall" of baked goods. The following is an *example* of the formula at work and not meant to be a specific cake recipe.

1 cup sugar (7 ounces)
1 1/2 cups flour (6 3/4 ounces)
1 1/4 teaspoons baking powder or 3/8 teaspoon baking soda
2 eggs (3 1/2 ounces)
1/2 cup butter (4 ounces)
1/2 cup milk (4 ounces)
1/2 teaspoon salt

Steps:

  • Basic formula, using weight, not volume:.
  • Sugar = flour.
  • Eggs = fat.
  • Eggs + Liquid =Sugar.
  • 1 teaspoon of baking powder for every 1 cup of flour.
  • 1/4 teaspoon baking soda for each 1 cup of flour (baking soda is used if the recipe has a considerable amount of acidic ingredients).
  • Don't forget the 1/2 teaspoon of salt as a flavor enhancer.

High protein bread that would be good for the South Beach Diet, Phase 2 and 3. Recipe is for a Bread Machine. Originally developed in the 30's at Cornell University. Supposedly you can live off of this bread; it has everything you need.

1 package yeast
3 cups unbleached flour or 3 cups wheat flour
3 tablespoons soy flour
3 tablespoons nonfat dry milk powder
3 tablespoons wheat germ
1 teaspoon salt
2 tablespoons honey
2 tablespoons butter
1 large egg
1 cup warm water, plus
2 tablespoons warm water

Steps:

  • Put all ingredients in the pan like you would a white bread.
  • Select white bread, 1 1/2 lb loaf.
  • Press start.
