2 medium tart apples, peeled and chopped, divided
1 tube (12 ounces) refrigerated buttermilk biscuits
1 egg
1/3 cup corn syrup
1/3 cup packed brown sugar
1 tablespoon butter, softened
1/2 teaspoon ground cinnamon
1/2 cup chopped pecans
GLAZE:
1/3 cup confectioners' sugar
1/4 teaspoon vanilla extract
1 to 2 teaspoons 2% milk

Steps:

  • Place 1-1/2 cups apples in a greased 9-in. round baking pan. Separate biscuits into 10 pieces; cut each biscuit into quarters. Place over apples with point side up. Top with remaining apples. , In a small bowl, combine the egg, corn syrup, brown sugar, butter and cinnamon. Stir in pecans. Spoon over apples. Bake at 350° for 30-35 minutes or until biscuits are browned. , For glaze, combine the confectioners' sugar, vanilla and enough milk to achieve desired consistency. Drizzle over warm coffee cake.

But the recipes are absolutely wonderful and this one was a Pillsbury Bake-Off winner. I've made this recipe over and over and everyone eats it right up! Enjoy!

2 tablespoons butter, softened
1 1/2 cups chopped peeled apples
10 ounces biscuits
1/3 cup brown sugar, firmly packed
1/2 cup pecan pieces
1/4 teaspoon cinnamon
1/3 cup light corn syrup
1 1/2 teaspoons whiskey
1 egg
1/3 cup powdered sugar
1/4 teaspoon vanilla
1 -2 teaspoon milk

Steps:

  • Preheat oven to 350 degrees.
  • Using 1 tablespoon of the butter, grease bottom and sides of a 9-inch round cake pan.
  • Spread 1 cup of the apples in pan.
  • Separate the biscuits.
  • Cut each one into 4 pieces.
  • Arrange point side up over apples.
  • Top with remaining apples.
  • In small bowl, combine remaining 1 tablespoon butter, brown sugar, cinnamon, corn syrup, whiskey, and egg.
  • Beat well.
  • Stir in pecans.

1 Tbsp margarine or butter,softened
1 1/2 c chopped peeled apples
1 can(s) refrigerated biscuits
1 Tbsp margarine or butter,softened
1/3 c brown sugar, firmly packed
1/4 tsp cinnamon
1/3 c light corn syrup
1 1/2 tsp whiskey, if desired
1 egg
1/2 c pecan halves or pieces
GLAZE
1/3 c powdered sugar
1/4 tsp vanilla extract
1 to 2 tsp milk

Steps:

  • 1. Heat oven to 350. Using 1 tbsp margarine, generously grease 9 inch round cake pan or 8 inch square pan. Spread 1 cup of the apples in greased pan. Separate dough into 10 biscuits;cut each into quarters. Arrange biscuit pieces, points up,over apples. Top with remaining 1/2 cup apples.
  • 2. In small bowl, combine 1 tbsp margarine,brown sugar,cinnamon,corn syrup,whiskey and egg;beat 2 to 3 minutes or until sugar is partially dissolved. Stir in pecans;spoon over biscuit pieces and apples.
  • 3. Bake at 350 for 35 to 45 minutes or until deep golden brown. Cool 5 minutes. In small bowl, blend all glaze ingredients, adding enough milk for desired drizzling consistency. Drizzle over warm cake. Serve warm or cool. Store in refrigerator.
